What have you eaten today? (Low carb forum)

Thanks so much @Annb @MrsA2 and @Outlier for your comments re food choices when I am on Exmoor. I emailed the pub yesterday and asked if they could provide a piece of unadorned protein either chicken lamb or fish with green veg one night of my stay as I was diabetic and the menu was carb heavy and I would have steak & salad from menu second might. They emailed back saying I could deconstruct anything on the menu and not to worry, honestly (!) as they were very knowledgeable about Diabetes as receptionist’s daughter was T1 and former chef had Diabetes until he was cured by a transplant. That made me mad as a box of frogs that they thought all diabetics have equal requirements and they knew better than me what suited me. Its the same round here which is rural and why we never eat out, I am fed up of steak and salad being my only option. I will try the two starter route while away. Its very awkward to bring the tone down when sharing with three other couples on our annual jaunt so I will grimace and bear it!
Brekkie today slice LC toast, lots of tea.
Lunch will be an avocado with a few prawns, maybe followed by a small ramekin of berries. Supper will be Indian t/a (only food option for miles for me) Tandoori King Prawns and cauli bhajee.
Our "annual" outing (which is happening again post covid) takes a bit of planning as there are a few food issues. We trawl the restaurant menus online in advance and book the ones that fit best with our different needs. I must admit it is getting a bit easier but pub grub is still the most difficult. We certainly had a first this year where, although The Ivy in Bath has a suitable menu, we couldn't book because there were 12 of us. We couldn't get a table from them in Bath but they could offer one for 12 in Canary wharf??
 
Saturday 20 August - bed 7 4 FBG 7.9. A bit of an odd day since, despite doing my shopping yesterday, most of my day was taken up by family members. Hubby was off colour now and son still wasn't fully recovered. DIL was coming down with this latest bug but she was the "healthiest" to take to get what they needed so I ended up with DIL, 2 boys and a puppy in the car (which meant their shopping took much longer). Hubby was coming down with cold too so I'm dosing with First Defence to keep my niggling throat at bay!

B. TAG and a piece of crustless quiche.

L. Nothing - out on a "tour" as eldest grandson refers to it.

D. Managed to get most of my ironing done before dinner. I didn't fancy anything in particular so, ended up with a weird combination of a small scallop & prawn cheesy gratin, a bit crustless quiche, santini tomatoes and a mini spring roll. After I had 6 King cherries.

My BGs remained pretty flat but started to rise late on as I was feeling a bit achy and throat was scratchy. Time for paracetamol, lots of water and an early night!
 
Breakfast was to have been 2 scrambled eggs on RyVita but the last lot of eggs Neil bought were smaller than usual (nothing else on the shelves) so it was 3 eggs scrambled.

Em asked if she could come up and was here over lunch time so she had a fried egg on almost the last of the bacon in the fridge. Unfortunately, I broke the first egg (and she really hates a fried egg that isn't runny) so it had to be used, so I had that as well.

I feel as though I will need a 2nd meal, so, if so it will be that cabbage dish with the very last of the bacon, and maybe some corned beef and some other veg thrown in. Em's just been picked up by her Dad so, if I make a start on it now, while I am still reasonably fresh, I might actually eat it this evening.
 
@RosemaryJackson - are you sure it's not an issue with your inner ear or sinuses? I'm prone to vertigo. It could be a horrid flight if you have an inner ear issue. @Annb - I'm assuming there are still supply problems with the basics to the islands? One of the newspapers were going on about how ridiculous it is that they rent ferries to put Ukrainian refugees on (because they don't have accommodation for them( but they can't fetch ferries for the islanders.

Today bed 7.8 FBG 7.6. BGs shot up to 11.3 yesterday evening before dropping back I assume it was because I was feeling off colour. I'm not too bad today though.

B. TAG and 2 slices of SLC toast with pate.

L. Nothing - swimming lessons have started again plus son & DIL were taking boys to the cinema after swimming so I was the driver there and back later. In between journeys I part cooked dinner.

D. Hubby wanted a change so he asked if chicken stroganoff was possible. Of course it is. The recipe I use for beef stroganoff is similar to the recipe for chicken fricassee. I couldn't get celeriac but I remembered my sister making aubergine chips and they were a lot crisper than celeriac chips.

Cut the Aubergine into chips (skin and all) and row them up on kitchen towel, Sprinkle with salt then leave them to start drawing liquid out. Give them a pat with dry kitchen towel every so often. I also changed the kitchen towel they were sitting on.
When you are ready to cook them, give them a rinse under a cold tap and pat dry. I then gave them a dust with tapioca starch, dip in beaten egg and dress in LC crumb. My crumb mix was almond flour, parmesan, sesame seeds and paprika. It's the seeds that give the crispy coat. Then you just fry in oil - one turn of the chips. They just take minutes. It sounds a faff but the longest part is getting the liquid out and you just leave them to sit. The result is worth it for a crispy chip.

Been given a huge bag of damsons, probably about 3 kg.
Cooked some yesterday and hung pulp overnight to get juice for jelly. Up early to make it. Used real sugar as I can't imagine, or afford, it made with sweeteners.
2 hard boiled eggs with mayo
Walk with a friend.
Still suffering a head cold.

Used the damson pulp in a keto recipe for plum curd. Not very successful. Had to add honey as well as the sweetner. Rather than jars. I've frozen it in big ice cubes so I'll just get a piece out when I want something fruity.

Will use the last of the damsons to do a damson vodka. Wondering whether to use sweeteners for that, has anyone ever tried?

Lunch was some of the damson stuff in yoghurt with coconut cream and chia seeds.

Gardening

D: roast chicken, cauliflower, green beans. Damson stuff made into a mousse with yoghurt, coconut milk and chia seeds
 
So instead of simply reheating the other half tomorrow, I'll improvise a trick with added veggies or such to have all this salt spread over a larger amount of food.
That turned out very well!
Fried a very large onion, added bell pepper, a chilli pepper, a large tomato, some garlicky shrimp found in the freezer (yay, more room in the freezer!).
Was going to add a tin of tomatoes but couldn't find any. Still, tomato puree and water did the job, and I've put tinned tomatoes on the shopping list.

Added half a stock cube and some herbs and spices as well, and of course the leftover way too salty fish and left it to stew for 20 minutes.
Added cream that needed to be used, et voilá, a creamy fishy stew, at least enough for two days!
Had it with yesterday's leftover salad.

Sunday breakfast, an egg, a sausage , slice of bacon, lots of mushrooms, black coffee x3

no lunch just more coffee

Dinner: ham hock terrine. Yes, @Riva_Roxaban , I made one. As always I adapted it. I just cannot stick to a recipe without giving it my own twist. So I added chorizo choppedwith the ham, with a mixture of butter, parsley, and grainy mustard in the middle. It went down well with the guests for dinner. They had hasselback potatoes, I left that out, and just had tenderstem broccoli, and cornichon. With plenty of red wine, and finishing with a glass of rum and pepsi max.

So glad I felt well enough to eat again today:D

Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!

Brunch - 2 slices slc bread toasted and buttered and filled with 1 slice corned beef. Mug of earl grey tea

Dinner (out) - Sirloin steak topped with cheese, mushrooms & peppercorn sauce with a large side salad

Once home ... Strawberries & blueberries with double cream drizzled over the top - I knew I had them in the fridge ...

Well, there we went again. I'll have to stop making "best" plans because, rather more than oft', they gang aglae (frequently, in fact). Had to cut short my Sunday phone call to my brother twice because I suddenly knew my nausea was turning to something worse! After the 2nd time, I didn't phone him back, I just dropped onto my bed, intending to stay there until I felt my stomach settle. That was at 7 pm and I've just woken up. It's 11.25 pm. Clearly needed the sleep more than I needed to put anything back into my stomach. BG is 11.4 - don't know how that works, there was no food to be absorbed into my system and put it up. Just testing my stomach with a cup of tea. If I can keep that down, I should be OK at least to drink a bit more but I think I'll give up any idea of food until tomorrow morning. Not making any plans for breakfast, best laid or otherwise.
 
Breakfast was an omelette with bits of corned beef mixed through it.

A short time ago I made a milk shake with milk, very ripe banana and some over the top strawberries. Carb shouldn't be too high because I only had half of the mixture. My stomach was feeling very empty so I had to do something. I didn't feel up to chewing ham or cheese. It has occurred to me that the times when my stomach is at its worst is when I've gone for a long period with nothing to eat. That's why I thought I should put something into it before going out.

Possibly shan't eat again today - I have 2 appointments this afternoon, one for a diabetic eye test and the other with a dentist. I'm going to have to tell him that my new dental plate is useless! I've been trying to file bits off to make it more comfortable, with limited success. It is still grazing my gums as it goes in, comes out or in use. I may have a problem with inflamed gums, of course, but I can't use the plate for its main purpose - to eat with. To eat, it has to come out and be exchanged for my old one which has gaps where there should be teeth, but at least I can bite and chew with it. The new ones looks better, but what's the point of good looking, useless dentures?

BG 5.4 at 3 hours later but hungry now so off to stand in front of the cupboards!

Dinner: chicken breast stuffed with pork and apple with Brussels and a few slices of carrot followed by SF raspberry jelly and cream.

No breakfast. Tough workout at the swimming pool, so drank lots of water (from a water bottle not the pool water) had black coffee later.
Late lunch: scrambled eggs and mushrooms fried in butter, black coffee
Dinner: salmon, cream cheese, sugar snap peas, sugar free tonic water.
Fast was from 8pm Sunday to 2:30pm today. Feel better for it.
