What have you eaten today? (Low carb forum)

Breakfast: 2 fried eggs with a few slices of boiled potato fried off in butter.
2nd meal: ratatouille - has to be used up - maybe then picking at some cold meat or some smoked salmon.
Em was in and had her favourite bacon with tomato ketchup (plus some slightly salted crisps which she found in the cupboard and doctored with some lemon juice - well, she reckoned, if you can have salt and vinegar crisps, you should be able to have salt and lemon juice crisps. She ate them anyway.)
 
I cleared the m and s of a nearby city of their very low carb seed crackers today - but before anyone gets too excited and asks which city there were only 3 on the shelf and they landed in my basket! @Tori71 yours look good too if I can’t get more in a month or so!
@RosemaryJackson pleased your fasting bgs lower today but just remember it will be erratic and go up and down especially that reading first thing in the morning. Nearly 5 years into remission that fasting morning reading still offers some surprises! I’d focus on looking at your bgs before eating and 2 hours after to see impact of your food on your bgs. Patience is definitely needed and resilience for the odd readings!
As out in big city I just had a few teaspoons of hm live bacteria yoghurt before set out to help my supplements be digested as they need some fat especially the vitamins D and K.
Throughout day had ordinary weak black tea at one cafe and then in honour of being in Hotel Chocolat with a close friend - not seen in too long - I had tea with cocoa and ginger - delicious so bought a few of their teabags to take home.
Drank black peppermint tea on return while preparing dinner which was
Cajun spice marinated chicken with range of salads and small glass of dry white wine followed by a lc blondie warmed and served with cream
Kitchen currently smelling like Christmas - as brewing some cloves and cinnamon to release the oils and will brew with green tea to sip through evening.
 
Thanks for the get well messages, I’m a lot better since lunchtime today when I was suddenly ravenous so
L- a sort of LC Philly cheesesteak sandwich made with a split and toasted SLC roll, spread with mustard. Topped with melted cheese, fried red onion and pepper and a slice of butcher’s roast beef. Then a couple of squares of Montezuma’s
D- calves liver and bacon with fried onions and mushrooms and a few sprouts. DGF raspberry bakewell
@Tori71 how many carbs in those crackers and where did you buy them? They look like a good alternative to the erratic M&S ones.
@RosemaryJackson I like breakfast to be quick and easy to prepare so scrambled eggs on a couple of slices of cheese is my usual choice, plus a slice of ham if I have any in. Another quick and easy one is cream cheese spread on smoked salmon and rolled up.
 
Bed 6.8 FBG 6. Didn't get up until 8.30am today. Usually I'm up, washed, dressed and out the door on school days.

B. TAG and paleo granola with 4 raspberries & 4 blackberries.

L. Nothing

D. Beef olives, stuffed with a mix of pork mince and GF haggis. IP job in gravy with carrot and onion. Put cauliflower in the steamer with potatoes for Hubby. Wilted spinach as well.
Coconut milk.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a PE bar.
Skipped lunch.
Mid afternoon: black coffee and an Atkins bar.
Dinner: LCFC sausage roll and scrambled egg followed by SF cherry jelly and cream.
 
In Canada, we get egg whites in cartons:

Scrambled eggs or omelettes with only egg whites is not really tasty, so the compromise to keep my kidney doctor happy.
I'm so sorry you should be careful with the yolks for your kidneys, but glad you can still smuggle in the occasional yolk for taste!
I had no idea you could buy egg whites, but I did a quick google search and it turns out my local supermarket sells it as well, I've just never seen it!
Good thinking on her part, makes sense to me. Except vinegar on crisps or chips doesn't make any sense to me, being Dutch. It sounds as odd (and as appetising) to me as, say mayonnaise on apple pie.
I guess I'll have to let go of my preferred diet once I finally visit the UK to at least try chips with vinegar once!

Yesterday I made marmite walnuts again. It's been a while because burning them three times in a row had me put off of them for a bit, fearing another disappointment, but they've turned out perfect!
Dangerous food too, I used about 250 grams of walnuts, more than half of which disappeared while reading in bed. And I wasn't even hungry.

Had a wonderful meal today!
A salad of endive, onion, tomato and a perfectly boiled egg (that last was pure luck, hadn't even set a timer!) with a dressing of mayonnaise, mustard, salt, pepper and a splash of balsamic vinegar. And runner beans with sharp Danish blue cheese and cubed bacon.

Hi does any one know how to make a low carb Spaghetti Bolognese I don’t want the pasta I’ve got skinny noodles there very low carb I just want to know how to make the sauce and can u add mushrooms and onion to I’ve googled it but it’s coming up loads with tinned tomatoes

I think they're on Amazon as well. The rosemary crackers are 1.3g per four crackers (which they count as a serving) The crispbreads are 0.2g which is a great improvement on the m and s seeded ones I have now at 5g.
They are, of course as with most low carb products, ruinously expensive so I'll report back tomorrow after a taste test!
 

How about pizza with custard? Neil had that once and seemingly enjoyed it. Story on the parallel thread.
 
I use tinned tomatoes for my bolognese, and onions and mushrooms go in it as well.
I do check the carbs on the tin before buying though, in case there are brands who add sugar.

If you don't want to use tinned tomatoes (why not?), have you done a search for 'bolognese from scratch' or such?
 
I use tinned tomatoes secret is to not have too many.they are 2.7 g per 100g and cheap ones can be lower just avoid any with any additional stuff or tomato sauce. We use one tin for 4 portions often freezing half and only use med type veg as low carb eg courgettes, peppers and mushrooms- onions I stick to dried onion granules with dried garlic and herbs.slow cook to develop flavours. Mine will be in slow cooker Tommorow to go with venison meatballs. Just don’t go near any of the commercial sauces just plain tinned toms and check label. Hope it goes well.
 
Wasn’t hungry today, so used it as fasting day. Black coffee x4 until dinner which was an omelette, using two eggs, mushrooms, red pepper, ham and cheddar. Drank plenty of mineral water.

I’m not keen on tinned tomatoes, I spent too many years following Weight Watchers recipes which seemed to be all based around tinned tomatoes and it’s put me off them a bit. If I want to make a ragu type sauce I will add a squirt of tomato purée and a splash of water. I love mushrooms so always add lots but I often use onion powder instead of fresh onions to reduce carbs a bit more.
 
A late breakfast if 2 rashers thick smoked bacon with one scrambled egg.
Hours dancing
L: handful walnuts, 3 slices hm lc ginger bread
Mid afternoon. Helped hubby out with his valentines treat of macarons. Trouble is I had 4 because they were very small . Spike to 12. I must get back in the habit if only one or 2 bites.
Took dogs for muddy walk as rain finally stopped so at least bg came down quickly.
D: steak with mushrooms and leftover green veg. 2 glasses red and the final 2 valentines chocolates.
Mid evening got the munchies so 1 scoop cheap vanilla ice cream but it tasted far too sweet so gave it to the dogs in their puzzle bowls. Happiness all round.
 
Two slices middle bacon. two scorched egg and cheese omelette, mushroom and a small portion baked beans for breakfast.
Two chicken drummies, lemon cordial / osmolax mix for smoko.
Grilled Barramundi fillet, mixed salad, green jelly for lunch.
Toasted cheese and onion low carb toasted sandwiches for supper at six.

Might it be the fried onions or DGF? Liver does have some carbs, but not significant amounts.

Didn’t actually check the carbs in liver before I ate it ( rookie error) my app says 3G per 100g and I had probably 200-250g so thats 6-8g carbs I hadn’t counted on, before all the extras like onions, sprouts and DGF.
Disappointing, I’ll have to have more bacon and less liver next time I guess.
