What have you eaten today? (Low carb forum)

@Chook well done for that mammoth fast and the stonking fbg this morning. Bit of a blow about the post breakfast reading but with any luck after that initial jolt into action things will level off to a better state. Great weight loss too by the way.
 
Morning All
Yesterday was my usual breakfast of slice HiLo toast, butter and lots of tea.
Lunch was egg mayo salad.
Supper was chunky fishfingers and broccoli.
Almost the weekend so had a strawberry gin & soda before supper.
Today same breakfast and lunch.
Supper will be baked Teriyaki salmon fillet and broccoli no doubt preceded by a strawberry gin, or two.
@Chook congrats on completion of the amazing fast. I admire your strength, I cannot even skip a meal. @DJC3 great to see your BG firmly back where you like it, I know you have also fasted so well done.
That chicken soup sounds lovely not sure what berbere is but will look it up. Thanks to @maglil55 for photographing the recipe. I dont have an IP or a slow cooker but I see that the slow caramelisation of the onion is the critical bit so will adapt.
@Annb sorry to hear about your tummy aches, not to mention the spider! Those cakes you made in the past sound extraordinary. I always just made a chocolate fudge cake and decorated it with choc buttons rubbed with gold or silver dust to make coins. When they grew up they preferred Colin the Caterpillar from M&S!
 
Good morning all

First of all big hugs to @DJC3 and your daughter. I hope she feels better soon and the little ones don't get too affected by it all.

it has seemed like a very long four day fast. Finally I have eaten something this morning - the first thing I've had to eat since Sunday dinner.

Weight: lost another 1lb making it 10lbs in total
Bedtime BG last night: 5.2
FBG this morning: 5.2
Blood pressure: Exactly the same as on the BP monitor box - 120/80
Mood yesterday: Absolutely starving and grumpy

i feel sooooo much better now I've had something to eat but my tum did feel a bit unsettled after so I will take it easy for a couple of days.

Breakfast: two boiled eggs and buttered Ryvita
Lunch: will be nowhere near a kitchen so probably some individually wrapped cheese(s) or maybe nothing
Dinner: omelette and salad

Maybe a glass of wine if my tummy feels up to it.

Well done @Chook. That was a mammoth effort and I hope that it will have the desired effect.

I have screenshut the screenshots, but CMT will look much nicer. Going to have to Mediterraneanize it with olive oil, which will subtract creaminess, but I think it will be luscious!

Maglil is this the same batch of tripe from a week or so ago, or a newer batch?

I got the berebere spice mix from Amazon but I think you could use any African style spice mix, or just plain curry powder if nothing else.
Colin the Caterpillar is still a firm favourite with my family too. I love the sound of your chocolate fudge cake. I used to go to town on cakes. Fairy castles, swimming pools ( I used jelly too @Annb ) I made my dad a vegetable garden cake with tiny fondant carrots and cabbages and a compost heap. It was good fun at the time but I’ve become a much lazier cook as time has past.
What brand is the strawberry gin? Is it as good as the Aldi Seville orange one?

Hopefully schools returning will help a bit too with some return to normality for the little ones - sending you the biggest hugs possible - do take care stress is so difficult to deal with and has a big impact on our health.
@Chook wow well done on your fast and hope weather picks up for your hols - it looks like it’s going to settle in a day or so. Plus I agree with @Goonergal that when you’ve done a fast and start eating again you can get a reaction and for me,as @DCUKMod says, the RyVita wouldhave impacted too. Hopefully things will settle and your bgs and bps settle now you’ve achieved your fast. Well done on weight loss.
@PenguinMum your strawberry gin sounds tempting did you infuse yourself or buy it?
@maglil55 feel for you and vertigo I have it periodically and hate it I triggered a spell a few weeks ago and it’s just resolving - laying down straight on my back is worse! I’ve had to leave a few exercises out but now thankfully just about back to normal and full range of exercises.
Thinking of you all and appreciate reading all your menus which I’ve just caught up on!
Busy last three days so just a quick rundown of eating over past days.
Wednesday photo is amazing meal out to celebrate OHs birthday steak, cabbage and leek and salad plus mushroom and glass of red wine amazing meal out. Fasted until went out and really enjoyed meal
Thursday
Lunch picnic as out meeting friends at a local English heritage ruin and gardens in rain and cold! Two boiled eggs and lots of hot coffee! Plus DGF lemon and blueberry cake
Dinner pesto chicken with salads and wine diluted with soda water followed by a few berries withDGF raspberry bakewell with cream
Today - Friday
Lunch scrambled eggs on LC toast followed by coffee and 100% montezumas peanut butter egg.
Dinner sea bass in lemon butter with celeriac chips and asparagus pudding a few garden berries and DGF brownie and cream

another odd day. Looks like an unintentional OMAD, mainly cos I just forgot to eat.
Hunger struck hard at 6pm, so I threw some pork into the micro, played throw-the-toy with No3 while it was spinning, and am now pleasantly full.

The weather today has been AWFUL. High winds, driving rain, nonstop downpour and cold enough that I need woolly socks! Looking out the back window, I see the garden looks like a mini tornado has struck. Garden furniture all over the place. My 6ft honeysuckle in a heavy clay tub has blown over, and I expect the bird feeder will go next (that has been looking rather drunken ever since the spring storms.

glad I didn’t have to go out. Mr B did though. Didn’t take the car to work, either, so he will probably need picking up at 11pm. Wouldn’t ask my worst enemy to walk home from work in this weather. I can feel the house vibrate with the big gusts - and we are middle of terrace!

@Chook oops I'd thought you were breaking fast last night. Way To Go! Be nice to your tummy... ugh 2-hr BG rise and rainy holiday packing. What if the rise is still stress?
@Annb there is no use trying to reason oneself out of a phobia, is there? I'm sorry about your "pidey" (can you tell I have a soft spot for most spiders...) but that would give me pause too! The cakes sound wonderful! My DIL's sister does that, and has had some real winners. I once made my son a grape cake at his request. Sweetened with grape juice concentrate. It was purple, tasted awful to me, but I'd put a cluster of grape mini-muffins on top, with curled green ribbons, and thought it was a triumph. Same son now makes me, from 13 egg whites, my birthday angel food cake! How about yogurt to soothe your stomach, since milk seems to help?
@PenguinMum my younger likes a chocolate wafer/whipped cream concoction for his birthday now, and if we can't find wafers, he prefers storebought sheet cake with as many iced roses as possible

Friday (today)'s intentions. Yesterday's intentions had the addition of most of a dark chocolate truffle filled with date goo, hm by DIL and her sis, and some cottage cheese. The problem with cottage cheese is that it's even better than vanilla ice cream, so, as y'all say, very moreish....
Bfast: avocado, boiled egg, 1 90% Lindt
Barre class noon
Rest of bfast pecans, some of the leftover salmon w mayo, flax crisps, another Lindt.
Supper hopefully we can eat the last of the salmon. Mr ZF will get angel hair/pesto, and I will just put my pesto on the salmon; spinach, everlovin'flaxcrispsyoumustbesoboredofthese!
How many hummingbird feeders do you have to put out so the bullying male can't guard them all at once!!!! I have one in front and one in back, two more have just arrived. I swear this little guy manages to be in two places at once!

I have made strawberry gin in the past - 2 ways. First time was using the sous vide, in the water bath, then more recently using the Soda Splash, with nitrous. It infuses near instantaneously, so it can be made on a whim.

I usually make small batches, then if it isn't quite right, there's not too much to get through before another go!

The fruit also gets very alcoholic, but makes for a change on a rich Greek yoghurt, with or without cream.

Can your Soda Stream be used with nitrogen capsules, or always co2?

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and white chocolate phd bar.
Late Lunch: small packet of Cheesies followed by Greek yoghurt, raspberries and vanilla and raspberry LC granola.
Dinner: prawn cocktail, pork scratchings, leafy salad and coleslaw followed by SF jelly, cream and LC chocolate granola.
 
Evening all. Started today with the usual gallons of black coffee and an early trip to M&S. I wanted to get there by opening time (8am) as it’s situated on the main route through Cornwall so gets rammed at this time of year. Was hungry by late morning so had a tuna melt muffin before having to go out again.
Mid afternoon very hungry again: 1 slice cheese, 1 slice cold crispy bacon then a DGF Millionaires shortbread and more coffee. Another trip out before evening meal of roast chicken, roast aubergine and red pepper and a Waitrose 1 Cumberland sausage in lieu of stuffing.
@Rachox I was so pleased to read your feet are healing well and the stitches are out. I hope that’s the end to your foot problems.
@shelley262 thanks for your kind words Your birthday meal with OH looks delicious, you seem to be having a great time in spite of the rain.
@zauberflote it must be fabulous to see hummingbirds out of your window. I’ve never seen one apart from photos and tv. Our sparrows and blackbirds seem quite dull in comparison. I love watching them though, and the crows which sit on the telephone wires and squabble for position.

Eaten rather a lot today.

Pre-lunch Hotel Chocolat 85% hot chocolate with cocoa whip
Lunch was at another Brazilian grill. This time in Brum. Delicious.
A few snacky things since - Greek yoghurt, serious pig snacking cheese and a small bag Brazil nuts.

Some of the newer models of IPs have a sous vide function, but the thing about sous vide is, by it's very nature, everything takes quite a while, although usually hours, rather than days. No more hiding the brewing sloe gin away, hoping it won't tempt you every time you open the cupboard.

If you fancy having a go at the infusions -it's great fun, although I will never, never, ever be persuaded that tequila and turmeric is a sane option. Just don't go there!

I use the Soda Splash to do mine. https://www.creamsupplies.co.uk/soda-splash-carbonator-infuser I can also make wine (red or white) fizzy, and I daresay if I felt the urge, I could make strawberry infused fizzy gin, using two processes (nitrous doesn't make fizz, the co2 does that bit). Fizzy Sauvignon Blanc is quite pleasant, as is a fizzy Malbec

At £27, it's cheaper than upgrading your IP, or having another; bearing in mind you don't have much space. The Soda Splash is a fun thing.

Fizzy raspberries anyone? Actually, I bet your soda stream would be able to do that, albeit you'd have to have a way of getting the fruit into and out of the bottle!

In the spirit of the thread, tonight I had home made tandoori chicken. Very delicious.

It's an odd mix berbere but cayenne pepper would certainly add similar heat (although I wouldn't use a tablespoon of cayenne)!
 
@Rachox - hopefully you feet will heal quickly now. Fingers crossed. @zauberflote - same tripe batch but I did cook and add more tripe and it was a bit too thin for my liking. I've got loads of individual cooked portions in the freezer now.
@Chook - great result. I'd never last that long. Great weight loss too. Be sure and enjoy your break. Hopefully the weather will improve for you. @shelley262 - great looking food. Vertigo is easing a bit but I'm still turning very carefully. @DJC3 - schools here have been back 2.5 weeks now. Eldest is finally getting over his nerves and forcthe most part it is starting to have some normality. The kids are probably the most adaptable. They are certainly getting used to being sanitised! I agree with @shelley262, getting back to school is beneficial.

Your made up sauce sounds delicious. I bet it went really well with the veal.
The girls go back to school on the 5th I think. We haven’t talked about how they are going to get there yet but I’m expecting to do some v early mornings soon. It’s also occurred to me they haven’t been out for new shoes so I think I’ll take them Monday. I don’t think my daughter who is normally super organised has thought of any of it. I’m glad your boys have settled in now though. A sense of routine and normality will certainly help.
