Variation on a theme today with my meal of the moment. Added some chopped streaky bacon to the standard mix of mince, courgette, onions, feta and grated mozzarella. Occurred to me as the taste is reminiscent of a rice dish I used to make, the mince is a nutritious ‘substitute’ for rice and basically goes with any leftovers that may be lurking in the fridge.

Thanks! I’ve just edited the post because I forgot to mention one of the ingredients - a beaten egg thrown in to add a bit of texture and flavour, so it’s actually egg fried ‘rice’!!I like the idea of mince as a rice substitute and I really like the sound of your mix up meal today.
Morning all. Forgot to post yesterday but can remember I had a piece of cheese for bf, Belly pork brushed with bbq sauce and a tomato for lunch and 3 crackerbreads with soft ff cheese on for tea. Today, no bf. Emptying the freezer for when I go away, found a Ginster's Chicken and Mushroom slice so will have the filling (and maybe a taste of the pastry) with green veg. I think my meals this next week will be a bit topsy-turvey. I'm isolating as well, covid is rife is our village and I fly next Friday so am being careful.
