What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: cheese, tomato and mushroom omelette.

Had my annual diabetes review bloods taken followed by a dentist's crown fitting appointment this morning so just water until lunch time! I have a full fasting lipids panel so only had water for 12+ hours.
Lunch quick two egg cheese omelette - soft so didn't affect my new ( very expensive) crown!
To recover from the morning decided to use some of my first rhubarb from a new rhubarb crown I planted over a year ago and bake a Panda Flour rhubarb, lemon and ginger traybake. Lemon was also an experiment as I had dehydrated some lemon slices to use a couple of lemons up. I used a grinder to grind them into a powder - very economical way to get a zingy intense lemon flavouring. Will be useful for several recipes.

Dinner kept it soft so didn't challenge my new crown! Last portion of hm LC lasagne (from freezer) reheated and served with salads. Followed by a piece of the new tray bake with spoon of cream.

Your traybake looks delicious! That’s an ingenious use of a leftover lemon, I must remember it.
Good luck with the blood test results by the way.
 
B- Fage 0% fat Greek yoghurt with a handful of berries and h/m orange&pecan granola.
L- Almonds, Gouda and wild venison salami.
D- A DietDoctor.com family favourite - Keto Asian Cabbage stir fry which is a lot tastier than it sounds. A chunk of my Montezuma’s AB Easter egg I’d actually forgotten I had!

Your dehydrated lemon powder piqued my interest. I’ll give that a try. So many interesting and useful ideas are found on this forum.

I used it on my sea bream today mixed with some dill -_added a more intense flavour than just using my normal lemon slices. I'd imagine it would be good on yoghurt too.
 
Breakfast kefir then mushrooms and poached egg.
Lunch hm LC bread topped with ham and mustard plus a few slices of tomato.
Made panda low carb chocolate muffins this afternoon - they were made with a Panda Flour muffin mix that arrived as a this month's freebie with my flour subscription. I made them into double chocolate muffins by adding 30g of chopped up 100% Montezuma's with orange oil.

Dinner sea bream with lemon and dill served with local asparagus and butter. Followed by half of one of the large muffins warmed and served with cream.

Usual brunch. Teatime half a small pork pie with English mustard. Dinner was cottage pie with a cheese and mash topping - so the 'flozin that needs carbs has been well catered for, my BG less so. Then 4 squares of Monte's.
 
B: few spoonfuls of cottage cheese to finish off the pot.
L- quite a large salad. Beef, egg, avocado, nuts - all sorts of things.
DGF peanut butter egg.
D- Pork tenderloin stuffed with cream cheese, sun-dried tomatoes, garlic and herbs, then wrapped in Parma ham. Cauli mash with roast garlic. All tasted great but looked a bit beige so photo of salad instead

Your pizza looks amazing today, it makes me hungry now and I need to go to bed, working the weekend.

I ate on the bridge, a bell pepper stuffed with tuna melt batter. I should have had runner beans with blue cheese on the side as well but I completely forgot I brought them to the bridge so that's for tomorrow.

I’d forgotten you sometimes use the tuna melt batter to stuff a pepper. Whenever you mention it I tell myself to try it. It’s a great idea!
