What have you eaten today? (Low carb forum)

B: ff greek with seeds and berries
L: got cold and wet so ended up in a pub. Unashamedly ordered a steak baguette with chips and coleslaw. I haven't missed bread so thought I'd easily leave most of the baguette but this was more like a wholemeal ciabatta and was lovely, and the chips few and big and had skins in so were healthy (right?)
I did end up leaving half the bread... and remained full until about 8pm.
Didn't test.
Evening: cold chicken thigh, 8 cashew nuts, 2 sqs 85% chocolate
 
I think I must be the only person never to have tried DGF, SLC or any of the other baked LC stuff.
Not that exclusive, @AndBreathe . I am another. :). On rare occasions I want a baked goodie , I make my own. I did at the weekend when everyone visiting was looking for chocolate cake. They had the cake baked with almond flour, stevia, eggs butter and 85% choc. I just rolled up some of the ganache coating with a few drops (large drops) of rum to make myself a choc truffle
I am sure the LC baked stuff available is brilliant for convenience for anyone craving cakes and biscuits or bread. It would be easy for me to become addicted, so I avoid.
 
Ferry's off again. It's broken down and stuck in Ullapool. They were to get a specialist engineer there this evening to try to identify the fault. Until it's repaired everything is supposed to come to the Islands via Harris - apparently ferries can get onto the pier there now. Unfortunately, those ferries are smaller so can carry a smaller quantity only. They are increasing the number of crossings to try to cope but it seems likely that that ferry won't cope with the extra workload and that might be the next one to break down. We are still in the middle of the period when the service to the Southern Isles has been withdrawn, so all goods and people have to use that one ferry.

On top of that, I was trying to find a price for fuel oil, which I will need to buy shortly, and it seems that there is no domestic oil available in this area for delivery.

I actually decided to make cauli cheese as a side dish for this evening's meal and had roasted celeriac and some courgette and mushroom slices. 2 lamb chops went with that. Feeling quite full now but, for some reason BG has gone up.
 
It's a good username because it has intrigued me for ages, and it's easy to remember so I love it!

I just popped into the forum quickly to see if the mystery of your name had been resolved before going out to do things with eggs and family, not disappointed at all! :happy:

And on topic: I expect late breakfast to be painted eggs and an extra dark chocolate egg. :p

Of course it was moussaka, which I think I’m going to make at some point.

I’m terrible with recipes, most of what I make is by eye, rough and ready, makey-uppy and left-overy. I do have a few I revisit and we've got loads of recipe books but I tend to throw things together in a pan or pot and make do with that. It is a rare treat I actually buy with a recipe in mind.

Todays main meal being a prime example

Cauliflower leaves/stems, kale, plum tomatoes, tomato paste, onion aubergine, garam masala, Kashmiri chilli powder, mixed herbs, garlic powder, salt, pepper…

Errr and fried halloumi

I like to call them planned overs rather than leftovers just to make myself feel more positive about them.‍♀️
 
Yesterday

B: Milkshake (almond milk, blueberries, scoop faba bean protein powder, psyllium husk mainly to make it thick, but has good amount of fibre as well), kiwi fruit, strawberries
L: Someone posted a 90-second low carb bread recipe using almond flour so I made some of that (actually not bad! but the almond flour wasn’t cheap) with ham and cheese
D: pak choy (or bok choy, I don’t know the difference), snow peas, carrot, water chestnut, bamboo shoots, ginger, garlic, oyster sauce. Dairy free and no added sugar ‘icecream’
Snacks throughout the day and night: pork crackling, pistachio nuts, blue cheese, 6 jelly beans (to avoid an impending hypo, not low carb (15g glucose)), more strawberries, 95% cocoa chocolate, 2 coffees with hazelnut ‘milk’

Average BSL for the day 6.1
 
So back to Monday.
Brekkie usual slice LC toast butter and copious rea.
Lunch was small plate of ham, cheese and chopped salad.
Supper was chilli with cauli rice.
Tuesday:
Same brekkie.
Lunch was very late when I got back from being out with a friend so grabbed two Marmite flatbreads (5g each) and cheese. Cup of tea.
Supper was baked chicken breast, green veg and a spoon of Nandos Lemon & Herb sauce to liven it up.

I was so pleased with my breakfast this morning. It's my son's birthday soon and he's asked if we can have a McDonald's breakfast which made me think of how I can join in too.

This is microwaved almond 'bread', then toasted, with two sausage patties, some grated mozzarella and a teeny tiny bit of tomato ketchup.

The 'bread' is a great use for that large Sports Direct mug that magically appeared in your cupboard.

Almond bread recipe:

1 tbsp butter (I just cut a thin slice off)
3 level tbsp ground almonds
1 egg
1/2 tsp baking powder
Herbs/spices, as preferred.

Melt the butter in a large mug first. Then add the rest of the ingredients and mix well.

Add any extra herbs/spices - I like smoked paprika and black onion seeds.

Microwave for 90 seconds and then check. The bread should be pulling away from the sides of the mug. If not fully pulled away, microwave in 30 second increments until it does.

I slice and toast it as it's much nicer that way.IMG_20230412_110003.jpg

Yes of course, go for it! I'd be interested to see your results.

Next time I make it, I'll take photos at each stage and make a post so you can see. Probably in a week or so though, I rotate the different types of 'bread' so I don't get bored.

You can omit the herbs and spices for a plain version which is good with chia raspberry jam.

It definitely needs to be toasted and if you know low-carb breads, it's not like proper bread at all but I think it's one of the better substitutes.
 
BG higher than I would like today - 11.1 at 4.30 am.
Anyhow - breakfast was a small serving of fruit salad (mostly berries but also some grapefruit and a tiny slice of the under-ripe melon) with double cream. Followed that with 2 tiny, cold lamb chops, left over from yesterday.

2nd meal will be salmon on a bed of fried courgette slices.

Making a soup from the "planned-over" cauliflower leaves/stems, kale, plum tomatoes, tomato paste, onion aubergine, garam masala, Kashmiri chilli powder, mixed herbs, garlic powder, salt, pepper thing I had yesterday, without halloumi though, not sure on the protein today, fancy tinned mackerel for some reason.

I’ve had a day of mental frustration and physical inactivity which has put me in a bad mood. Not helped by the fact that the DD cheese and broccoli soup I made for lunch put my BG over 7
Other food was 2 scrambled eggs on Livlife toast for breakfast.
Leftover DD meatballs with Cauli mash and green beans for dinner.
Large glass dry white wine before hand Shouldn’t have had it but it hit the spot.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and carb killa bar
Skipped lunch.
Mid afternoon: black coffee and DGF millionaires shortbread.
Dinner: scrambled egg on Marmite on LC toast followed by SF blackcurrant jelly and cream.

I was reading about that today. I have no idea how the islanders are coping with this. Media was saying that's 10 ferries inoperative now.

And the media are reporting that Calmac are robbing Peter to pay Paul with their ferry services. All of their fleet is too old and historically not well maintained (Tom was a Master mariner and did his own inspection of every ferry we ever went on. He said it was the same throughout the merchant navy - owners never willing to allow sufficient funds for maintenance.)

Mid afternoon an lc hot chocolate, hm with cream and 85% chocolate and water.
7 ish 2 sausages, not sure of meat content but bought from local butcher, very tasty, half a courgette

The cafe I go to on a weds used to give me a reduction but not now. It is slightly annoying but glad they are still open.
