What have you eaten today? (Low carb forum)

Breakfast kefir and low carb granola then a slice of LC toast with almond butter.
Lunch hummus, radishes, celery and a few nuts followed by a few berries with yoghurt.
I've got a tomato glut - plus when out this morning I found the M and S three ingredients meatballs ( beef, salt and pepper) on yellow sticker half price so decision made about dinner. Slow cooked a hm tomato and garlic sauce and added the meatballs which I'd air fried. Bought two packs of meatballs so portion in sauce in the freezer. Served with low carb pasta, fresh basil and grated cheese.

Today I had breakfast of KC granola and organic almond milk.
Packed lunch of a tuna melt muffin and ham salad sandwich in h/m LC bread. ( sorry about the bite already taken out of it)

Dinner was hogget chop, steamed broccoli and ginger&tumeric sauerkraut.
I have a slice of LC lime and coconut cake defrosting next to me for pudding in a few minutes.
 
Breakfast: Chocolate Surreal with strawberries and coconut milk washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: steak and kidney pie (19g carbs for this size portion) with cauliflower, broccoli and carrots.

B- soft boiled eggs with microwaved Gouda crackers for ‘soldiers’
L- packed lunch of LC cheese sandwich and a slice of lime and coconut cake.
D- Cow fillet steak ( from an older animal - still grass fed the meat is a bit more flavourful and firmer, absolutely delicious) salad. Montezuma’s with orange.

Breakfast portion of the M and S no grain granola with kefir - reasonably low carb at 2.3g carb per 45 g portion.

Lunch half a LC cheese protein roll with salad followed by a LC pumpkin spiced muffin - made this morning (as well as a LC quiche for a picnic planned in a few days.)

Dinner chicken with mushroom sauce served with broccoli. A few berries with yoghurt.

Dinner: lkea meatballs (from Tesco) with Swedish cream sauce (recipe from Ikea website), peas and cranberry.

Breakfast kefir then a few roasted tomatoes on LC toast topped with a poached egg.
Lunch a few seeded LC crackers with cheese followed by LC coffee and walnut cake.
Dinner steak, garden beans, mushrooms and onion followed by a few garden berries and cream.
Picnic planned for a day out to the seaside tomorrow but weather forecast not very encouraging!

My post just disappeared, doh!
Anyway didn’t have breakfast, lunch was lettuce boats filled with leftover beef short rib meat, avocado, red pepper, ginger&turmeric sauerkraut. Stewed rhubarb and Greek yoghurt to follow.
Dinner was kobi keema and a small apple from my neighbours garden. Doesn’t seem to have caused too much havoc with BG thank goodness. I love apples and miss them a lot.

Dinner: cheese and mushroom omelette, then high carb confession :banghead: , blackberry and apple crumble which hubby cooked with a generous helping of double cream.
Blood sugar back down to pre meal level within two hours so got away with that one!

Lunch cheese and low carb seeded crackers followed by a few garden berries and spoon of yoghurt
Dinner HM LC quiche served with salad followed by LC chocolate muffin.
 
Toasted 90 second mug bread topped with M&S Super Seedy nut butter for breakfast.
Packed lunch again - cheese&marmite low carb roll and a packet of sugar free chocolate covered freeze dried raspberries my daughter found in a health food shop. Didn’t like the chocolate much, tasted like cooking chocolate but less than 3G carb for the whole 50g pack. They ended up being quite moreish.

Chicken and mushroom bake with salad for dinner and a LC raspberry Bakewell for pud.

Dinner: strawberry and halloumi salad with lemon and balsamic dressing. This has become a firm favourite for Friday night dinner this summer.

Breakfast: 2 boiled eggs with salt and pepper plus Greek yogurt no sugar, almonds, walnuts, sunflower seeds, pumpkin seeds, chia seeds, ground flaxseeds, Ceylon cinnamon and sugar-free maple syrup
Lunch: 1.2 carb wrap with sautéed chicken, salad mix and mayonnaise
Dinner: shallow fried basa fillets in olive oil, herbs and spices, mixed low carb vegetables
Snacks: seaweed, Aldi Moser Roth individual 90% chocolate bar
Drinks: lots of water, peppermint tea, green tea and chamomile tea before bed
This diet has put my diabetes into remission and allowed me to lose about 600 grams per week. I’ve now lost 11 kg

Very well done on all counts! Your food sounds delicious. Welcome to this thread, quite a few of us here are also in remission through a low carb diet so you are in good company.
