What have you eaten today? (Low carb forum)

What do you think, would glueing crushed pork scratchings to my halloumi with a beaten egg before frying work?

Just make a bit less than I did, this was twice as much as I needed. Good thing the dogs (4 of them at the moment) approved as well and I saved two bits to to see if they're good when cold or reheated :)

It will probably work even better if you crush the pork scratchings in a food processor or such, which will make smaller pieces than rolling them between baking sheets with a bottle of booze. I added chilli and black pepper to the beaten egg and made a dipping sauce of smokey sriracha and mayonnaise. (I'm Dutch so I can't imagine eating something resembling fries without a mayonnaise based sauce :D.)

developments here: still full of curry :D but just had one of these biscuits - bought for Mr B if he ever needs a late-for-work-no-time-for-brekkie breakfast. 10g GF carbs With lots of peanutty goodness.

@Chook remember, my muttlets are just 5 and 6.5kg. Totally different from your giants. Sitting around soaked to the skin for hours => hypothermia (especially in our under heated house). Though rather than get the hairdryer out (I never have time before getting back to work) I usually towel dry then pull their beds in front of the radiator and shut the door. Brushing the dry mud out works well. V bouffant effect.
 
B. Nothing (several cups of mint tea)
L. 1 large chicken thigh, 30g pate and a green salad with mayo. Tried a coconut chia pudding made the day before.Just chia seeds and coconut milk. Not impressed. Added 10g grated 90% chocolate a bit better. Added more choc to the remainder and put back in the fridge.
D. Falafel burger, 30g brie, cabbage (bit of an odd mix because the bakery van did its rounds today so rest of family fed from that). Then tried the chocolate chia pudding, a bit better than lunch, better still when topped with double cream but might not try again. Would prefer the cream and chocolate without the chia and coconut milk.

What else can I used milled chia seeds for?
Did have 2 bites of hubby's cinnamon roll. but stayed in the 2 post prandial point rise (just)
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and Birthday cake phd bar
Late Lunch: One packet of wildings duck crackling followed by Greek yoghurt, orange chia pudding and vanilla and raspberry LC granola.
Dinner: Chicken chasseur and roasted Mediterranean veggies followed by SF jelly, cream and LC chocolate granola.
 
Breakfast two boiled eggs with half slice toasted LC bread
Lunch lc seeded crackers with cheese and celery followed by few squares of100% montezumas with almonds
Dinner Corriander and ginger chicken with salads and glass of dry white wine followed by lc raspberry mousse and one strawberry with extra thick cream.
 
Just had word that my 77 year old brother, who has been shielded since the end of March, has tested positive to the coronavirus. He has had no symptoms but was part of an NHS/Oxford University trial which didn't discover it in the previous 2 tests, but did this week when he and his wife have both been isolated for 8 weeks, with the only contact with the outside world being grocery deliveries and the nurse representing the trial. They always wash and disinfect everything that comes through the door before putting it away, and if it can't be washed they put it in the garage for a week. They also wash hands, wear rubber gloves and take every precaution they can think of. It's very odd. With any luck, neither of them will have any symptoms and it will pass in a week or so. Can't imagine where it has come from. It's a very devious virus, isn't it?

I had some of my pork and mushroom fricasee, but it's very rich and I've put 2 dishes of it in the freezer for some future use. A couple of serving spoonfuls was enough.
 
Beautiful day here! The slight haze from the fire on the moor continues while local farmers are damping down new outbreaks. We are told its definitely under control now though.

My neighbour is mostly over the shock of breaking her knee but is fretting about her horse. The boyfriend doesn't like animals. He is walking the dog (a huge Ridgeback) but refuses to have anything to do with the horse - he mumbled something about horses having big teeth. :D Actually, I'm more worried about him being bitten by the dog - nice dog but young, enthusiastic and doesn't have any manners.

Breakfast: Scrambled eggs with kimchi (nice combination)
Lunch: usual Actimel drink and a bit of cheese
Dinner: halloumi 'chips', fried eggs and vegetarian sausages (an experimental combo)
 
I was just reading about the people in New Zealand newly released from lockdown and all heading for breakfast at McDonald's or barista style cafes.... I decided the thing I would most enjoy (apart from hugging loved ones again) is to go to the Doncaster Toby Carvery for one of their gorgeous buffet breafasts. Mmmmm

What would everyone else do?

@Chook I’ve already had my ‘not so post lockdown’ Five Guys fix, so top of my wish list is freedom to travel (just in London/UK initially) to broaden my walking options. Of course that is likely to include at least one visit to one of those ‘all you can eat’ Brazilian grill places.

Two meals today - and BG not playing ball again.

Lunch was minced beef fried with onions (a few), 2 fried eggs and some grated cheese. Started tucking in before photographing!
Dinner was 2 fried eggs, 2 Iceland 100% beef burgers and some streaky bacon.

Black coffee for breakfast.
DD breakfast sandwich for lunch with a DGF salted caramel blondie and a cup of tea afterwards.
Dinner was pulled pork (DD instant pot recipe. Wasn’t keen on the tomato sauce and the pit took a lot of scrubbing out afterwards, but the meat was meltingly tender) with baked aubergine and yellow pepper. 2 glasses red and a chunk of Cornish Blue cheese to finish.
@Chook Im looking forward to a coffee in my favourite dog friendly coffee shop with my friend and her pooch ( after hugging family obvs) Zoom coffee meet ups are simply not the same.
@Goonergal my BGs not playing ball either. Haven’t seen a 4 for days. Fbg ok then up it goes and doesn’t really come back down to earth. It’s not as if I’m stressed, I’m ashamed to say, selfishly, that I’m loving lockdown.

My problem at the moment is FBGs - I'm starting the day at over 9 (most days) breakfast is stopping it going any higher but it's not coming back down by lunchtime like it used to. Then I struggle to get it down to the 5s by bedtime and the next morning it starts all over again - like Groundhog Day - except not as funny.
 
@Chook I'm such a bore. I'm quite comfortable stuck in the house most of the time. I will be driving to town and back for about half an hour tomorrow to pick up my order from the butcher. I could happily do without that but the car needs to be taken for a drive - just being able to go shopping with Neil so that I can choose my own veggies and fish will be treat for me. Of course, seeing Em and Braidie and giving them lots of hugs doesn't need describing.

Actually, I have been asked to contact various Zoom meetings (by phone because my laptop won't do real time video or sound - something to do with our poor broadband signal). And I find it a bit of a chore. The only contact I am happy to make is this, with you guys. As I said - I'm such a bore!

Breakfast was 2 slices of black pudding sliced and fried and 2 fried eggs on top. I also had some cold pork with Atkins crispbread at about 4 pm.

I have a sausage and vegetable casserole in the oven at the moment - will be done in about an hour. Not sure if I'll want to eat it.

Sore throat and many aches and pains again today - and my froggy throat has come back, but I don't feel too grotty despite that. Oxymeter still says 95% saturation and 76 bpm pulse, so I''m not ill.
 
B. Finished the last of the chia pudding, with some double cream. I had only made 1 portion (1 tablespoon of seed and 150 mg of coconut milk) but it swelled so much and didn't suit me so got 3 portions out of it
L 50g brie and 30g pate with 1 tablespoon coleslaw
90 minute walk, sad to hear so much traffic especially from the motorway. The peace and quiet has been nice
D. Cod and salmon baked with spinach, Tom's and peppers served with broccoli and some celeriac chips.
Note to self, to serve smaller portions, really feel rather stuffed now
Saw 5.5 before dinner which was nice after 4 weeks of 6-8s
 
B: cooked some keto porridge for Mr B, and had some. Bit too coconutty for me.
L: prawns in brinjal pickle cream
D: homemade chicken nuggets. Sour cream steeped diced chicken thighs, tossed in lo carb ‘bread crumbs’. Again, a meal aimed at Mr B. He had caulicheese with his.

3 meals a day is A LOT. More than my body needs.

What am I missing most? Dunno. It is rather mixed up with Summer and pub meals in pub gardens, and self catering holiday cottages. I am still working through The Lockdown, so am v jealous of those who aren’t, but very aware that I’m one of the lucky ones with an income and no looming unemployment. All my family are 200+ miles away. It would be good to visit them.

I googled on the first but I suppose your recipe didn't include 150 grams of sugar. So what is it?
For the second, lots of recipes online but this one looks particularly good so I want to make it!

I make Brinjal pickle cream by stirring 1teaspoon of this

into a glug of double cream. Quantities to taste, of course.

works very well stirred into prawns, and it would probably be FAB over steak.
I sometimes use the pickle as a dipping sauce for ribs or moo grob.

Sorry to hear your aches and pains are back again. I agree about the electronic contact with people sometimes being a chore. The forum is pretty stress free in comparison isn’t it? Pop in when you fancy it and leave when you want.

Haha, and here I was thinking you had spent half your day messing with aubergines, spices, and who knows what!
I think pickled anything is a much bigger thing in the UK than it is in the Netherlands. Makes sense too, with your history with India. On the other hand, we have our history with Indonesia, and while it's not a pretty history I'm happy using all the wonderful flavours it brought us, available even in the smallest supermarkets :)
