What have you eaten today? (Low carb forum)

Breakfast: Chocolate Surreal with strawberries and coconut milk washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: liver in onion gravy with brocolli, carrots and Brussels.

Coffee and unsweetened almond milk x 2
Cottage cheese and tomato
Apple strudel coffee tray bake
Pruscutto and a little coleslaw
 
B- avocado and smoked salmon on a slice of LC seedy bread toast.
L- m&S chorizo crisps and far too many nuts
D- Sea bream, asparagus, sprouting broccoli and mushrooms. Eating early as we’re off to see Jethro Tull tonight - our fave band from back in the day!

Breakfast a few tomatoes roast in olive oil served on LC toast topped with a poached egg
Lunch smoked trout salad with sprinkle of seeds and two seeded crackers followed by LC lemon and blueberry scone

This afternoon I roasted some peppers and a whole garlic then cooled and peeled and deseeded them chopping them and mixing with olive oil and some basil -_some to use for dinner and the rest chilled for salads this week.

Dinner chicken fajita using a hm LC panda wrap - although too much filling made to roll it up! Fajita mix was asparaus, spring onions, wild garlic leaves, some of the roasted pepper and garlic mix, rest of roast chicken, a few slices of chorizo and chilli flakes. Warmed wraps and spread with hm hummus before filling with the fully heated up fajita mix.

Followed by a few berries with a spoon of yoghurt.
@DJC3 hope you enjoy your Jethro Tull concert this evening.

Dinner: carbonara made with low carb pasta with a generous sprinkling of parmesan.

B - green apple and peanut butter
L - cheese covered pretzel, wafer thin chicken, plain crisps
D - porridge with blueberries and raspberries

Fatigued after a bad night last night which is not helpful in terms of food prep or cooking

Breakfast roasted a few small tomatoes in olive oil served on LC toast topped with poached egg
Lunch smoked trout salad followed by half of one of the six LC panda flour dairy free ginger spiced muffins I made this morning. It was lovely and sticky with a topping of syrup made with water, inulin, apple cider vinegar and grated fresh ginger.

Dinner sea bream served with local asparagus followed by a few berries and coconut cream.

That’s a great idea with the peppers. I often see bags of wonky mixed peppers very cheap so I shall be copying you.
 
Breakfast was 90second microwave seedy mug bread, sliced into 3 and toasted. 2 bits topped with m&S seedy nut butter, the other with butter and marmite.
Packed lunch- beef salad sandwich in LC bread. H/m LC rhubarb and ginger cake.
Dinner at home - pork chop, garlic mushrooms , sprouting broccoli and kimchi.

Dinner: chilli, salt and pepper pork belly slice with carrots, runner beans, apple sauce and gravy.

Breakfast keto granola with almond milk followed by LC toast with almond butter.
Made more LC dairy free muffins today - filling freezer for next few weeks. Made chocolate ones and also lemon and blueberry ones. I experimented with a lemon drizzle syrup which had inulin, acv, water and lemon juice plus dehydrated lemon powder and some fresh zest. Heated it and simmered it for 10 mins but it became very thick and turned into a LC lemon jam. Looks unusual on top of a muffin but tastes delicious very lemony.

Dinner pork served with local asparagus and a cooked in olive oil mix of the last of my hm roasted peppers and garlic and mushrooms.

Followed by half a LC chocolate and orange muffin.
Edit to add @DJC3 the roasted peppers and garlic are well worth doing as very versatile can be added to lots of things. I have a bag of wonky peppers on order as will be making a batch for next week.

B- 90 second mug bread again, this time toasted and topped with smoked salmon and scrambled egg.
L- a big salad with tuna, h/b egg, avocado and leaves dressed with olive oil.
D- strips of steak, red pepper and mushrooms marinated in shawarma spices and stir fried. With green salad and panda flour wrap.
I also made Panda flour chocolate muffins today @shelley262 and had half of one for pud. Your lemon ones look great.

Usual brunch and teatime 2 dry crackers. Dinner was steak with cauliflower, broccoli and 1 glass of red wine. Not a very nice wine, but I'll be strong and finish the bottle at one glass a night. 4 squares Monte's that always hit the spot.
