What have you eaten today? (Low carb forum)

b:ff greek with seeds and 4 strawberries. 2 scrambled eggs
Snack1: 1 scoop ice-cream
Snack 2: packet pork crunchies
D: steak with peppercorn butter and green salad. 1 large glass malbec and 25g Guylian dark raspberry chocolate.
Libre has been remarkably flat, even the ice cream only went to 8. Result!
 
Godiva is a brand of chocolate...BUT I read the label wrong and this chocolate is by Guylian, still tastes good though!

Can I pick the collective brains on this subforum pls? I’ve finally got around to cooking the Keto Crusted omelette, planned for dinner tonight. I have mozzarella and seriously strong cheddar in the fridge, which would be best or could I do half and half as I do for a normal omelette?
 
Made some frozen raspberries with greek yoghurt for breakfast.
BG came down to a reasonable level after that but then kept on dropping and remained about 4.8 for quite a while - for me that's very low.
Lunch: sausage stew with the fairly tasteless and tough skinned sausages that Neil bought for me so I put them in with some cavolo nero, butternut squash, carrots and onions and some chicken stock. The stew was delicious but the sausages still a bit on the tasteless side. BG still not up very much (5.2).
I think I'll have to have something else today. I noticed someone made a kind of pancake with a base of mince some time ago but I can't find it on the forum. Might have a go at that and roll something up in it.

Great numbers, but pretty close to going too low. Don't forget to keep some hypo treatments on hand wherever you go, you don't want to have to navigate stairs or such when having a hypo!
 
Half and half would work just fine, but my personal taste says choose the cheddar!
Ok I think I’ll go for cheddar then!
Edit to add, actually I think I’ll use cheddar for the crispy outside and mozzarella in the middle :hungry:

Early exercise class then a coffee and dog walk with a friend ( yay!)
L: prawns, cheese, green salad but spike caused by a 'flavoured water" drink. Labelled as 5g carbs per 100ml I probably had 10g but it sent me up to 10. Didn't taste very nice either.
D: probably going to be cheeses as raided an expensive farm shop yesterday for local specialities. Finishing off the malbec with a half a glass
 
Hey Ann nothing worse than tough skinned sausages BUT it shouldnt be too difficult to squeeze them out of their casing and roll into meatballs of whatever size and add to the dish.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and Fibre One caramel protein bar.
Skipped lunch.
Mid afternoon: black coffee and coffee chia pudding.
Dinner: Diet Dr crusty cheese omelette filled with mozzarella, mushrooms, cherry tomatoes, onion and sweet peppers (thanks for the suggestion of using just cheddar @Antje77 , I don’t think the mozzarella would have ended up quite so crispy) followed by SF orange jelly, cream and LC chocolate and ginger granola ( new creation! I had yearned for something chocolate and ginger flavour since hubby bought me a dark chocolate and ginger Easter Egg :hungry:).

Edit to add the mushrooms which I had forgotten!

FBG was not as high as usual this morning so I decided to make an early breakfast and do without the correction dose. We'll see, as the day goes on, what effect that has.

For breakfast I made a sort of wrap with some beef mince and eggs poured over it - I saw something like it on this forum some time ago but couldn't find it when I looked back. It was fine anyway, filled with some brie and tomato relish. I'll do that again.

Later I will have the remainder of the sausage stew.

Dinner: chicken drumsticks, brie, leafy salad and coleslaw followed by orange SF jelly, cream and LC chocolate and ginger granola.
 
Planned today as a 2 meal day so brunch was 5 rashers bacon and 2 scrambled eggs, which backfired as still wasn't very hungry come dinner out, yes out! Meeting up with family in a restaurant.
They all went for the full three courses but I just had a bunless burger with stilton and mushroom. Did nibble about half a portion of chips, first since D day over a year ago. Bg rose to 8 but went straight back down again. Not too bad for a once a year celebration event. Glad I currently wear a libre
 
Breakfast: 3 rashers of streaky bacon and 2 eggs - all dry fried.

2nd meal: the kind of meaty omelette/wrap I made yesterday topped with 3 turkey and mushroom meatballs in tomato sauce. The wrap added nothing, so I shan't do that again.

BG dropping too far again and I've had to have 2 boiled sweets to get it to rise again (the emergency supply is getting a battering these last few days). Due to the low BG level, I will probably have to eat something else this evening - not sure what though. Still tinkering with the insulin doses - at present the requirement seems to be dropping away which is odd - I haven't made that much of a difference to what I was doing before. All to the good, but it's one of those irritating things when you fix something but don't know how you did it.

Have been gifted several lc snacks from family so expect snacks to appear frequently from here on (havent had the heart to tell them I shouldn't be snacking, they were so chuffed to have found lc suppliers)

11:00 some seeds soaked overnight in double cream and yoghurt with way too many blueberries (clearing holiday fridge)
1:00 nut bar
15:00 one lc cinnamon swirl cake from No Guilt bakes. Comes individually wrapped and freezable. Tasted good
17:00 a pack cheddar Cheesies
18:00 homemade pork chilli and a glass of malbec

This is not a way of eating I want to last, just going to indulge for a few days then back to normal
 
Cheese omelette, bacon, mushrooms and tomatoes for breakfast.
Chicken wings with a spicy sauce dipping mix for lunch.
Grilled Nile Perch, and green veggies for dinner.

Went to the train station to picket up my return tickets to Brisbane yesterday, the authority from the hospital was not there so had a temporary one issued till it gets sorted on Monday. I have to get to the station earlier than planned, which puts a crimp in things I had sorted out.
 
I'm way behind again so I'd better get a few recorded before I catch up on posts.
Monday 17 May bed 5.5 FBG 6.3. Back to 5he school run and running here there and everywhere in foul weather.
B. TAG and 2 slicesof SLC toast with Dairylea.
L. Nothing - grandson to feed then homeschooling.
D. Chicken breast with coleslaw, lettuce, 1/2 avocado, santini tomatoes and Wensleydale cheese with cranberries.

Tuesday 18 May bed 5.7 FBG 6

B. TAG (that was it. Engineer in all morning to deal with the mysterious fridge/freezer issues)
L. Nothing - grandson came home for lunch but returned to school for 30 mins in the afternoon.
Not worthwhile going home so sat in car at school doing a Crossword.
D. Repeat of yesterday. Chicken, coleslaw, lettuce etc. DGF Brookie.

Wednesday 19 May - bed 5.7 FBG 6.1

B. TAG and 2 slices of SLC toast with Dairylea.
L. Nothing - the back and forward to school continues but it's good we've got him going back in the afternoon for a short time.
D. Pork melts - pork sausage meat stuffed with Mexican cheese and dipped in my low carb crumb. Had it with salad as freezer is still nuts!

I've now lost pretty much everything in the freezer as it has defrosted and refrozen more than once now. I had to use the "computer fix" on it (switch off for 10 mins then back on). To my horror the temperatures were not -22° freezer 2° fridge but +12° & +8°!! Towels under the fridge and a mega clear out. Thankfully fridge temperature came back down but I still had to throw some items out for safety. I bought 2 freezer/fridge thermometers, will buy food every couple of days and the engineer is back on Friday morning. They've put £400 worth of parts in it and it's still being temperamental.
