I bought some a while back for a cheesecake recipe and it worked brilliantly as it was a powder and not granulated, so mixed into the cream cheese beautifullyInulin - how/what do people use it for? Having had to come into city centre to sort out my late mums finances I came across a wholefood shop so I stocked up on desiccated and toasted coconut and nuts - and also bought a small bag of inulin. Now, what do I do with it

View attachment 30712 I’ve just baked my (low carb) contribution to go with coffee at PPG meeting later today. I made too much icing, do you more experienced low carb bakers think it’ll keep ok in the freezer. Ingredients are high % chocolate, double cream, unsalted butter, cocoa powder and vanilla Stevia drops, I made it up from a combination of recipes and ingredients I had in the cupboard!

Did you make the frosting by melting all the ingredients together? If you did, I reckon it would freeze...I've frozen ganache before and this is very similar. If it goes a bit weird when you thaw it, you can probably save it by warming it through and possibly adding a tad more cream.

Evening folks. Not much to report, worked from home and it's freezing!
Breakfast: Choc orange chia pudding (again). Coffee with cream.
Lunch: Cold chipolatas, a little cambozola cheese, prosciutto, avocado, cucumber, cherry toms, small portion of homemade coleslaw, a few salted almonds
Dinner: A tweaked version of Headbanger Kitchen's Keto Butter Chicken with cauliflower 'pilau' rice. The curry was amazing and pretty easy. I reckon the recipe would convert well to a slow cooker version (or possibly IP? I don't have one......yet!).

Thanks, I'll give it a go!This Butter Chicken is absolutely delicious. OK, it is originally an IP recipe, but I'm positive it culd be done in a slow cooker or oven. The leftover sauce is excellent for "lifting"leftovers. Our leftover turkey was helped on it's way by this recipe.

@Tori71 ooo where are you going? Easy snax are great; my bro is a pilot and has a hard time keeping to his own needs while airporting and hoteling. Anything that would pack well for a 3-4 day away trip and not take too much space...

@maglil55 oddly I found some better cream today in a local natural foods store. Different dairy, only ingredient “cream”. My creamery heavy cream has milk of unspecified fatness in it. So I really like this even thicker stuff but cannot go around putting out $6+ bottle deposit on a pint of cream on a regular basisand I have always whipped cream with an old style hand operAted egg beater, cos my mommy taught me that was the best way not to overbeat it! Also it kept us out of her hair.....

Visited Mom, she read Thomas Merton to me while I did some sewing. Then we sang Row row row your boat, keeping time by rowing a Theraband between us. The silly things we amuse ourselves with, I swear. Dementia does not always (or yet anyway) take your loved one away. She is most definitely there! Next changing out all 4 litterboxes (40 lbs litter out, 40 more in, that’s my weight lifting for the day lol) and a walk before it rains.
Supper to be: greens, ? veg, my bread, and a protein but haven’t really made up my mind how they all go together. Had sardines yesterday. Maybe swiss cheese. Maybe nuked egg whites. Or hey, both!
I had an interesting food moment a bit ago- had just gotten home from Mom’s, wanted a snack. Had that super pint of heavvvvy cream, maybe a square of chocolate? A nibble, a melt, naahhhh that doesn’t actually taste good right now. I must REALLY have OD’d on it yesterday! What astounded me was watching myself Put Chocolate Back In Wrapper BY CHOICE and No Regrets!!!! 6 months ago I would no more have done that than I would have smoked a cigarette! I would have kept munching, hoping for that elusive goodness I wanted. Wow. Changes in the brain!
