What have you eaten today? (Low carb forum)

Yesterday:

B: coffeencream
L: prawn cocktail with half a slice of brown bread - but it is OK, i smothered it in butter, to kill the carbs ;) - then steak and salad, and a few chips with mushrooms, 3 tiddly onion rings and a grilled tom. Then we shared a portion of profiteroles. These are my dream dessert. I am incapable of resisting. But these (all 2.5 of them) were a sad disappointment, and really not worth the carbs.
D: not necessary. But i did force down 2 squares of good choc at 8pm, to exorcise the pathetic memory of the profiteroles.

Today:

B: home cured (by me, at home) bacon and 2 fried eggs.
L: Lidl roll with St Agur cheese
D: will be slow cooked, pulled belly pork in jerk or gumbo spices, havent yet finished it off. with mediterranean veg.
 
B - 2 soft-boiled eggs
Snack - mug of bouillon with nutritional yeast flakes
Snack - Itsu seaweed thins 0.6g carbs IIRC
Dinner will be grilled organic Welsh lamb chops, plus steamed leeks and green beans with butter and caulimash made with creme fraiche and yet more butter :D

The organic lamb chops were just yummy !

11.15am. pork chop, 100gr creamy broccoli, coffee n cream

4.05pm. cheese with peri peri mayo, coffee n cream

9pm. chicken nibbles, 200gr creamy broccoli, cup pepsi max

I did.
But i don't think it was a fair test, really.
Followed recipe, but the butcher (presumably thinking he was doing me a favour) sliced the belly pork into inch thick slices out the back, before bringing it to me already bagged up. :(
So i ended up curing slices, not a slab.
And i think they over-cured.

It is too salt, and rather too junipery.

I think i need to soak this batch before use, just to get rid of the extra cure.

Will try again, with a proper slab.

I was astonished at how easy it was! So i am hoping it works properly next time!

D: chicken breast stuffed with goats cheese and wrapped in bacon with a few sweet potato chips and kale; chocolate crumble

You can adjust the flavourings to suit your preferences. My husband likes it with maple syrup. I like it with fennel and cumin. I like it with juniper but, as you said, it can be a bit too junipery.
 
Breakfast: Streaky bacon, 2 slices, one grilled tomatoe, 2 sausages (no wheat 97% meat), 1 poached egg. Tea with splash of full fat milk. Lunch: piece of cheese and couple of olives. Supper: duck leg with cabbage cooked in bacon fat and butter with half tsp 5 spice before serving. Small slice home made banting bread with butter (about 7 g carbs). Stuffed. Made my savory Keto rolls (freeze) for the next 2 weeks and banana bread (11g carbs per slice). Keep in fridge and lasts a week. Tomorrow's menu. 2 boiled eggs for breakfast and cup of tea. 2 thin slices of banting bread with smoked salmon and cream cheese for lunch with couple of Sicilian olives. Have a few macadamia nuts on hand if peckish. Supper my own home made from scratch king prawn red thai curry with cauliflower rice. Generally drinking 2 liters of water per day. Working for me. High fats keeping me full!

Salmon, Eggs & Green beans in coconut oil & topped off with butter.

Been doing this for a week. Good results.
Lowest pre-meal BG is 3.4 (no hypo symptoms) & highest ketone levels attained is 4. Lost 9 lbs in the last two weeks.
Really hope i can keep this up. tons of weight still to lose.

L: Couple of slices Roast Chicken with Coleslaw and salad leaves
D: Large Rump Steak, Roasted Veggies
P: Stilton with Flaxseed Crackers & Red Wine
 
B - Eggs and mushrooms fried in ghee
L - Mixed salad - Extra Mature Cheddar, basil, parsley, sorrel, radicchio, red onion, carrot, Brussels sprouts, Romano pepper, yellow bell pepper, cherry tomatoes, cucumber with home-made dressing of tahini, crunchy peanut butter, olive oil, avocado oil, lemon juice, coconut amino garlic sauce, freshly ground black pepper, vigorously whisked.
D - Kippers with butter

Evian 500ml x 3 Earl Grey tea w/soya x4 organic kefir 250ml x1

B: English breakfast muffin, smoked salmon, fried eggs, sautéed mushrooms
L: salmon filet with butter, dill, lemon and shrimp sauce, roast cauliflower, green beans with almonds; plum and almond cake with proper homemade custard (was dad's birthday so family round for lunch!)
D: nothing - still stuffed from lunch! May manage a coffee and square of chocolate with the Strictly results later :)

B. White coffee with sweetener.
L. Glass of Keffir (found some in Polish shop).
T. Green tea with strawberry & raspberry infusion. One No sugar Ginger biscuit.
S. Wholemeal fusilli pasta with pea & bean pesto, and sweet potato & leek cheesy bake. Royal Gala apple. Two squares of 73% orange & geranium dark chocolate.
S. Two babybels and a hot pepperami.

One or two 187ml bottles of Australian Merlot.
 
B: bacon and egg n coffeencream
L: watercress and smoked cheese Green Soup.
D: repeat of last night's jerk pulled pork with peppers, courgettes and aubergine. This was, in retrospect, a miscalculation. I used Tescos Jerk seasoning jar of paste. Followed quantities. Erred on the side of caution. Noticed that it was 1.5% ghost chilli thinking 'aha, always wondered what they tasted like'.

Well, now i know.
I also know that we won't be having it again, unless i reduce the spice load A LOT.

After tasting it in the kitchen i knew it was a scorcher. But even adding cream and cheese on top, barely touched it. The ghost chili afterburn is... um...interesting.

We ended up having a break half way through and bringing out the kefir (using it like lassi) in order to make it through.

Today's secondary afterburn has been interesting too.

The odd thing is that i am SURE we have had this jerk paste before - with no such trauma. Maybe the makers were playing a scampish jape with this particular jar.

B. Porridge, dried cranberries, double cream Truvia.

S. 3 slices chorizo, scrap of blue cheese & less than 1/4 slice BURGEN.

L. Tinned sardines, salad & less than 1/4 slice BURGEN.

D. Slow cooker cooked 1 chicken thigh with veges & dried stew mix of pearl barley, lentils, split peas etc & carrots. Jelly & cream for dessert.

S. 1/2 sl BURGEN, peanut butter, cup of tea

D. Grilled gammon steak, broccoli in cheese sauce, 1 hash brown
