Hi all, I'm sticking to lower carbs than usual since breaking my fast. I had Beef Broth at about 11am, followed with a small Apricot. I didn't eat again until 4rm (my last meal today) and had fried Chestnut Mushrooms with grilled bacon, grilled vine tomato and a fried egg. I had a tiny handful of Walnut, Pecan and Pistachio nuts and my first cup of coffee in over a weekWhen I took the chicken out of the fridge I realised that there was far more of it than I expected so I decided to cut it all into thick strips (3 strips from each breast) and cover them with the sauce. Wasn't entirely happy with the flavour so quartered an orange and placed that into the pan around the sides. Baked the whole lot in a moderate oven about half an hour. Very tasty. I had 2 strips of chicken with their coating - could have eaten much more, but decided I shouldn't. The rest will be packed into individual containers and put into the freezer when it is cool enough. Another time I will tweak the recipe a bit but it worked pretty well. Really needed the spices though.
I noticed you drink diet coke it’s not something I’ve ever drank but I noticed the other day (when looking for ideas of things to drink) that it seems to be zero everything. So I think I might give it a go.Hi All
So back to Sunday.
Brekkie slice LC toast, butter, copious tea.
Lunch 3 buttery scrambled eggs.
Supper Thai chicken stir fry (from the farm shop)with shards of red and yellow peppers.
Monday same brekkie.
Lunch was Tapas selection at Giggling Squid, Massaman lamb curry, two butterflied king prawns, stir fried mixed veg which was instead of the jasmine rice and the other I can’t remember but it was all delicious. I swerved the carrots in the curry! Diet Coke.
Supper was two slices of Dr Almond bread with salmon pate.
Today have just had the usual brekkie.
Lunch will a small plate of chopped salad with finger of Shropshire Blue crumbled over.
Supper will southern fried chicken breast with cauli cheese prepared by Mr P because I am having an eye injection this afternoon. Great news about your eye results @maglil55 I love it when these things really work.

What happened was that BG started to drop too far again, despite only a tiny amount of insulin. About 1 pm had peanut butter on buttered wholemeal bread. Probably about 30 g carbs. Keeping an eye on it but it might have stabilised at 6.0.BG up from 8.9 to 11.2 and rising. So, just took a correction dose and we'll see what happens. I think I will probably have to eat again today. Possibly do all the prep early on so it's not too exhausting later in the day.
Me too!! Lightly cooked with butter and seasoning, when you g they are so tender, if older need double shelling IMO.Someone sold broad beans from their garden on the roadside today.I absolutely love fresh broadbeans so I feel very lucky!
Please tell me your favourite way to eat them.

Dips and lots of bread
Meats salad and whole portion chips
Liqueur coffee
No idea what his bg is. Nurse says he's "ok"but he's cut out tea and coffee because he needs to pee a lot
The "wall" is the most difficult. Streaky should be better (more than ome slice), and I've come to the conclusion that it might be an idea to "dig a foundation" for the bacon wall but not right through. The roll should be easier to do this with. If the wall isn't secure, the egg will escape. You could use a metal cutter as a circular stand to keep it level?@Grace04 I use the app so the method for adding photos is probably different. I’m sure someone will be along soon to tell you how they do it.
Too busy for breakfast today and stupidly I went shopping just before lunch. Realised when I got home I’d bought 3 ( yes 3!) jars of nut butter. I try not to have it in the house as I can’t be trusted around it. ( ate 3 spoonfuls which is pretty restrained)
Lunch - tried for one of those airfried egg and bacon toasts @maglil55 posted a few days ago. Mine was a complete disaster! I should have cut the bottom off the roll to make it flat and used a smaller egg. The egg didn’t stay put but sort of flopped out. Tasted ok I suppose but looked ridiculous
Dinner - leftover veg from yesterday, poured cream on top and microwaved. Stirred in grated cheese and served with crispy bacon, very tasty. Montezuma’s absolute black and a few macadamia nuts afterwards. View attachment 62039
