What have you eaten today? (Low carb forum)

Monday 11 March - bed 6.4 FBG 6.1 - Hubby's team lost, so I didn't end up waiting through extra time & penalties. I never did have the Halo Top & strawberries either. @DJC3 - I should have recognised venison. I've cooked it often enough! @shelley262 - that's awful what happened to your son. I hope you're both fully rested by tomorrow.

Enjoying a gin & soda. I may have that scoop of Halo Top and a couple of strawberries later, since I didn't get to it yesterday.

I did get to Aqua today, I've had a good day with grandson, and my son passed his driving test this morning. He had a lesson at 6am and the test at 7.05am. At least the roads were quiet. I am no longer the one and only driver in the family.
 
Soup again, still leftover from my birthday party. This time it was the onion soup with grated cheese. There wasn't quite enough left for a full meal, so I added some of the tomato soup to the onion soup. Tasted fine, and it resulted in an interesting colour as well. :joyful:
The last of the tomato soup went to the dogs so everyone's happy.

Forgot to make a picture (and besides, it looked like a boring bowl of soup, no matter how tasty, you all know what soup looks like) so you'll get a picture of todays activity instead. :)

Neighbour-in-the-garden bought a fatbike some two months ago and told me to feel free to use it. So today I went for a trip, which was a lot of fun!

Stressful overnight as youngest son broke down on M 1 at about 9.30 pm yesterday on way back from taking his wife to Luton Airport for a work related trip. Car was smoking and burning smell! All very difficult and scary for him but thankfully Highways got him into a layby - 1hour 10mins from home. there followed a dreadful response from his breakdown provider despite having full package and a recently serviced car! Their lack of a timely response meant he eventually made it home at 5.15 am. I was doing a water only fast for bloods today so couldn't use my usual coffee go to to keep me going. He was on his own so I felt had to support him and offer advice so last night ended up with only two hours sleep before heading for my diabetic annual review. Still he's safe and car in garage getting checked out. Luckily they had left their dog with his wife's parents plan had been to pick him up about 10pm on way home.
My 9th annual diabetic bloods and foot check today was definitely different from my previous 8 annuals. She actually asked me about my remission and weight maintenance and asked me how I did it. Apart from a "when you say low carb you don't mean no carb do you?" She was encouraging and complimented me on how well I was doing.Although when she said you're obviously not a real diabetic though as you're not getting worse I did remind her my hba1c was at 97 when diagnosed 9 years ago. overall though I did pick up some change in attitude but still have the actual DN review in two weeks with my results and that is normally a statins sales pitch with just a focus on my ldl.
Water only until one o clock when back. I had treat of two large coffees and my hm kefir followed by two eggs scrambled and served on Ic toast
Mid pm LC coffee and walnut cake
Dinner left over beef with cauliflower cheese and small glass of red wine. Just had decaffeinated coffee and two of my mother's day chocs - hotel chocolate dark chocolate gingers.
Definitely an early night planned tonight.
What a nightmare for your son and you! Glad all is ok. Erm, "Not a real diabetic"!! Yet another point blank refusal to accept that type 2 doesn't always have to be progressive. I'm also expecting a statin push next month when I have my review, but I'm going to stand firm. Oh cauliflower cheese... that's on the menu for tomorrow!
 
Evening all, good day today. I had a glass of kefir and eggs and bacon with avocado and leafy salad again, a couple of walnuts, another glass of kefir then later pork steaks with cauliflower and buttered mashed swede and a little gravy.

Finally a handful of mixed nuts, almond, walnut, hazel, macadamia with four montezuma's 100% buttons.

Feeling just slightly hungry, but trying to keep eating in the evening to a minimum so will wait until tomorrow now!
 
At least I know what caused my phobias. As I mentioned a while ago, it was my granny. She would gather us all up any time there was a thunderstorm, then put us all in a very dark cupboard. It's no surprise that I'm phobic about thunderstorms, too. Granny would rush around unplugging anything electrical while we children were all contained in the dark cupboard. My late sister was even worse than me. She didn't shut herself in a cupboard as an adult but, any thunderstorm resulted in her shutting herself in any place where there were no windows (usually a hallway).

A much-loved neighbour, who hails from Scotland, locks herself in a cupboard at the first sign of a thunderstorm brewing. Is this a Scottish thing or simply coincidence?

Interestingly, a Siamese cat of ours responded to thunder and lightning by marshalling her 3 kittens under the stairs in our hall; that being the furthest point that they could retreat from the windows. Perhaps there's something primeval or instinctive going on.
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, avocado and three crevettes, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Courgetti alla carbonara made with chestnut mushrooms, eggs, double cream, Parmesan, nutmeg, butter and spiralised courgettes, topped with extra Parmesan and flat-leaf parsley.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad made with brown shrimps, mussels, shredded red cabbage, apple peel, celery and baby plum tomatoes with a dollop of aioli for dipping, topped with toasted pistachios.
Water to wash down tablets.

L-handful of almonds. Ham and mustard in L/C roll from Low Carb Food Co. @Rachox I think you’re right - these are definitely the most ‘bready’ of all the low carb bread I’ve tried. I’m going to cancel my SRSLY subscription. The pizza bases are great too aren’t they?

I get the rolls, sliced bread and pizza bases, I keep supplies in the freezer, they all freeze well with grease proof paper between the bread slices and pizza bases.
 
Late posting today, spent the last hour plus setting up a new to me iPad, my daughter has let me have hers which is four years younger than mine which was so so slow. So here I am on the ‘new’ one!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: carbonara made with LC pasta.

Couldn't get to sleep last night. Kept thinking of food, might have been hungry but also might have been the delicious aromas still wafting around from the meal son cooked. Our bedroom is above the kitchen!

B: 2 scrambled eggs cwc
Day out at a transport museum so very cold in all the big sheds.
L: vegetarian chilli. I swapped the rice for greens which was a good move as hubby left most of his rice aside was very watery. He had cake, of which I had a bite. A packet of chicken skins.

Mid afternoon 2, yes 2 dgf "novella blondies" part of sons pressie to me yesterday. Too good, couldn't just stop at one

6pm 2 chicken drumsticks

8:30 pm fish pie and veg at pub quiz. 2 glasses white wine.

10pm 2 cc chocolate pots.

Let's hope tomorrow isn't a hungry day!
 
Busy day getting back into “ normal life.”
Breakfast, scrambled egg and arugula on lc toast
Lunch, red and green cabbage , peppers cilantro with lime soy and sesame ginger dressing
Dinner, beef pot roast, sauté cabbage and cauliflower mash. Also added six kernels of sweet corn and a slice of carrot which I usually avoid.
Two sugar free candies which were part of a very thoughtful Christmas pressie. Sugar free but not really low carb so I’m having to tread warily with them.

Scant consolation I know, but if that breakdown had been you, on your own, I doubt you would have waited so long. I believe all the recovery operator have a commitment to prioritize women alone, or with children.
 
I still switch of my work computer and associated equipment in a thunderstorm as from experience a surge or direct strike can fry things connected to the electrics and switched on.

Yesterday scrambled egg, corned beef, mozarella and tomatos

Fell asleep at 7pm and woke at 6am
And that was that for the day!

Must have needed it, dentist today so skipping breakfast, I tend to anyway. But hungry for lunch already due to skipping dinner as was so tired.

My MIL was brought up in a Glasgow tenement and whenever there was a thurderstorm, her father would marshall all the kids and gather them around the kitchen window to watch the fun. Maybe they were just unusual.

Breakfast today was the chicken goujons I made yesterday.

2nd meal today will be something with bacon and eggs with maybe some tomatoes and onions.

We get a cuppa on and go upstairs and listen to the taran and watch the lightning together out of the big window when we can.

I reckon its a magical experience.

2 fried eggs on top of a bed of Emmental and salami for lunch for me, a spoon of hummus on the side as well for good measure. That was tasty.
 
Afternoon everyone! The tweaked nerves in my back and neck are much better today, it's been driving me almost to tears since I overdid it on the house clearing last week. It's annoying because it's stopped me doing the heavier/more strenuous things for the time being too. So hopefully I'm on the way to being able to pick up again now.

I'm going lower carb now with renewed resolve - today I had sausages, eggs and mushrooms without even thinking about bread - I usually twitch a bit particularly with the first meal of the day because in the past it would always have bread included. I think I've always been afraid I'll be hungry without carbs when of course the opposite is true (and I have proved that to myself before). I'm totally satisfied which is a miracle for me.

Tonight's meal will be chicken breast with cauliflower cheese and buttered mashed swede (bit addicted to that at the moment!)
