What have you eaten today? (Low carb forum)

Have you looked up recipes for "Egg Bites"? They're just individual portions of eggy deliciousness. Some folks do them in a muffin tray, ramekins or even mini kilner jars, the latter for ease of transport to work, picnic, or whatever).

Something like these, although these are titled Egg Muffins?

I’ll most definitely be giving some a try. I’ve never been a fan of egg - I’ve always loved the delicious runny yolk but massively struggled with quiche for example. But I am aware my tastes are changing since going low carb - even my berries with cream this afternoon felt that sweet I only hate half. So I’m glad I tried the casserole as I loved the egg and am now willing to try more egg based dishes

Thing about those little muffins/bites is you can pretty much chuck anything in - posh them up with smoked salmon, or cheap and cheerful with the odd leftover mushroom or little bit of grated cheese.

These are very similar, I cook them in muffin tins and eat two hot with veggies for a dinner and save one to eat cold with a salad for lunch the following day. Equally nice hot or cold. I must try some different flavours :hungry:

I am going to town with my new Copy Me That!
Today was again BGs all over the map. Grrrr. Messed with my pretty estimated HbA1c.
Bfast 1/2 avocado, egg, coffee/cream/soy, can’t remember but maybe some cream or butter.
Lunch was comfort food feed the face feeling bad day meal. Celery, mushroom slices, 2 oz nice yummy chèvre that was my impulse purchase while grocery shopping, and then: almond butter/butter bread without the bread. Lots of it. I learned this combo with peanut butter at my mother’s knee and it feels good.
Supper broccoli, creamy celeriac soupy stuff with parmeggiano, swiss cheese, about 5 small nut pieces, and 3 tbsp coconut flakes with some cream.
Some fatty lc thing for snack soon.
Tomorrow is another day. Will help a friend whose too-young mother was suddenly admitted to hospice yesterday afternoon. We will play a hilarious flute duet for her, laugh like hyenas, and the mom, who is non-responsive, will hear and love!

This last paragraph brought a lump to my throat, what a lovely thing to do.

Sympathies over erratic bgs - mine were the same a couple of days ago but intermittent fasting seems to be helping to calm the situation, although I think that might be difficult for you. I remember you saying you had a strict timetable for your meds+ food.

Tuna melts do indeed look wonderful @Rachox i have a feeling my meals this week are going to be various combinations of these eggy delights
Thought I should be honest and finish my yesterday meal plan after my early post and mini tantrum of wanting to just enjoy a night - my I want to drink gin and dance the night away ended up being just 4 gins and less dancing than anticipated as the room was doing enough spinning in its own - I’d clearly be ‘cheap date’ now as can no longer handle my drink although the low BG readings it brought may have contributed to that too. Dinner of course ended up being a takeaway - chicken madras and some garlic mutton and about a quarter of my husbands naan - deadly stuff I know, but ended up justifying to myself that maybe I needed the carbs to counteract the gin :angelic: guilt of course set in an hour later so tested my bloods 1hr, 2hr, 3hr, and even set an alarm for middle of the night to see what it was doing. I definitely got away with it, but next time I decide I need gin in my life I’m going to make sure I’ve cooked dinner first!

OMAD again today but I'm adding in a portion of veg as having had veg with dinner yesterday I've realised how much I miss it. So,

Breakfast and lunch: black decaff coffee

Dinner: slow roasted lamb shank with roasted sprouts and a vanilla chia pudding for dessert.

Why can you not use sour cream? Is it that you’ll waste the rest of the pot? I often use the rest to top a fat head pizza in place of tomato sauce.
 
@DJC3 yeah, the best I can do is about 11 hours, but usually shorter. I still have this sneaking suspicion that hydration plays a big part.
@Emma_369 hoo boy there has never been a time when I could have handled 4 of any hard spirits! My cheap date-ness comes from despising lobster and not caring one way or the other about champagne
@Chook regular cream ought to work: I bet the recipe uses sour cream simply for that flavor.

When you put it like that then yes I’ve always been a cheap date as not a lobster or champagne person either. I was always a pint of lager girl - my closest friends were lads so some of my 20’s were spent being ‘taught how to handle my drink’ - not exactly a neccassary life skill but lots of fun times had :happy:

Nooo. I love lobster. Thing is I tend to make it myself and only occasionally have it in a restaurant. Prefer prosecco to champagne though.
