Made low carb lasagne today - 4 portions so that 3 now in the freezer

Bolognese was slow cooked beef and pork mince (500g of each), with a tin of plum tomatoes, dash of red wine, tomato puree, some water to loosen and seasonings to taste -garlic, dried onion, mixed herbs and celery salt.
Made low carb pasta using Panda Golden flour - 125 g of golden panda flour, 4g of salt, mixed with 5 medium eggs and 30g of olive oil. Rolled out on panda floured mat into eight rectangular pasta sheets.
Lc sauce melted 80g of butter, added 20g of standard panda flour cooked till pale brown then slowly added a mix of 40g of cream with 260g of water. Heated until thickened. Then added grated vintage cheddar cheese to melt into the sauce
Assembled one layer of Bolognese sauce, one sheet of pasta, repeated then topped with cheese sauce and a sprinkle of extra grated cheese. Made four portions one popped in oven for dinner.

Breakfast kefir then mushrooms and poached egg
Lunch LC seeded crackers and cheese followed by hm LC coffee and walnut cake
Dinner oven baked LC lasagne and salad
