Type 2s: What have you eaten today?

Berries with fat free yogurt and peppermint tea for breakfast

Mid meal sugar free dilute in a pint glass

Lunch was a tuna salad sandwich on wholemeal with a mug of homemade tomato soup

Tea was sweet chilli chicken with salad of lettuce, grated carrot,cabbage, cucumber, cherry tomatoes

Snack Aldi spicy chilli lentil chips with a cuppa tea from my advent calendar lol
 
30g branflakes with handful berries and semi skimmed milk and mint tea from my advent calendar for breakfast

Mid day sugar free dilute in a pint glass

Lunch was a cabbage, cucumber,lettuce, cherry tomatoes,pepper,radish ,beetroot salad with wafer ham and wafer chicken and a peppermint tea with a glass of dilute

Tea was beef stir fry with wholemeal noodles (50g) with water and peppermint tea

Hope it sounds ok
 
These all make me feel terribly guilty. I started well with Greek yoghurt, mixed berries and home made granola baked with coconut flakes, sunflower and pumpkin seeds, walnuts, linseed mixed with coconut oil, ginger and cinnamon. Four hours sleep last night then put paid to will power and I had a mincemeat tart with my coffee! 8.4 before lunch so two slices of back bacon and scrambled egg.

Bkfst. - cottage cheese, banana, pear. 2 cups of green tea.
Lunch - lasagne, green salad, glass of red wine.
Snack - cup of green tea, choc. biscuit.
Tea time - Pita bread, cheese, cooked ham, raw garlic, raw green chili.
2 small slabs of 80% dark choc.
Blood/Glucose reading 1 & half hrs. after food - 5.4.
 
2 slices low carb bread with peanut butter and banana ( brunch).
Dinner was chicken with oven chips beans and sweetcorn.
Evening snack was 6 cheese thins with cheese and sugar free spicy chutney.

so far so good.

then I had 12 x milk tray chocolates .

FBS was 14 this morning ‍
I like the sound of the sugar free chutney. Was it homemade or shop bought? Thx
 
I had a most amazingly colourful lunch today. It was all left overs from the last couple of days (I am feeding 2 families with lots of different dietary requirements). The pink slaw is easy to make: red cabbage, white cabbage, Greek yoghurt and a splash of white wine vinegar (a Tom Kerridge recipe).
My dear friend (who I lost last year) told me of the benefits of eating the colours of the rainbow. I know she'd have been impressed. IMG_20201229_142635.jpg

I have had porridge with apple and cinnamon and a lovely cup of tea.
 
Today, for the first time since being diagnosed and sticking to the high fat, low carb diet and having given up booze (temporarily) 9 days ago, I fell off the wagon and ate home-made burger in a big brown bun, sweet potato fries, ketchup, mayo, the works. I was 5.8 before it, which is low for me, usually about 8. Two hours after eating I was 10.1, felt a bit dizzy, eyes blurry. I knew I shouldn't eat it but I did. I suppose these mistakes are what I will learn from. I won't be doing that again.
 
Some fab recipes on this thread and my food today has been:

B - 2 poached eggs, some spinach, Greek yogurt and some almonds

L - Tomato and basil soup, 2 sesame oatcakes and a teeny bit of Brie

D - will be chicken breast and roasted tomatoes with peppers, onions. Glass of Merlot

All cooked by the other half - left to me it would be a Fawlty Towers experience with starvation likely :)
 
B - 2 x low GI wholegrain toast, one with peanut butter, one with Promite, and tea with xylitol and soy milk

L - 2 x small kipfler potatoes made into a bake with vegan cheese sauce, corn on the cob

D - Ramen with low carb edamame noodles, sesame tofu and veg
 
B - 2 poached eggs, ½ avocado, 3 oatcakes and a black decaf coffee

L- 4 bits of cold chicken, red pepper chopped and some cucumber. Fizzy water

Snack at 3pm - 2 teaspoons of M and S organic peanut butter and ½ apple

D will be:

Roasted salmon, med veg and salad followed by cheese and the other ½ apple. Glass of dry red. Lavender tea to finish

Did an hour on the static bike too.

Similar diet yesterday saw me go to bed at 6.0 on the meter, 2.75 hours after finishing dinner...
 
I made a great salad for lunch. Consisting of romaine, sliced red pepper, sliced Granny Smith apple, fresh parsley, a few mixed olives, cherry tomatoes, avocado and lemon juice and black pepper. It was really satisfying.
 
On the road early with a 570km round trip yesterday. Working on LCHF

4 x Coffees (with dash of Skim Milk and Equals (Aspartame)
Breakfast - 2 tablespoons of Coconut Oil (MCT 100% pure)
Almonds (5)
Morning Tea - 1/2 small packet of peanuts
Lunch Angus Rump Steak (200g and Salad (no dressing or sauce)
Afternoon Snack - Almonds (5), 1/2 pack of peanuts, Milk Coffee (skim milk and Equals)
Dinner Beef Burger (Meat only)

1325 Cal, 34g Carbs (bit high)
 
Mixture of 10g each of four cereal with 50-60ml Almond Milk with a shake of sweetener, a latte with 80ml of UHT Milk. All the cereal are low sugar - 202 calories
 
Baby Carnivore here, so far today I've eaten 2 Scrambled duck eggs, 6 rashers of streaky bacon fried in butter and 4 99% pork sausages. I'm stuffed and lost 9lbs in my first week of eating like this.
