What to do with slow cooked chicken - many ways. Not all carb friendly but adaptable.I'm slow cooking the old fasion way. I guess the meat is done by now but I'm still not sure how I'm going to eat it.
The skin is rubberry so that doesn't look very tasty to me. Perhaps I need to take the chicken apart and do a quick fry before eating?
Or try to clean all the meat from the chicken and put it back in the pot to make a chicken soup?
I don't think I've ever felt this much out of my depth when cooking before!

Boiled chicken skin is not very pleasant and it doesn't really fry up very well. The dogs and cats will love it though. I would take the chicken out of the pot, it will probably pull apart quite easily so you can pull off the legs and wings and might be able to pull off the breast and back meat (there is some very good meat - not much but good) on the back of a chicken. Then it should strip from the leg bones quite easily too. I would leave it in chunks and put back in with the vegetables to eat as a stew. The wings - if they have enough taste - just suck the meat from them. It's too fiddly trying to strip meat from chicken wings. Having been boiled they may not be very tasty though. Might be OK dipped in some sort of yoghurty dressing (raita?) or a barbecue sauce. Dogs and cats would love them and our old farm cat was very keen on getting hold of cooked chicken bones, but it isn't good for them - the bones can break into sharp bits that can choke an animal.I'm slow cooking the old fasioned way. Cauliflower rice makes great fried rice. I add spring onion, peas when stir frying, butter, beaten egg, and Tamari Soy (lower in carbs). Anytime we go to the Thai, I take Cauliflower rice with me, and they cook it for me to have with our meal *I know the owner.Haha, the names
Haven’t tried that yet but up for an experiment.
Could also bulk out the base with more liquid and chunky veg and have it more as a stew on its own in a one pot. Was kinda like a west African Jolof dish before being that the rice was the main part and the chicken or another meat would be served with it, so that’s what the family is sorta expecting as is a ‘family favourite’
It’s one of those that I will need to adjust, even though I don’t expect everyone in the house to “have it my way” we can always be flexible as it’s cooking. We just separated the pots last night. They also, might like it just as much done differently too, it’s mainly in the seasoning I think, but realise there is more to it than that.
I guess there’s no requirement to have to have it with anything else really. The chicken and salad was still good on its own so I wonder if I miss the rice less than I think I do - a comfort food which I need to assess what that comfort is, and why if I don’t have it exactly the same it becomes less of a comfort, if that makes sense?
I don’t think I was really that disappointed so it’s probably nothing to do with the food itself.
Morning all. My favourite snack used to be chocolate, couldn't live without it. Now I don't touch it. I like the cheese crisps and the babybel cheeses. Today my granddaughter and I are meeting my grandson for lunch and it's definitely a carvery. I'm not changing my mind! This Omad is really working for me.
