What have you eaten today? (Low carb forum)

I didn't know Goonergal's funeral was yesterday, but there was definitely soemthing telling me to do 5 guys style burgers last night and I thought of her throughout!
Hugs and gratitude to all you who went, either in person or on line.

B: ff greek with seeds and a small pear.
Lovely coastal walk, ended in a pub
L: a no alcohol lager and whitebait with salad
Another walk, ended with an ice cream (rhubarb and ginger ina tiny tub, still 24 g carbs tho). Hope the 7 miles total counteracts it
D: salmon, green beans and tatsiki. Cheese. White wine with soda
 
Saturday 29 April - bed 7.6 FBG 6.9. That's DIL 's parents on their way back to the USA . An emotional day was distracted by the youngest having an early birthday party. It was a pool party, so this was the only date they could get. Son asked if I wanted to attend!! Eh, no thanks. We were out early getting party bags, etc, managed to fit my shopping in, then I was on transport duty.

B. A bacon & egg sandwich on SRSLY toast. TAG

L. Nothing

D. Liver, 1 slice bacon, onion, egg, and peas. Didn't finish it. Just a bit too much.

Low carb slice of bread with halloumi and a low carb cracker with a fishy mayo thing kindly made by my supermarket.

Shopping planning went all wrong yesterday: My alarm clock went off in the morning, completely puzzling me because I didn't have anything planned on thursday.
Took me almost 10 minutes to work out that it wasn't thursday but friday and I had to hurry to get to the pool in time. :hilarious:

I usually do my groceries after swimming, but I had no idea what groceries I needed, and I had forgotten my meter in my haste. Libre is rubbish during the first hour after swimming (due to BG levels changing too quickly) so I was flying blind, and I decided this was the perfect excuse to not try and decide on food to buy on the spot.
Which in turn was the perfect excuse for not cooking today! :joyful:

Tomorrow will be my third circuit training session at the gym, and I'll do some shopping on my way back, especially veggies.

@ravensmitten I also use the cauli mash recipe that @maglil55 posted. (I also make cauli cheese in the same way to start with - microwaving to begin then putting in oven/airfryer with cheese on top to brown at the end)
Today was mostly spent on trains travelling home. Just black coffee all morning
Pit stop in Birmingham M&S to pick up lunch so I had olives and cheese and cold chicken.1 DGF Notella Easter egg.
Dinner, finally home and a bottle of fizz in the fridge to welcome me back, then h/m burgers and salad and superb Staffs asparagus I bought back in my suitcase.
 
Well, I was another one who said a sad goodbye to Goonergal yesterday. I have to say, one of the most personal and lovely funerals I have been to. (Thankfully, I have not had to attend too many, thus far!) I man, what is a lovely funeral, but I hope you know what I mean.

It always seems so unfair when someone is taken in the prime of their life when they have so much left to give. However, what was clear from all that was said and the photos we viewed both during the service and afterwards, was that Goonergal had LIVED her life, her life hadn't just happened along the way.

There are lessons there for us all.

Unsurprisingly, my post-funeral food was veeeeeeeeeery similar to a few others who posted. Very delicious.
 
In the morning i use our blender to make a drink, consisting of Yoghurt, a big dollop of peanut butter, blue top milk milk, 1 Avacado, 2 tablespoons of Chai seeds, and 1 tablespoon of Flaxseeds. Its not the best tasting drink in the world but its does me good.
Mid morning i take supplements vitamin D and K2
Late afternoon steak and 3 eggs
 
Breakfast: 2 fried eggs, 6 leftover frozen chips.

2nd meal: pork chops and braised cabbage. I'll prep it shortly, while I still have some energy (took extra pain killers this morning and, as a result, went to sleep for about 2 hours, so am feeling fairly strong at the moment).

Lots of washing to do, but mostly in the washing machine, so it won't take up too much energy. Have to get hot water out of the (electric) shower to do hand washing now that we are out of oil. Makes it a bit more awkward, but doable.
 
First thing kefir
Lunchtime some olives, a couple of baby tomatoes, some chicken liver pate, two slices of low carb toast and a few teaspoons of HM hummus - it's quite high carb for me because of chick peas so I'm limiting portion size I'm keen to include a few pulses for my gut bacteria. By making it too I could do things like strain liquid away and wash the chick peas to lower starch content.

Dinner home made chicken curry with a low carb roti plus a small glass of red wine. Pudding will be 100% chocolate with mug of decaffeinated coffee with cream.

Hummus is a strange thing for me, it doesn't need nearly as much insulin as I would expect according to the carbs. And I definitely eat more than a few teaspoons too, it's one of my favourite midnight snacks to have with chicory leaves.
It may be it's the same for you and carbs from hummus don't act the same as other carbs.

Interesting yes my bgs were fine too 2 hours on so maybe I could cope with larger amount. I used a lot of olive oil too so I'm sure that helped.
 
Sunday 30 April - bed 7.1 FBG 7.2. Swimming lesson day. School holiday tomorrow - Yay!

B. TAG and 2 slices of SRSLY toast with benecol spread and rare brisket with mustard. Benecol dairy free.

L. Nothing

D. Usual campari and soda. Another of the M&S summer range. Pork chop with lemon and pepper. Does have some crumb on it that needed a scrape, but it is really nice. Fry 2 mins on each side, then into the oven for 16 mins. Really tender. Had it with green beans, spinach, mushrooms, and pancetta, and there are some santini tomatoes in there. Didn't quite finish it.

10 am 2 fried eggs, 2 rashers bacon, mushrooms and half a tomato.
10 mile walk, pint of no alcohol lager halfway round and 3 bites of hubbys ice-cream
D: 3 lidl cheese and bacon sausages, green beans. Cheeses. 1 glass white wine
 
Another odd result. Yesterday's 2nd meal was Kerelan chicken. Spicy but not high in carbs. Took 40 units of insulin but that obviously wasn't enough because BG was on the high side until early morning today.

2nd meal today was a pork chop with braised cabbage, apple and onion. Probably marginally higher in carbs than the chicken. Took 45 units of insulin to cover that and have been struggling to keep BG above 3 for the rest of the evening. Didn't realise a hypo was coming on until it was in full flow because I was on the phone to my brother and not paying attention. I did hear the alarm on my Libre but didn't identify it. Actually wandered around the room to see what was beeping and didn't notice it. Now it is up to 4.5 after several carby things so I can go to bed.

Maybe I should take the insulin after eating when I can see what effect the food has had.
