What have you eaten today? (Low carb forum)

Today I skipped breakfast again. I’m not really missing it but I’m very ready for a coffee mid morning. Lunch was salad with two boiled eggs followed by Greek yogurt with grated chocolate. For supper I had cheese on LC toast and after some of my homemade ice cream. I’ve nearly come to the end of that so I’ll have to make some more. I’ll try a little gin in it this time to see if it makes it soft in any way, tho I have now got used to taking it out quite a bit ahead to soften it and that works.
 
Mid morning: 3 slices cheese on hilo toast. Only meant to have 2 slices but the crust was stuck to the 2 ordinary slices as I took them out of the freezer. Not much of an excuse but it sounded valid to me at the time.

I’ve been keeping an eye out for the Hilo bread but not seen any yet. So far I’ve only tried the SLC but I have just ordered some rolls and wraps from DGF. They seem to get good reviews.

I've only ever found it in Sainsburys, and even then they hide it on either the very top shelf or the very lowest, and it doesn't seem to be with the other special breads either . :banghead:

Keep your eyes peeled. It's about £2 a loaf but freezes well. Once I found it reduced to £1 so I bought 3 loaves and am still on them. I'm very frugal with it and only use it for cheese on toast as I've never found anything else to act as a replacement for that.
 
Smoked salmon for breakfast. That's the only thing I feel safe eating without any ability to check BG. Didn't take insulin beforehand but there can't have been any carbs, so it should be OK.

Must use the lamb today or it will go off but can't do the prep too early - my cleaner phoned yesterday. She's back to work after having surgery for a hernia and reckons she's fit to do some cleaning so wants to come this morning. Have to make an effort once she's gone again. Still very stiff after Zoom class yesterday though.

Edit: in the absence of testing kits I'll stick to proteins today and not bother with veg prep. Makes for easier cooking and gives me minimum carbs so BG should remain fairly stable. Of course, if Alistair turns up with either my kit or sensors, that'll all change.

Thanks Ann , I’ll hunt a bit harder when I’m in Sainsbury. The SLC bread is okay but it is very expensive.
 
Hi All so back to Wednesday
Brekkie my usual slice LC toast, butter, copious tea.
Lunch was cooking for three non D friends. Did a fine egg noodle salad with blanched baby corn and mange tout, shards of red pepper and spring onions topped with Teriyaki baked salmon and a slug of Teriyaki sauce. Afters ripe strawberry halves in sundae glasses topped with Greek yogurt and a drizzle of h/m strawberry coulis. I avoided the noodles as much as possible!
Supper was a couple of chunks of cheese with a slice of Dr Almond bread.
Thursday same brekkie.
Lunch was small plate chopped salad with two slices ham.
Supper was chunky cod fingers and cauli cheese.
Friday (today) same brekkie but delayed due to blood draw at surgery.
Lunch was two slices Dr Almond bread topped with Dairylea and chopped tomato. Supper will be a medium sized sirloin steak panfried and Portobello mushrooms.
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado, seasoned with black pepper and a wedge of Caerphilly.
Water to swallow tablets
Espresso.

L: Packed lunch made with leftover mushroom and spinach frittata, Romano peppers, celery sticks and cherry tomatoes with a dollop of homemade mayonnaise for dipping.
Almonds, hazelnuts and pecans.
Wild blackberries to round off lunch.
Water to drink.

D: Smoked salmon and cream cheese salad using lettuce, fennel fronds, celery, vine tomatoes and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pumpkin seeds.
Water to swallow tablets.
 
Late breakfast was a piece of yesterday's leftover frittata and cwc

Trying to skip lunch but caved in to 1 lc cracker with cheese, swiftly followed by 2, yes 2, hm lc chocolate and raspberry mousses. (Recipe below)

D: half a slice of ordinary bread with cheese and ham toasted in airfryer. Another raspberry mousse!

An hour later and I have a headache. I know I can't have bread ot too many sweetners!!!

The chocolate and raspberry mousses are a happy invented adaptation of the low sugar jelly made up with yoghurt and topped before setting with chopped 100% chocolate. I'd been think of seeing if it made a nice chocolate orange flavour, but found I only had raspberry jelly so used that. The 100% had been lurking in the back of the cupboard and was well past its best. I just chopped it roughly and sprinkled it on the jellies as they set. It's softened the chocolate a bit, but still gives a nice crunch . If the jelly isn't too hot I think the chocolate would stir in nicely. I used 6 of the squares in 6 portions. The bitter chocolate offset some of the sweetness of the yoghurt jelly nicely.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: avocado with prawns, garlic mayo and coleslaw.

Unexpected very busy day.
Swimming first, followed by groceries.
Neighbour-in-the-garden and I had planned to make a plan for installing the solar panels, so I had a generous correction dose when I got home, making plans shouldn't really drop me after all.

And then instead of making plans we spontaneously decided to empty the pond, which had gone all bright green and bubbly. First with a pump, but the layer of mud was too thick for the pump so the rest had to be done by hand.
He used a rake to clear the bottom from sticks blown off trees, beer bottles, a pack of roof tiles nicely tied together with a piece of string (don't ask, no idea), my father's favourite mug, still whole :joyful: , a plastic fairy, and at least a dozen of duck eggs. (Apparently ducks lay eggs while swimming?)

I used this torture device, which meant I ate a slice of low carb bread usually worth around 7 units of insulin, a couple of winegums with a very muddy taste (I think my pack of hypo treatment winegums is forever ruined now), and a couple of bites from my neighbour's ice lolly.
It's amazing how effective a bucket on a stick plus wheelbarrows full of mud are for dropping BG.

Evening meal was what I had planned for yesterday: Fresh broad beans with cream cheese and some bacon, and the frozen fish thing from Lidl, both were delicious. :hungry:

Not sure how many carbs in the fish thing, too tired to fish the package from the bin to check, and dosing is off anyway due to all the exercise. So I went with a very low (for me) 2 units dose an hour ago because I dropped to 3.8 again right before dinner, and have by now risen to 5, so far so good. :)

No breakfast but I did have two coffees over the course of the morning. One oat milk latte at home and an americano with cream on a trip out with my partner. I had no idea I liked it until I saw it mentioned on here and thought I give it a try. It’s really nice.

Lunch was a small slice of crustless quiche, sliced courgette baked in the oven with a little cream and cheese and kale. Afters was Greek yogurt.

For supper I’d made courgette soup (the annual glut of courgettes in the garden is underway) with a low carb wrap with salad and avocado.

For the mousse do you replace the liquid with an equal volume of yogurt?
 
@Antje77 all that stuff in the pond! I’m amazed, and also fascinated by the fact that ducks lay eggs while swimming! I’m not surprised your BG dropped though, I bet it was really hard graft.
@MrsA2 I like the sound of your chocolaty fruity mousses.
Todays food:
Black coffee all morning
Lunch was bacon lettuce and avocado in one of the new SRSLY white hot dog rolls. Very nice. Followed by a DGF cake
D- marinated chicken breast, air fried and served with cauli rice mixed with sautéed red onion, peppers, mushrooms and garlic.

I put 2 Chicken breasts in a few ziplock bags and added various marinading things, olive oil&lemon juice, garlic and Rosemary works well. Others had spices or balsamic vinegar&oil. Anything goes really. Then the bags are frozen, already prepped ready to take out whenever needed. It’s a good standby. IMG_3066.jpg

Use boiling water for about the first 200mls, let it cool a little then plain yoghurt up to total of 500mls or so. Less liquid equals a firmer set but I like to use slightly more and whisk it well to be more bubbly airy. The jelly is a sugar free one, ie loads of sweeteners. I find it too sweet if made only with water

Thank you. Sounds like delicious occasional treat. Lots of berries in the garden too at the moment to try out with it. Today I tried making the low carb strawberry cheesecake popsicles from the All day I dream about food website. They are currently in the freezer waiting until I’ve eaten my vegetables first before treating myself.
