What have you eaten today? (Low carb forum)

Breakfast kefir then bacon and egg
Lunch cheese and LC seeded crackers followed by hm LC lemon drizzle
Dinner gammon steak with cheese rarebit topping served with green beans and mushrooms.
 
Usual brunch. Teatime half a small pork pie with English mustard. Dinner was steak with cauliflower and sprouts, and I've just finished my 4 squares of Monte's
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: cheese, tomato and mushroom omelette.

Dinner salmon served with more early English asparagus ( it's very tempting as it's delicious but very pricey!)

Seedy mug bread topped with cheese for breakfast.
Spent the morning making low carb granola. My daughter asked me to make her some as a birthday present! It’s a faff but is very nice and the recipe makes loads. I had some with yoghurt after my lunch of M&S seedy crackers with smoked salmon pate.
Dinner was M&S ‘3 ingredient’ burger with salad followed by raspberries and cream.

Your seedy mug bread sounds delicious do you have a recipe for that? I don’t have diabetes but my mum passed with it and other family members have it so I am trying my best to keep it at bay.
 
Brunch of small bowl raw nuts and 4 dry crackers. Teatime plain Greek yoghurt with sesame seeds pumpkin seeds, sunflower seeds and pine nuts. Dinner was roast beef with cauliflower and broccoli, 1 glass red wine, followed by 4 squares of M onte's.

Yes it’s this, can’t remember where I got it. Well done for being proactive about diabetes, I wish I’d done the same before I was diagnosed.

Ingredients
40g milled seeds or ground nuts ( or 13g coconut flour)
1 egg
2 tbsp yoghurt ( or 1 tbsp olive oil)
1/2 tsp baking powder
1/2 tsp ACV (or lemon juice)
Steps
Mix ingredients
Microwave 90secs

Nice airfried/grilled with cheese on top
(Ps ACV= apple cider vinegar)
 
Black coffee x3
Lunch- Welsh rarebit on L/c toast. Slice of h/m L/c ginger cake.
Dinner- Pollack fillet fried in olive oil and ghee. Steamed greens, airfried courgettes and red pepper. Raspberries and cream.
 
Breakfast: cocoa Surreal with coconut milk and strawberries washed down with a black coffee. (Had an early appt. so needed something quick.)
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: smoked salmon and scrambled eggs.

Hoping to make a double batch of low carb panda flour hot cross buns today - with plans to freeze some for over the Easter holidays.

Dinner slow cooked beef casserole served with sprouts followed by hm LC coffee and walnut cake

Usual brunch. Teatime 2 dry crackers. Dinner was vaguely peasant concoction of leftover beef, olives, green tomatoes, courgettes, aubergines and mushrooms, 1 glass red wine, 4 squares Monte's.
 
A late lunch at the family's. I had beef and chicken, with sprouts, mashed swede, carrots, peas, a couple of roasties, a stuffing ball and a Yorkshire pudding. Despite the carbs, the biosensor approved. Still full, so won't eat anything else today.
