Variation on a theme today with my meal of the moment. Added some chopped streaky bacon to the standard mix of mince, courgette, onions, feta and grated mozzarella. Occurred to me as the taste is reminiscent of a rice dish I used to make, the mince is a nutritious ‘substitute’ for rice and basically goes with any leftovers that may be lurking in the fridge.

I like the idea of mince as a rice substitute and I really like the sound of your mix up meal today.

Thanks for the welcome @PenguinMum and @Goonergal . B-3 eggs. Cooked somewhere between fried, scrambled and omelette, sprinkled with parmesan.
L- Turkey breast, Camembert and supergreens sauerkraut. Followed by h/ m yoghurt and blueberries.
D- Lamb kofta curry. A very tasty recipe from this month’s Good Food mag. ( but I had courgetti rather than the suggested rice accompaniment) I have a subscription to this mag. as my 9yo granddaughter loves baking so I cut out the cake recipes for her, and I keep the savoury ones. Many, like this are naturally low carb.

Should have taken a leaf out of my grandmother's book and cooked the cabbage for longer. Normally I would cook cabbage for as short a time as possible but in this case, just as with Collard greens, the cooking should take hours. It tasted fine, but the texture was all wrong. Must remember that in future. I'll cook the remainder tomorrow for another hour or so.

Em wants to come tomorrow and make some more cupcakes because "someone" (big brother) has been breaking the rules and helping themselves to the last lot. She also wants to make a coffee cake for her mum as a "Happy Giving Birthday" cake to mark the day 10 years ago when her mother gave birth to her. She was making pancakes today to have with some fried streaky bacon.

Breakfast : black coffee, and crunchy sliced of seeded wholemeal bread toasted, with a thick spread of butter. - I know, probably not the best choice to have a full day’s worth of carbs first thing, but it was an itch that needed to be scratched before it became a rash!
No lunch. Just black coffee.
Dinner roast chicken thigh, fried cauli rice with mushroom onion and peas. Low sugar tonic.

Thanks! I’ve just edited the post because I forgot to mention one of the ingredients - a beaten egg thrown in to add a bit of texture and flavour, so it’s actually egg fried ‘rice’!!

Morning all. Forgot to post yesterday but can remember I had a piece of cheese for bf, Belly pork brushed with bbq sauce and a tomato for lunch and 3 crackerbreads with soft ff cheese on for tea. Today, no bf. Emptying the freezer for when I go away, found a Ginster's Chicken and Mushroom slice so will have the filling (and maybe a taste of the pastry) with green veg. I think my meals this next week will be a bit topsy-turvey. I'm isolating as well, covid is rife is our village and I fly next Friday so am being careful.

Today I will finish cooking the cabbage dish from yesterday but that will be a bit later. I am very hungry right now so will probably have some bacon with some scrambled eggs shortly. I'll have to eat something because I have some baking to do today and if I'm hungry I might be tempted to "just check that things taste right". Not a good idea.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: salmon and cream cheese on a LC roll with coleslaw and baby tomatoes followed by DGF lemon drizzle cake and cream.

Managed to avoid breakfast, mainly by getting up late!
Lunch was a 90 second bread with camemebrt and a bit of coleslaw. Hm lc yoghurt to follow
Had a mooch round the clothes shops, liked a fair bit but didn't buy. Still having trouble getting head around what size I am now (good 10, but head still thinks I'm an 18)
D: a few olives and cheese. Hm lc hazelnut icecream

B- ham and cheese omelette
L- had a quick pit stop in M&S for granddaughter to ride the escalator! Bought us both lunch to take away in the food hall. Pasty for her, roast chicken slices and olives for me.
D- Airfried ribeye steak with mushrooms cooked underneath. Salad. Red wine.

Wednesday 24 August Bed 6.8 FBG 7. Today I have the boys here for dinner so, I had to do a bit of shopping after the school run(s). Hubby also had to collect his 2nd pair of specs (sunglasses) and of course it was raining. Also had to fit in a visit to the sports centre as youngest's class had their swimming assessment to see if the would get school swimming lessons. He won't! He was in full on "I will show you how well I swim" mode. Even found time to assist it herself in his class by showing correct arm movement plus breathing.

B. TAG and 2 slices of SLC toast with pate.

L. DGF Coffee and walnut cookie.

D. Scallop and prawns in Lobster sauce (Sainsburys) and a couple of Hubby's chips.

DGF Caramel and chocolate crunch (which are rather addictive). Vodka & diet coke.

Mid afternoon, crustless quiche, coleslaw six almonds.
Dinner, salmon, garden peas, mayonnaise, two chips nicked from Mr Pipp’s plate, sparkling mineral water.

Morning all. Thanks Annb and DJC3, I'm getting so excited, can't wait to see him again. For bf, had a small slice 50/50 bread with avocado and tomato; lunch, sausages with rest of green veg from yesterday; for tea, crackerbreads with smoked trout and cream cheese. Found the trout in Lidl and like it better than sm salmon. Have a great weekend folks.

Brunch - tinned tuna stir-fry

Dinner - roast beef with home-grown runner beans

It's hard to believe that such delicious food is actually helpful to me, good for my BG and general health, and keeps my weight under control. Anyone about to start low-carb and a bit concerned - go for it!

The term "big boned" lol repeatedly told this growing up!
Breakfast grabbed two slices of corned beef from the fridge and a chunk of home grown cucumber and handful of salted nuts.
Lunch now left over mushroom/chicken soup with added cream
Later when hungry probably black farmer sausages with salad then nothing till tomorrow

Spicy food which is too hot. Nasty people who have no idea on your life journey but feel the need to comment and be cruel.
Started with black coffee and a little cream.
Bruch Salmon cucumber and tomato. 2 slices of cheese.
Later more salad and slices of lean beef.
