It made me feel a lot better about my portion sizes! Most people on the thread seem to eat a lot less than meI thought the same when I looked back at the photo. It was actually 4 skinless thighs but that closest one does look like a whole chicken - maybe a bit ambitious even for me!

You and me both! I see her 10 February. Last time I got a date the day after. I'm not that daft that they'll issue a date on a Friday afternoon but I'm praying it's no more than 1 month to the next operation as the headaches/vertigo and on off double vision is really getting to me now.I thought the same when I looked back at the photo. Hope you hear about your eye op soon.
@DJC3 I also meant to say I thought it was a couple of poussin on your plate - one butchered/one not as I knew 2 whole chicken was a big ask! Now that's a cracking good idea!Back to the subject of yesterdays chicken thighs - I took the skins off as I didn’t want them in the curry sauce, I put them on a plate in the fridge until I decided what to do with them. Serendipity decreed that I listened to a UK Low Carb podcast with Carl Franklin ( two keto dudes) this morning and he said he uses chicken skin as the wrap for spring rolls. He deep fries them but I used the airfryer to cook them. Rolled the skins round leftover brisket and h/m sauerkraut. They were fab ( right up your street I reckon @Goonergal) crispy on the outside moist and delicious inside.
Stuck indoors today, snowed in apart from taking Dennis out so there was some boredom eating. ( another thing I got from the podcast was a Japanese saying “I’m not hungry but my mouth is lonely” perfect description)
Nuts, brie, DGF cake few more nuts.
Dinner was pork loin chops with buttery cavalier nero and green beans. View attachment 58819
They look delicious. Need to find a butcher that’ll give me chicken skins, or I’ll be buying chicken for the skins and ditching the meat - can’t imagine what I’d do with skinless chicken.Back to the subject of yesterdays chicken thighs - I took the skins off as I didn’t want them in the curry sauce, I put them on a plate in the fridge until I decided what to do with them. Tuesday 17 January - bed 7 9 FBG 7.4 Another bitterly cold frosty/snowy day. Managed to get another bag of grit from Tesco as our pavements are very dodgy.
B. TAG then on return from the school runs, a piece of warmed up crustless quiche.
L Nothing
D. Having said '"Haven't seen it for ages" and discussed large portions of meat......M&S Chicken Shawarma with yoghurt dressing, lettuce, tomato and smashed avocado. CC Little chocolate pot. I couldn't finish it. It is just too much meat for 2 but it is delicious.
It's the first time I've seen it in ages in M&S.. View attachment 58820
Can you tell us a bit more?L: a tuna melt bread (tin of tuna blitzed with an egg, tablespoon seeds, pinch baking powder, cooked in microwave2 minutes) topped with cheese
I hope you checked the carbsbig bag of i ron and two bags of blood at the oncology dept to keep me going.
I use either a flat rectangular plastic box, like takeaways come in, or a for a roll shape a pot that contained ricotta or marscapone for example. Can you tell us a bit more?
What does the end result look like, what sort of container do you use to cook it in?
I don't have any experience at all with the microwaved breads because they all seem to have almond meal, which is too expensive for my tastes.
I'm interested in incorporating some seaweed (fresh or by way of nori sheets) in my diet for iodine and this seems just the think it could be added to.
Also, any ideas on using fresh seaweed are welcome!
Not sure what kind of seaweed yet, I hope to go to the sea to see what (if anything) I can find tomorrow.
