What have you eaten today? (Low carb forum)

It may have looked like bolognese, but lunch was a defrosted minced beef curry with taglietelle. Apparently, according to my Maltese neighbour, they eat curry with pasta. I took a picture, but it came out blurry. And dinner, if you can call it that, was a Cornish pasty with Brussels sprouts. Not ideal, but I have a cold and didn't feel like cooking.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: cheese, tomato and mushroom omelette (bit messy today!)

The omelette looks really tasty. May I ask what your coconut ‘porridge’ consists of please? Many thanks
 
Usual brunch. Teatime usual 2 dry crackers. Dinner was roast beef with cauliflower and sprouts, followed by usual 4 squares Monte's - might be same old same old, but very much enjoyed.

Dinner: Brie and cranberry on a low carb roll with coleslaw. Followed by half a hot cross bun with plenty of butter.

Yesterday
Kefir then poached egg with mushrooms
Lunch half a low carb roll with mackerel and salad leaves followed by hm LC hot cross bun.
Dinner salmon with asparagus followed by LC rhubarb and ginger cake.
Today the plan for my main meal is my usual Saturday night curry served with coriander leaves.
 
Black coffee then brunch of hm L/c hot cross bun with cheese, followed by a chocolate nutty cluster from a batch I made my Sil for Easter ( 100% cocoa chocolate melted with coconut oil and stirred into salted mixed nuts)
Dinner was Swedish style meatballs in gravy with broccoli, topped with parmesan. Then a L/c ginger cake.

Dinner: Brie and pistachios on a low carb roll with coleslaw, followed by half a hot cross bun with a generous spread of butter. Yesterday after similar dinner blood sugar peak out at 5.6, so thought I’d risk the half bun again!

Nutty clusters sound very tempting what ratio of coconut oil to 100% chocolate did you use? Mind you may be too tempting!

I had a whole buttered one on an empty stomach last night. A peak of 7.4 mmol/L, but back down in around two hours. But it was nice. And it is Easter...!

I used this recipe: peaceloveandlowcarb.com/keto-chocolate-nut-clusters/ But you’re right they are very more-ish. I wouldn’t have attempted them if I hadn’t been intending to give most of them away! M&S do salted mixed nuts

Breakfast kefir then scrambled eggs
Lunch last of my hm LC hot cross buns buttered and served with some cheddar cheese followed by two squares of 90% chocolate - an Easter treat
Dinner roast chicken dinner served with cauliflower cheese and a couple of chipolata sausages

Usual brunch and teatime dry crackers. Dinner was green salad - peppers spring onions, lettuce, cucumber, salad leaves, wild garlic leaves and flowers,various herbs from garden - and cheese omelette with chives. 4 squares Monte's
 
B- LC hot cross bun with cheese.
Mid afternoon dinner of slow roast shoulder of lamb ( in oven overnight!) purple sprouting broccoli with chilli, garlic and lemon. Mixed greens with bacon and cauli cheese.
Daughter made me a low carb chocolate cake ( a late birthday cake)!which we had for dessert with clotted cream. Another daughter bought me a Montezuma’s AB Easter egg so I’ve just had a nibble of that too.

Lunch was a lamb shank in red wine gravy, with carrots, Brussels sprouts, green beans, and my weekly potato fix. It was all lovely. And later, for a snack, I had a buttered hot cross bun. That was lovely too.
