What have you eaten today? (Low carb forum)

Bit of a day. Waiting for a lost parcel, still not turned up. I now have three parcels on the loose.
Meant to get money and shopping, got neither so food was a miss match!
Half still in the supermarket..
Tea, no coffee
Cheese no tomato
Pork joint done in a multi cooker which didn't quite work.
Oh and a little Branston pickle.
Another day of waiting tomorrow.....slightly p----d off
 
Actually, I find it's safer to buy avocados when they're still rock hard, store them at room temperature for 3-4 days (depending on their best before date) then enjoy! In the unlikely event they're not eaten right away, refrigerate until needed.

I've come unstuck with avocados labelled "perfectly ripe and ready to eat." At best the flavour was disappointing.
On reflection, I suspect avocados suffer more than most fruit while in transit from overseas. I first encountered them at source, whilst backpacking on a shoestring with my husband in Peru. They were cheap and plentiful and tasted as though they'd just dropped off the trees!

Years later, just before lockdown, we went on a wildlife safari to Central America, sharing the driving with friends. Costa Rica seems to have more greengrocers than any other food outlet and, come lunchtime, we often dined by the roadside on ceviche and avocados. Once again, the flavour was incomparable and altogether different from the avocados available here in England.

Mind you, that hasn't stopped me enjoying a few slices of avocado with my breakfast eggs most week days. I'm at my most insulin resistant first thing in the morning and it's a nice combination that, together with seafood and a knob of butter, keeps me going until lunchtime without snacking and results in steady blood glucose readings.
 
Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a tomato, garnished with flat-leaf parsley and seasoned with a grinding or two of black pepper.
Water to swallow tablets
Espresso.

L: Baked whole sea bass, belly stuffed with French tarragon and garlic, drizzled with olive oil, accompanied by asparagus spears with butter and a medley of broccoli, leeks, and red peppers with garlic.
Raspberries and Greek full-fat yoghurt.

D: Plan to have salad made with anchovy fillets, eggs, avocado, fennel, Padron chilli, thyme leaves and a touch of lemon juice, with a dollop of aioli for dipping, topped with toasted pistachios and chopped chervil.
 
I’m envious of your ‘avocado at source’ experiences @LivingLightly I love them but they are so often disappointing here now.
Todays food:
B- eggs and cheese on toasted DGF roll.
L- handful of macadamias and a few squares Absolute black.
D- Mediterranean flavoured roast dinner. Slow roast shoulder of lamb with garlic&rosemary. Green beans with lemon and toasted flaked almonds. Roast peppers/broccoli/red onion/garlic. Best of all a Greek style cauli cheese, it’s in my CMT if anyone fancies it. It was delicious. A block of feta baked with garlic, cherry toms and black olives. Then all mashed roughly together to make a creamy sauce. Steamed Al dente cauli florets mixed in and all topped with mozzarella before putting back in the oven to brown. (No 2 daughter said it was the best meal in living memory! I wonder what she’s after?)

Yes, those are evergreen memories.

I was introduced to avocados early in life. Grandpa was ex-services and had developed a liking for them whilst stationed in Jamaica. Back in the day, they were not widely available here in the UK and I remember my parents making a detour to a high class greengrocer in Covent Garden in order to buy Grandpa's avocados. Whilst good quality, grandpa always maintained that they couldn't quite match the flavour of those he'd sampled in Jamaica.

These days, independent grocers are still the best bet, if you're fortunate enough to have one within striking distance.
Sadly, our sole remaining greengrocer decided to call it a day recently. He supplied the best avocados in this area and he is sorely missed.

I try to shop locally where possible. Those sold for "home ripening" by Waitrose seem to be reliable.

Cauliflower and sauerkraut mash (Dutch traditional dish, except traditionally it's with potatoes, not cauliflower) with 'zuurkoolspek' and 'rookworst'. :hungry:

Too much on my plate, but thanks to dogs and sleepover dogs, absolutely nothing wasted and a squeaky clean plate. :joyful:
 
Very brave to take such a course, I hope the parts on the psychology of eating and comfort eating will be helpful after surviving the parts on healthy carbs and low fat everything!

Two wins today!
After yesterdays no cooking day I had the fresh broad beans today, and I also finally worked out how to make a very tasty low carb variation of my mum's 'cheese schnitzel', another item back on the menu!

The original recipe uses fine bread crumbs and egg, two layers. Last time I tried with almond flour but while this kept the cheese inside, it didn't result in a nice crispy crust.
So this time I used one layer of almond flour to keep the cheese from escaping, and one layer of crushed pork scratchings, which worked very well!

Yes, cheese did escape, but that had more to do with my habit of moving stuff around in the pan than with the crust. So if I learn to just let my cheese schnitzels do their thing, only turning once, they should turn out perfect!

What I discovered gave a crispy crumb coating was to add some sesame seeds to the mix. I use a mix of equal parts of almond flour and parmesan, add some golden milled flax, and sesame seeds. Seasoning changes. Salt & pepper is a must. Sometimes, I add paprika. Sometimes, lemon zest (nice with fish & chicken). It's a standard mix I've used for a long time, and it always gives a crispy coat.

I agree about shopping locally. Sadly our fantastic butcher is closing in Sept. He is the main reason we chose to live in this village so we are devastated, it’s been in his family for generations so he’s really sad to have to close too.
 
10:30 ish. Ff greek with seeds and 2 large strawberries . Cwc

Gentle 30 minute walk

12:15 manchego cheese with nearly half an avocado, 1 big strawberry. 2 raspberry and chocolate mousses.
The avocado was soft and ripe but about 15% of it was brown and bad.

A longer more strenuous walk of about an hour

18:00 roast chicken with cabbage and green beans and roasted peppers filled with tomato and anchovies, capers and seasoning. 1 teaspoon stuffing.
1 cc chocolate pot with 2 teaspoons cream

Sadly I think the lovely tasty peppers spiked me too much. Went from 7.7 to 9.7 so although it's only 2 , it start from a high point

Think I'm going to have to invest in another libre as I cannot work out why my bg is running at 7+ . It allows me no leeway at all

D. Like @DJC3, I, too, have the SRSLY hot dog rolls, and the next few days are going to be pretty much the same. A SRSLY hot dog roll with a little fried onion, a hot dog, mustard, ketchup, and a sprinkle of crispy onion. Salad on the side. Gin & zero lemonade.

Thursday 20 July - bed & FBG both 7.9. A bit of rushing about today. Usual Aqua class, then some shopping in M&S. Yet another trip to recycling and a trip to the butcher.

B. TAG and 2 slices of SRSLY toast with deli roast pork and vegetable salad.

L. Nothing

D. Yet another hot dog. This time, I added vegetable salad to the mix, and it was one of my butcher's GF tomato and pork hot dog sausages. Gin and zero, CC little chocolate pot with raspberries.

Incredibly, there was a woman in the butcher's complaining that there was fat in the rib eye?? She wasn't having it that fat is what adds the flavour. She ended up with a Jack Sprat cut of beef that would require careful cooking to make me it tender. I became the Jack Sprat wife and grabbed the rib eye! 20230719_185706.jpg20230720_190227.jpg
 
Oh dear - it went wrong again. We discovered that one of the front tyres was worn and soft so, when I came out of the Health Centre. we had to go to the tyre service and get 2 new ones. That took quite a while and by the time we got home, I was pretty exhausted so I rested with a cup of tea and fell asleep. When I woke up it was time for my Zoom class so I grabbed a slice of wholemeal bread and, taking a chance, had some peanut butter. Had a really bad reaction to it the other day so hoping it won't be too bad today. After the Zoom class, I was crippled so couldn't do anything. Lamb and vegetables now back in the fridge.

This is all not helped by the fact that I have no means of checking my BG. DIL was told that she will not be operated on until she gets her BG under control and all of her sensors fell off of her arms, so she borrowed my last one. That also fell off so she borrowed my fingerprick kit because her own has disappeared. Now my sensor has run out - I thought it had 2 more days to run. Alisair was going to try to get replacement sensors today, but didn't get them. He'll have to try again tomorrow. Meantime I will have to be extra careful about what I eat.
@Annb - I use these to keep the Libre sensors on (mainly because of swimming and aqua) but they do keep them on.

I'm back and working through my washing. I will need time though to work back over everyone's posts over the last week so maybe a bit of reading this evening! Thank you for all your good wishes for our Anniversary Cruise - they worked!
Won't list everything eaten on the cruise to Norway just a few examples and, having decided at the last minute to take my blood sugar testing kit, I can confirm that I was able to effortlessly stay low carb all week. The choice was fabulous and I ate practically my body weight in fish including raw tuna and salmon and lots of smoked salmon and trout plus freshly fried fish such as sea bass with crispy skin. Most of my bg readings fasting and two hours after were around 4.9 and never above 5.8 and my weight this morning was exactly the same as the morning I left. It sounds a bit smug but I was so worried about what would be on offer so I'm thrilled and it wasn' t difficult to stick to low carb because the food on offer was amazing and filling. Despite mountains of carby food out there on offer eg pizza made freshly for you in the self service and freshly baked bread and pastries galore thankfully I found the huge range of high quality fish and meat on offer more tempting and filled me up. My choices included:
Breakfast Always started with smoked salmon followed most days by a freshly cooked omlette with mushrooms and cheese and a side of well cooked bacon plus lots of black coffee.
Lunch We tended to eat at the self service restaurant (which stayed open later so could eat late when back from our hiking exploring expeditions)
where there was amongst other things a huge selection of sushi, fish, tapas, cheeses and salads ( one lunch in photo below)
Afternoon tea - there was a formal afternoon tea included as an option which was amazing to watch to accompaniment of live classical music but I was too full, although the day that my OH wanted to experience it I joined him and had clotted cream and tea.
Dinner - always ate in restaurant where five courses were on offer and I usually managed 4 with an appetiser of smoked salmon or similar, then a bowl of consomme soup or non dressed salad and a main with lower carb veg such as fried sea bass on a base of celeriac mash, or medium roast beef with cauliflower cheese (example picture below) or medium lamb with brocolli or medium fillet steak with asparagus - can't remember them all but basically all fish or meat (cooked to your preference rare, medium or well done) with low carb veggies and instead of a pudding a selection of wonderful cheeses with no biscuits. We also usually had a glass of wine with dinner and coffee afterwards when I occassionaly indulged in a small hm chocolate luckily too full by then to be too tempted!
Most importantly though we had the most special holiday and Anniversary and we remembered mum who had so wanted to do a cruise with Cunard. We walked lots of mountains, saw the most amazing scenery including snow on the tops of the mountains as we went further north, were very well looked after and had so much fun together. What a wonderful break it has been I feel very lucky to have had this special experience and a weeks break from caring.

Lunch a salad made with lettuce, three small orange tomatoes and beetroot kimchi with slices of coppa ham and half of a DGF keto roll cut into slices and buttered.
Dinner - salad made with lettuce, avocado, spring onion, beetroot kimchi and coleslaw served with fillet steak and mushrooms cooked in butter with glass of wine then some stilton cheese. Just had a decaffeinated coffee and one square of 90% chocolate.
