What have you eaten today? (Low carb forum)

B: ff greek with seeds and 8 raspberries (not too sure this breakfast is good for me, rise of 3-4 each time. Keeping an eye on it)

4pm very hungry so blacksticks blue and about 25 small grapes (the last from the garden, warm from the sun and stolen from the snails and critters)
6pm 150g steak with cauliflower cheese.
8pm 1 glass of red.
 
Hi everyone back from a long weekend away with friends and a day of catching up with laundry, shopping etc. The least said about the weekend the better. Breakfasts were good though, scrambled egg, half tomato & mushroom.
So yesterday my usual brekkie of slice LC toast, copious tea.
Lunch was two eggs in egg cups and a ramekin of strawberries. Tea.
Supper was baked chicken breast wrapped in bacon and tenderstem broccoli.
Having speed read your posts I notice @DJC3 and others had tiredness reaction to Covid jab. I had the same, two days after having both flu and Covid (Pfizer) in different arms I was so tired I went to bed early and Mr P woke me after 12 hours
 
Breakfast will be ham fritters made with chunks of h/m ham, spring onion, coconut flour and eggs - an experiment as usual.
2nd meal will be the lamb chops with leeks and swede that I should have had yesterday, but didn't bother because I got hungry in the early afternoon and had some smoked salmon on a RyVita - quite heavily buttered. So, of course, I didn't feel like cooking or eating later on. I'll aim to have it ready early to avoid doing the same thing today.

Em popped in this morning on her way to school because she's unlikely to visit again until after the school holiday - she has to do things after school today and tomorrow (part of her independence training which the school thinks she needs - that surprises me) and then will be going away with her mum on Friday for a visit to her grandad in Falkirk.
 
At bedtime last night I mixed 1/4 teaspoon of Hi-Lo salt in a glass of carbonated water. The largest ingredient in the Hi-Lo salt is potassium chloride. I'm pleased to confirm that I didn't have a single episode of leg cramp during the night. I'm hoping I've now cracked this problem. Thank you for the nudge @shelley262!

Cos I skipped dinner last night, I woke up hungry. So earlier than normal at about 9ish I cooked myself some streaky bacon rashers, and fried an egg, mushrooms and a tomato.

After taking the car to garage for a service, a round trip of 2 hours, and waiting there until the service was finished, I got back home around 4ish. I didn't feel like cooking, so I heated up 2 Southern Fried Chicken Breasts (one fillet has almost 14g of carbs) for hubby while I had more of the hm chicken and veg soup I made, garnished of course with thick cream!

Also had 2 squares of 90% chocolate.

I'm still on the low side with carbs (18g) and indeed calories (950) , so I've got bit of room for some cheese and almonds later if I feel like it.
 
@JenniferM55 pleased your salt addition helped. It's always worth experimenting with things to see if they help or make a difference. Btw 're magnesium I use glycinate and threonate as Oxide I understand doesn't absorb so well. Another thing others have done successfully is use a magnesium oil spray rubbed into leg muscles to ease cramp and absorb via skin and muscle. If you want to learn more Pauline Cox is a great source of info on magnesium and nutrition you could do a search wherever you listen to podcasts.clearly though with your heart health history you need to take it carefully maybe more magnesium rich food such as nuts and high cocoa chocolate yum.......

@maglil55 my jabs were 2 weeks apart, it was the covid one which knocked me for 6. Had to look on my NHS app to see what type it was : Comirnaty. Never heard of it! Hope you get the Pfizer one. @Antje77 hope you are feeling less wrung out now. It only lasted a day with me. Glad you are also over the effects @PenguinMum , good to see you back.
@JenniferM55 I’m so glad you had a cramp free night, fingers crossed the electrolytes as recommended by @shelley262 are helping. Cramp is horrible.
Todays food started with goats milk kefir which is fast becoming my best drink of the day.
Black coffee, Aquafit class then quick lunch of scrambled eggs on SRSLY toast and a slice of garden apple to follow.
Out again, handful of almonds around 4pm.
Dinner was haddock with pork panko crumb fried in lard, with garlicky greens. 20g Montezuma’s Absolute black buttons to follow.
@shelley262 I’ve also started the Zoe ferments study but 3rd week might be difficult, Like you I’m on hols then ( and forgot about it) IMG_3462.jpg

D: in a pub, a mixed grill, steak, chicken, gammon, sausage , egg. All small potions but nicely cooked. Swapped the chips for salad. Then fell down at dessert. Boys were having full versions so I opted for a mini brownie, but still too much for my bg as smothered in chocolate sauce.
Currently 10.6 and still rising
Why, oh why can't I say No, every time?
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Courgetti alla puttanesca made with anchovies, Kalamata olives, capers, canned tomatoes, garlic, olive oil, butter, basil and spiralised courgettes.
Steamed French beans smothered with butter.
Raspberries and Greek full fat yoghurt.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, parsley and salad onions, with a dollop of home-made aioli for dipping, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.

Apparently, that is the name Pfizer have registered for their new vaccine they've produced with BioNtec. You kind of got a Pfizer vaccine. It seems Moderna is going through multiple possible names, too. I'm going to have to think about this as I do react to Pfizer.
 
ISTR, my blood glucose readings rose slightly following some past COVID-19 vaccinations, but by no means all. The effect lasted 2-3 days.

I received this year's flu vaccination and COVID-19 booster a week apart. My blood glucose readings were not affected, nor my sleep patterns.
That said, we know of several friends who do not normally nap during the day, but returned home from this year's COVID-19 vaccination (Pfizer) and promptly nodded off for several hours.
 
Morning all.. My Covid jab caused really bad pains in my head for 3 days. I have always suffered from headaches so took it for granted. Better now. My son is here! He's staying for 4 weeks but not all the time with me. They bought a house over here and their daughter lives in it so I see her every week too. It's wonderful having family so near. We went for lunch yesterday and I had lamb shank with vegetables, roast potatoes and Rosemary and Mint gravy. My son and granddaughter had the roast potatoes and I enjoyed the rest. For tea, 3 crackers and egg mayo. 16g carbs total. BG was in the 6's this morning so a very satisfying time! Have a great day folks, I will! :joyful:
 
Breakfast: 2 of the frittery/muffins (they're very small).

Shan't use the remaining veg from yesterday (leek and swede) because my insides really didn't like their effect yesterday - no action but serous pain for an hour or so.

2nd meal will be rib-eye steak, if Neil can find any when he goes shopping this morning. He is taking me to get my legs rebandaged and will go shopping while I am with the nurse. That failing I'll have to use the pork mince I have and make meatballs or patties.

L: Salmon fillets baked with broccoli, mushrooms, double cream and lemon verbena.
Steamed runner beans smothered with butter.
Salad made with chicory, celery, green peppers, salad onions and mint, dressed with olive oil, garlic and a touch of lemon juice, topped with roasted macadamia nuts.
Water to drink.
Skipped pud.

D Seafood salad using crab, mussels, lettuce, baby plum tomatoes, sweet cicely, Romano peppers, Kalamata olives and Welsh onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted pistachios.
Water to swallow tablets.
I like your meal ideas and will use them for family meals next week
 
Hi All
So back to yesterday.
Brekkie was usual slice LC toast, cooled with good butter and copious tea.
Lunch was out with two friends with limited choices. Opted for small slice of sourdough toast topped with mushrooms and water to drink.
Supper was mini meatballs in chilli & tomato sauce h/m with cauli rice.
Today same brekkie.
Lunch was two slices of home baked Dr Almond country bread (0.02g/Slice) and two fingers cheddar. Don’t know if any of you have used Dr Almond bread mixes. They ship from Germany and weren’t available to UK customers for a few years after Brexit but seem to be available again at a high P&P cost so think will order 6 packs as dates are usually good.
Supper will be chunky cod fingers with tenderstem broccoli.
