What have you eaten today? (Low carb forum)

Breakfast keto granola with almond milk followed by a slice of LC toast spread with almond butter.
Lunch hm LC brioche roll with ham, followed by a few squares of 90% chocolate.
Dinner same as yesterday cold roast chicken with range of salads and home grown salad leaves. Followed by a few strawberries and yoghurt.
 
Coffee and unsweetened almond milk x 2
Coffee apple strudle x 1 small tray bake
Cottage cheese
Smoked salmon
Cheese
 
Breakfast: Chocolate Surreal with strawberries and coconut milk washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: strawberry and halloumi salad with lemon and balsamic dressing (again!)

Hotel breakfast - first course from the cold buffet was some smoked salmon, then ordered poached eggs, bacon and mushrooms. Lots of coffee.
Didn’t need lunch
Dinner in the hotel: 1 glass local sparkling wine. No real low carb starters available so had the appetisers of roast almonds and nocellara olives. Ribeye steak and green veg to follow.

I've had a second harvest of rhubarb so poached a few sticks in water, lemon and ginger for an hour or so in my slow cooker. Used some of the poached rhubarb to make LC flapjacks substituting Apple with rhubarb (160 g) in the Panda Pantry recipe for Applejacks.

Lunch salad mainly from the garden and a few nuts followed by spoon of hm hummus, celery, radish and one small tomato. Enjoyed some of the poaching liquid from the rhubarb to drink and also had some rhubarb and yoghurt.

Dinner steak with local asparagus and mushrooms. I put asparagus in lemon juice and olive oil before cooking and then griddled them - delicious - I will miss asparagus when goes out of season soon. Just had coffee and a LC rhubarb flapjack. I may well make more in a day or so as have some poached rhubarb left.
 
Lovely hotel breakfast again- smoked salmon to start then cooked meal of 2 poached eggs, mushroom, bacon and avocado. Lots of black coffee.
No lunch but hungry late afternoon so ate some nuts.
Dinner back home was a venison casserole I found in the freezer. Served with steamed cauli and cauli leaves. Slice of LC coconut and lime cake.
 
7 raspberries, 8 alpine strawberries, usual brunch, teatime 2 small slices pork pie with English mustard. Dinner was roast chicken with cauliflower, broccoli and 1 enormous runner bean, followed by 4 squares of Monte's.

Lunch small salad with leaves from my garden plus nuts and spoon of hm hummus with radishes and celery followed by a few berries and yoghurt.
Made four portions of lasagne (each for the two of us) using Golden Panda Flour to make low carb pasta. It's very well behaved pasta so easy to roll out. It also happens to taste wonderful too - below photo of tonight's portion as came out of oven - other three now in freezer

Dinner my half of the large lasagne served with more salad from the garden. Pudding was some of the leftover poached rhubarb topped with a LC rhubarb flapjack heated and served with cream.

B- mug bread toasted and topped with a fried egg.
L- Smoked salmon pate and seedy crackers.

The Alpine strawberries and the raspberries are really going away just now! I have had 12 strawberries and 8 rasps. today. Luckily my BG copes. Usual brunch. Teatime 2 small slices pork pie with English mustard. Dinner was steak with broccoli, mange tout, French beans and cauliflower. Just finished my 4 squares of Monte's.

Dinner: bolognese with sliced sautéed courgettes, grated seriously cheddar and a few spots of sugar free ketchup.

Busy baking morning using Panda Flour and recipes to make more brioche rolls, golden seeded protein loaf and six scones using dehydrated blueberries as pretend raisins.

Lunch a nutty salad, some hm hummus and radish. Followed by one of the delicious scones served with clotted cream and a couple of strawberries.

Lunchtime medical appointment today, so beforehand had 25mg Greek yoghurt with 1 level tablespoon each of pumpkin seeds and sunflower seeds, plus 1 teaspoon sesame seeds and 7 raspberries. Upon return another 25mg yoghurt with same amount of seeds, 1 kiwi fruit and a small bowl of nuts - 1 level tablespoon each of brazils, hazelnuts, almonds, walnuts and pecans. It's very hard to arrange food with lunchtime appointments, and I thought I might faint if I went without food until 3pm. Same timing for next appointment in a fortnight, don't know what I shall do.
Dinner was cottage pie with cheesy topping, with broccoli, mange tout, French beans, 1 huge runner bean and some cauliflower. Just finished my usual 4 squares of Monte's. Could have had a glass of wine, but decided against it as I have a blood test tomorrow - not for diabetes, but to check calcium and vit.D levels prior to osteoporosis infusion in a couple of weeks.
 
Probably too much food today but BG has behaved so I’m not bothered. Ive been playing in a croquet match all day - they always seem to start with bacon butties for breakfast. I took my own LC roll.
Everyone brings a packed lunch - I bought a panda wrap filled with smoked salmon&cream cheese.
Croquet tea at the end of games looked lovely but Id bought another LC wrap filled with ham salad.
More bacon at home for dinner - chopped on a salad of steamed broccoli, avocado and pine nuts

Breakfast keto granola followed by scrambled eggs on LC toast
Lunch garden leaves salad with some nuts, a spoon of a delicious beetroot based sauerkraut ( I'm trying a few new small producers of fermented food who deliver so that I can have variety as making my own seems to produce too much of the same thing!) A LC scone with clotted cream and two strawberries.
With weather hotting up I thought I'd experiment with iced lollipops. Used this recipe:
I'd bought four moulds but didn't think through quantities ( I should have made half the recipe!) So I also had to make some tubs using small containers I had to pour the rest of the mix in.all lidded and popped into freezer.

Dinner Sea Bream and local asparagus followed by one of the ice cream 'tubs' OH also tried one and we both thought they were delicious.I decided not to coat with the extra chocolate decoration the recipe recommended. Organic coconut milk produces a very creamy ice cream.
