Here's what my lovely wife made this week. OK not very low sugar or carbs but probably better than most shop bought ones. They certainly tested very much better!
Shells made with puff pastry but no 'lids' on the pies (that's cut carbs by at least 50% !

Filling - chopped dates, raisins, sultanas, apple, apricot. Teaspoon of mixed spice and juice of a tangerine. Two desert spoons of Stevia. (I added a splash of sherry, and it does add a certain
je ne sais quoi 
)
The scent of them cooking was just fantastic as it percolated the house. I scoffed one just after it came out of the oven and another when they'd cooled, just to make sure they still tasted as good. And it did.
They may have pushed up my BG for a while, but a few hours later after dinner my BG wasn't showing a particularly elevated reading.
I think the moral here is - enjoy your mince pies but make small ones and limit yourself to just one or two and enjoy Christmas.
