What have you eaten today? (Low carb forum)

The joining is the easy part... its the going consistently after that is harder to maintain. Nice when you start to see results though

Next time I think I'll give it a try in a bigger vessel, a small casserole or such, to see if I can make it larger and thinner.
And here is yesterdays interesting meal experiment involving @Stardew 's bread!
I used a larger vessel to create something like a thick slice of bread and had it with cheese and a turkey egg that should have been a little softer.
Very satisfying!
Had it with 2 leaves of mystery 'snack lettuce' filled with cream cheese, smoked ham, a slice of cheese and kimchi. Didn't eat the third leaf so I'll add that one to my meal today.

Today I'll take the experiment even further. I've made two even thinner slices of the bread and I'll see if they'll make a 'tosti' (two slices of bread with cheese and ham toasted in a thing that presses the whole thing together).
I gave away my tosti making thing because of diabetes though, so I went to see if neighbour-in-the-garden has one. So now I'll be trying the tosti thing not with an electrical appliance but with a brand new but medieval looking thing you're supposed to put directly on the gas flame.

I'll update you on the outcome of that!

I survived! (barely)
Apparently in English the word is doms (delayed onset muscle soreness), but I prefer the German term Muskelkater, literally muscle hangover.
I didn't exactly try to keep up with the rest of the group, which would be foolish (them: well trained thin people in their 20s or 30s, me: 46 year old couch potato with a BMI of 36) but I did try to keep up with the lesson, which just happened to be a heavy duty gym circuit training session...

Still, while it had me gasping for air, it wasn't that bad, and the people were really nice and appreciative of my efforts. :joyful:


I contemplated if it would be realistic to expect I'd be able to motivate myself to endure this torture every week, but then much wiser and more sensible friends told me I should build up my exercise more gradually and with a more personalised plan, especially considering my diabetes and back issues.

Which had the total opposite effect of me going all obstinate mode and fighting sensible advice, so now I'm the proud owner of a once a week gym membership!
While they may be right in that this is not the best choice for exercise, it beats no exercise by a long way and it doesn't matter where you find your motivation as long as you find it. So thanks a lot for giving me the unintentional extra push, my friends!

I even found out that our muncipality (if that's the right word) partially funds this kind of thing and I applied with my favourite person working there, one who's willing to look at what's best and not rigidly following the rules to the letter and got approval first thing this morning.
Which will be another very strong motivation: it's someone elses money so I'd better not let it go to waste. Like I said, motivation is motivation, no matter where it came from!

Looks inviting. I used to have a sandwich toaster and a waffle maker but eventually it became too difficult to clean them and so they went to the dump. I've just bought a new waffle iron to sit on a hotplate. It will go in the dishwasher. I did have one before but I got rid of it when I bought the electric ones. Now we're at the beginning of the circle again. I will try making low carb waffles or chaffles with it.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: creamy garlic prawns with sliced sautéed courgette.

B: yoghurt seeds and a small pear
Exercise class then coffee with friends.
Sudden unplanned hours gardening
L: 3 chicken drumsticks. 3 sqs 70% chocolate (not really enjoying it must get more 85%)
Made some lc almond biscuits. Ate 2. Froze the rest
D: pub meal of a nourish salad bowl with extra prawns. 2 cocktails, not sure what was in them, didn't taste too sweet, 1 mint tea

Decided in my wisdom to buy a small tub of Humous.......... shan't be doing that again. Next time look at the carb count with the right glasses on!!!

Breakfast: Eventually, about 1 pm - Picked at bits of cheese, ham and smoked salmon. BG went from 12.1 before to 10.9 two hours after.
2nd meal: leftover cabbage and pork - just to finish it off and not have to put it in the freezer. Have to see if I can perk it up a bit to make it more interesting.
Just heard that some of the folk I usually meet up with on Zoom have decided to meet face to face and will be coming here on Friday. I guess I did, kind of loosely offer an invitation but wasn't expecting a positive response. Serves me right! Will have to put some sort of afternoon tea together. That, of course, means baking. That'll be tomorrow and Thursday's job, but I must try not the test any of it and just trust my recipes.
 
Another busy day away from home until mid pm
Kefir before leaving home
Packed lunch of two cold boiled eggs with a slice of buttered low carb bread
Mid pm slice of LC toasted fruit loaf with welcome mugs of tea - I always drink lots of weak black tea at home
Dinner LC wrap with confit duck leg and lots of salad with glass of red wine followed by LC blondie with yoghurt.

I feel your pain! I've had weeks with various types of specs hanging around my neck until I can get the reactive/anti glare/reading/nothing all in one! 1 week on Thursday....not long.

Tuesday 18 April - bed 7 FBG 7.6. I reckon @DJC3, I have mastered the art of crispy skin on the sea bass now. Funny, a few years back, there was no way I'd eat the skin on a fish. Now I reckon crispy skin is delicious. How our tastes change. A visit to the butcher was necessary today. I needed featherblade for Thursday as the boys want me to use the featherblade recipe for their steak pie. I cook the pastry separately as the eldest has GF puff pastry. I also got chicken as I'm going to make butter chicken tomorrow.

B. TAG, 2 slices of back bacon, 2 slices of SRSLY toast, 1 egg, and 4 santini tomatoes. Benecol dairy free.

L. Slice of the butcher's roast pork.

D. SRSLY seeded roll with a beefburger - beef mince, paprika, parsley, finely chopped onion, little salt, little egg to bind. Once cooked, topped with mustard and Emmental cheese slice. Peroni 00. CC little chocolate pot and 4 raspberries.

At least I feel like cooking again!
 
Hadn't planned to skip breakfast but life got busy so ended up breaking fast about 1:30 pm.
Smoked mackerel and cream cheese - had been intending to make a pate but ended up eating it 'neat' . Has 2 scrambled eggs as well.

Mid afternoon 2 proper florentines a neighbour bought in as a thank you for feeding her cat. Thank heavens I stopped at 2! Asked hubby to either eat or hide the rest. Hope it's the former as I'm likely to smell them out if he's hidden them!
Stopped the craving by having 1 hm lc almond biscuit. Neighbour also bought pate. Will save that for another day.

Late dinner after a meeting: cold pork and ham, dark chocolate and hazelnuts.
 
B- h/b eggs and h/m sauerkraut.
L- SRSLY roll filled with Turkey, cream cheese and coleslaw. Then one of the DGF Notella Easter eggs I’d finally managed to order. They arrived today, bigger than I expected and such a treat.
D- Out for DILs birthday, so many places we used to go to didn’t survive the lockdowns but this lovely restaurant serving local fish and meat was still buzzing and as good as ever. I had scallops on cauliflower purée to start, then rare breed Ruby red beef sirloin steak with blue cheese sauce, green veg and a slow roast tomato. 1glass red wine and a sugarless Irish coffee

Fish looks so much nicer with crispy skin but I still haven’t managed to eat it. I’m eating crispy chicken skin these days and loving it, something I never thought would happen. Our tastes really do change.
Great idea from the boys to use the featherblade recipe for a steak pie btw.
 
BG this morning was 11.3 but eased slightly before breakfast to 11.1. Big deal! Not at all sure what is happening with BG right now. It's just not coming down despite no obvious carbs. Basal dose is back up to what it was before the nurse told me to reduce it. I am still trying not to take too much of the bolus dose with food, but am finding that I am having to take a correction dose more often than I would like. At least I haven't put any more weight on, though I thought I might have. Didn't lose any either.

Anyway, breakfast was a mushroom omelette and tea.

2nd meal will be chicken curry with cauliflower rice.

Just caught the end of a programme on the Food Channel where they were demonstrating brocolli rice using just the brocolli stems. Interesting. Also demonstrating brocolli stem baked chips. Also interesting. Not that I'm very keen on brocolli but it's worth trying.
 
Breakfast (pre work out) 1 cup of tea, 1 avocado with a drizzle of lemon, salt and pepper, small portion of salted peanuts and 2 spoonfuls of Skyr yogurt.
Lunch (post work out - 3 fresh turkey slices, 2 left over parma ham slices with bacon wrapped in lettuce, small portion of salted peanuts and 2 cups of tea
Dinner probably bolognaise with bean sprouts.
 
Brunch - 2 slices slc bread toasted & filled with egg mayo. Mug of earl grey tea

Dinner - air-fried chicken breast with large salad. 1 low carb food co roll buttered. 2 squares lindtt 90% and another mug of earl grey. Also had glass of pepsi max with this and water throughout the day as usual.

Lovely day and night here - a sunny 12 degrees - off out shortly with friends for a walk & talk (catch up) with them :happy:
 
Wednesday 19 April bed 7 FBG 6.7. In between making butter chicken, I ended up assisting eldest with homework, which was a mix of computer skills and English. Thankfully, I can do multiple things at once, and he did finally "get" where I was coming from.

B. TAG, and a good bit later, Ayrshire Middle bacon - 2 rashers, 4 santini tomatoes, fried egg (another double yolk). 1 slice of SRSLY toast.

L. 1 slice of the butcher's roast pork.

D. Butter chicken & cauliflower fried rice. A slice of SRSLY bread to soak up the sauce. It's a twosleevers recipe. No amendments or additions from me for a change. It wasn't quite hot enough for Hubby's taste, but he ate it!
Peroni 00, and I suspect I'll have a CC little chocolate pot later with 4 raspberries.
