What have you eaten today? (Low carb forum)

Raining and cold here in the Western Isles. Not heavy enough rain to flood but enough to make people miserable and cold outside.

The pie crust was OK, but don't think I'll bother again. Better just with the beef. There's still half of it left though, so that will be for tomorrow. Tomorrow will be a bit of an adventure foodwise. Not sure what there is in fridge or freezer. There's plenty there but I'm not sure exactly what there is. Might be some fish in the freezer and lots of little boxes of beef ragout and I think a big pot of oxtail soup which seems to be stuck to the ice of the shelf and won't budge. Should have defrosted it long ago.
 
Morning all. Just about to have my bf, a small tin tuna with sweetcorn, 4.5g carbs. Lunch will be a carvery with a friend. I like a carvery, takes all the hassle out of eating for me. If I'm hungry at teatime I'll have my old favourite, 2 boiled eggs. Had 16g of carbs yesterday and am quite proud of the way I've stuck to very lc eating. Hoping it will soon bring my levels down to the 5's. I'm hovering between 6 and 7 atm. Have a lovely Sunday folks. :)
 
Had breakfast early because I had an all-morning Zoom meeting. I tried making halloumi fries to go with some fried eggs. They worked, for the first time, but I didn't enjoy them - waste of good fried eggs really. Never mind - we live and learn.

2nd meal will be the remainder of the beef from yesterday's pie, scraped off of the pie crust, which I also didn't like and put it with some cabbage. I'll start on that soon (1.15 now) but I daresay I shall need something else before the end of the day. BG is 4.9 and so far, no carbs today, so I'll have a few in hand.
 
Yesterday
B: Hotel buffet so had 1fried egg, 2 rashers thick bacon and fried mushrooms. Then went back for more bacon and some scrambled egg.. latter was awfully thin and watery
3 hours dancing followed by a walk along the beach.
Skipped proper lunch but did have an ice cream
D: ceasar salad, roast beef and green beans, large Yorkshire pud and gravy. Small potion melon and 1 cube fresh pineapple. 2 glasses white wine.
3 hours dancing
Couple of spikes, quickly brought down. To bed at 5.0

Today
B: 2 fried eggs, 3 rashers bacon, fried mushrooms
3 hours more dancing
2 hours travelling in car - at last a good rest yay!
L: blacksticks blue, olives and 4 sqs 85% choc.

Later will be roast chicken and lc veg.
 
10ish fried one rasher of bacon, egg and some garden tomatoes served with LC toast
1ish mainly ferments for lunch small glass of kefir, unpasteurized cheese with kimchi followed by a few garden berries and yoghurt some apple peel and four squares of 90% chocolate

Breakfast at 11am with 2 rashers back bacon, an egg, mushrooms and a tomato, all fried in butter.

Coffee with cream

2pm G&T

4 pm Coffee with cream

Nibbled on Brambly apple peal while make apple crumble for hubby.

5pm roast chicken, small amount of carrots, cabbage, tender stem broccoli, and sautéed cauli rice, couple of tablespoons of thin gravy.

6pm 2 squares of 90% Lindt chocolate

Think I've consumed about 22g carbs today.

Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a vine tomato, sprinkled with chopped, flat-leaf parsley and seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Baked whole sea bass, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed French beans smothered with butter.
A medley of baked broccoli, red onions, leeks and sweet red peppers with garlic mushrooms.
Water to drink.
Raspberries and Greek full-fat yoghurt.
Four squares, Montezuma's Absolute Black 100% chocolate.

D: Salad made with anchovy fillets, eggs, avocado, Padrón chillies, Welsh onions, lemon verbena and a touch of lemon juice, with a dollop of aioli for dipping, topped with pecan halves.
Water to swallow tablets.
 
@maglil55 I’ve been wondering how you and @Annb are faring with all the rain I hope it calms down soon. Congrats to your son on his promotion.
Didn’t wake up til 8 today, at least 2 hrs later than usual and I’ve been tired and completely lacking energy all day. Had covid jab Friday so I’m wondering if it’s after effects of that?
Kefir to start, then black coffee later.
Lunch was cheesy scrambled eggs.
Dinner slow roast belly pork with super crackled crackling. Broccoli cheese and buttery cabbage. Left half of it, still feeling drained. IMG_3449.jpg

Hope you start to feel better soon maybe after another good night's sleep. I've only had my flu vaccine so far had sore arm on Saturday but fine today. Booked covid one for about three weeks from now for after my holiday.
@maglil55 congratulations from me too to your son on his promotion. Hope the rain in Scotland calms soon.

It's wet here, but the rain is not heavy - just persistent. Unlike the very heavy rain further east and south of us, where @maglil55 lives.
 
Friday 6 October - bed 6.7 FBG 7.6. I know some of you are having lovely weather, but it's really awful here. Non-stop heavy rain. There's going to be some flooding issues. Son was in Glasgow for a meeting, eldest here after school, youngest away with DIL.

B. TAG and 2 slices of SRSLY toast with cream cheese and salami. Benecol dairy free. Then gone by 8.45 to physio.

L. Nothing. Too busy ferrying people different places.

D. Air fried chicken drumsticks, sour cream dip, cheese coleslaw, avocado, and tomato salad. CC Little chocolate pot with raspberries.

Saturday 7 October - bed 7.7 FBG 7.6. It's still raining! Son wants to go to COSTCO, then shopping. Going out today required careful planning. I had to reroute twice due to severe flooding.

B. TAG and 2 slices of SRSLY toast with cream cheese and salami. Benecol dairy free.

L. A piece of crustless quiche

D. Cold cuts - ox tongue, ham, 1/2 slice corned beef, mini German sausage, chicken. Vegetable salad, coleslaw, and one tomato. CC little chocolate pot with raspberries.

@RosemaryJackson, it will be lovely for you to have your grandchildren about.

@shelley262- you've reminded me that I need to get online and book our flu & covid boosters.

@DJC3- my favourite was always a tia Maria coffee. Too much sugar now, so I've trained myself to "like" brandy coffee. I did have a gin and soda with a strawberry to cheer son's good news. He was encouraged by his manager (the job he only started 7 months ago) to apply for a managers job, and he got it! He's worked really hard, but even he didn't expect this. View attachment 63568

Just had breakfast of salmon mayonnaise. BG high again so need to keep carbs as close to zero as I can.

2nd meal will be egg and bacon.

The only carbs today will be in cups of tea. I hope!

Weigh in day today at the Counterweight class. I think I have gained weight since the last one (along with higher BGs) but I thought that last time and I was wrong.
 
Morning all. @Annb good luck with the weigh-in. BG was higher than I expected this morning :banghead: and am wondering if its the 70% salted caramel chocolate. I had 2 squares at 5.2g per square and I counted it and had only 23g carbs yesterday. Pensioners lunch today but it will be counted as Ive asked for help with the diabetes. I shall take my 2 crackers (3.6g) and cheese for afters. I'm trying very hard and my levels are coming down thankfully. Have a good week folks. :)

Did more energetic exercise this afternoon than planned as our walk included a field which looked fine until two very frisky bullocks appeared and chased us to the gate - we just made it and of course there was a caution notice on that gate but not the one on way in! My fitbit registered a very high heart rate and lots of active minutes! One way to push yourself! Pleased we didn't have a dog or child with us.
5ish hm Bolognese followed by LC Blondie.
 
Feeling more like myself today so whether it was the covid jab or not it was short lasting. I’ll be interested to hear others experiences. @shelley262 that race with the bullocks must have been terrifying. Well done for the spurt of speed to get you out of harm’s way. Could you have managed that pre diagnosis do you think?
Morning glass of kefir then a busy day out until finally home at 2pm.
Very hungry so had the rest of yesterdays dinner I didn’t have the appetite for then.
Dinner was 2 beef burgers ( our lovely local farm now does ‘clean’ burgers- just beef and salt) on 1/2 SRSLY roll each with cheese, gherkin and a dollop of dill and garlic sauerkraut. 1/2 avocado then 30g slice of garden apple. IMG_3453.jpg
