What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: gammon steak with green beans, mangetout, brocolli and a little squirt of mayo.

 
B- Ham and cheese omelette
L- 4oz burger topped with a slice of Gouda
D- Airfried rack of Hogget, which was wonderful. I’ve never cooked it in the airfryer before but this is without doubt the best way.

@shelley262 good to see you back - your food sounds great, especially that blue cheese. I’ve never heard of it.
I’ve decided I will join in the Zoe ferments study next month. I’m missing sauerkraut etc so will definitely be going back to eating it, so might as well join the study.
 
Trying to work out my husband's way of eating, from his blood results of yesterday, he's a bit anaemic, his haemoglobin is down, but he's got haemochromatosis (his body stores iron, therefore he's got too much and it can be toxic) where his ferritin level is pretty high (800). Therefore I'm looking for a diet that encourages haemoglobin, yet is low in iron. Sounds like an oxi-moron diet! Think we've worked something out which suits both our woe, which is more chicken, turkey, pork, eggs, and green veges. We can but try!

Late breakfast of streaky bacon, fried egg, fried tomato.

Coffee and cream.

Dinner was shepherds pie (stock made from left over half leg of roast lamb), with a carrot and onion added, topping was mashed swede and cheddar cheese (hubby had his topped with mashed potato).

4 squares of 90% chocolate.

Carbs: 21.5g carbs.

Yesterday was the second day of Brussels sprouts, this time with a two egg omelet with sausage pieces. Eggs were store bought, chickens, turkeys and ducks have decided it's winter now. Except for one brave or stupid duck who's still sitting on her eggs, if they hatch, those ducklings will need some luck with the weather. The rogue turkey who got her children in the neighbour's garden is still doing well, occasionally visiting our garden as well as all of the neighbours', followed by at least 5 little turkeys still!

I had half a grapefruit for dessert, which was absolutely delicious. It did give me a short sharp rise but it came down quickly as well, must have guessed right with the insulin.

Today should have been the last of the brussels sprouts with keto fish fingers, but I had a long phonecall with a friend who told me all about her amazing holiday and then it was too late for cooking. I still had the fish fingers but instead of the sprouts I had a lc cracker with blue cheese and cucumber, and the other half of yesterdays grapefruit for dessert.
It's a lot of work to completely clean a grapefruit, but so worth it for a rare treat!

 
B: ff greek with seeds and blackberries

Visitors for lunch, so a morning of chopping. Some watermelon got into my mouth. 1st rise.
L: gammon, salad, hm coleslaw, green beans a la greque, frittata, . Did a pud of no sugar jelly with berries and yoghurt. They all scoffed that then carb eaters went for scones with my hm grape jelly and cream...I meant to have a bite but ended up eating a whole one. 2nd bg rise.
Teatime I served buttered fruit tea loaf. Had one tweeny weeny slice, but 3rd bg rise!

Evening I nibbled some cheese to try to stave of carb cravings... but then a friend gave us some banana bread!

So ended up being over 8 for about 6 hours of the day. About my worst day since diagnosis.

Back on it from now!
 
So back to Monday.
Brekkie usual slice LC toast and copious tea.
Lunch out was fishcake and salad (best choice on the menu) Was with every elderly friend and I always let her choose where we go.
Supper was roast chicken and more salad.
Tuesday usual brekkie.
Lunch was two boiled runny eggs, ramekin of strawberries and a Bath Oliver biscuit (bought for friends visit last w/e) and a topping of runny Brie type cheese.
Supper was chicken cooked in a tomato and olive sauce, one of my inventions, and tenderstem broccoli.
Yesterday usual brekkie.
Lunch repeat, am obsessed with eggs in egg cups atm.
Supper was small portion chilli mince atop cauli rice.
Today same brekkie.
Lunch will be same but different cheese.
Supper will be chunky cod fingers and green veg.
@maglil55 hope hubby is feeling better after the nasty fall. @shelley262 welcome back after hols. @DJC3 you are coming to end of month, will you be glad to give up carnivory, you’ve stuck to it so well.
 
Wednesday 27 September - bed 7.1 FBG 6.8. Had a bad time with my legs today. The puffiness has subsided, but the muscles are still agonisingly tight. I got my appointment for the Doppler scan next Wednesday, and I get my blood results about then, too.

B. TAG and I stuck with my "continental" platter. 2 slices salami, 1 chorizo, one cheese, cheese triangle, egg mayo, slice of GF toast. Got my SRSLY order in, but GF is fine for now. Benecol dairy free.

L. Nothing. I was making the boys' dinner and dealing with an upset.

D. 2 GF sausages, 1 egg, 1 slice bacon, GF Black pudding, exotic mushrooms, and 4 santini tomatoes. CC little salted caramel pot (for a change) and a couple of raspberries.

The "upset" was some silly, little first year girls thought it would be funny to knock grandson's cap off and run off with it. He was furious, but he handled it well. Gave the teacher a description of the culprits, and one of his friends was able to direct where they had gone. I am very impressed with their support area. They take no nonsense. The culprits were tracked down within the hour. They had more than one strip torn off them by the deputy head, and their parents were notified, and they were served an exclusion for the rest of the week. I can't see them trying that again.
 
Hungry day today.

Breakfast, early on because I was going out, was smoked mackerel, on its own.

Main meal is going to be some roasted vegetables with beef ragout from the freezer.

But I'm hungry now and have just had a slice of h/m ham. It was a thick slice so I'm hoping it will be enough to keep me going until it is time for my main meal.

I did make some of those carrot fries yesterday but something was wrong - they were nowhere near as good as the ones Alistair made. Edible (must have been - they didn't last long) but leaving something to be desired. Possibly I had the, not very deep, oil wrong. I did fry strips of the one carrot that I cooked in batches because I only used a small wok but I think that it may have cooled the oil down too much. I'll ask for advice and try again, sometime.

@Annb I'm sure it's the season for feeling hungry, think it's some primal instinct to get us ready for 'winter's hibernation', it's rather grey, damp and cold outside where we are in Cambs, I feel like it would be a good idea to baton down the hatches and cuddle with a duvet.

Late breakfast was 2 rashers of bacon, a fried egg, sauteed mushrooms and a couple slices of a beefsteak tomato fried.

Feeling a bit lethargic and hungry I plated up some stilton cheese, olives and almonds to nibble.

Looking forward to having Aberdeen Angus mince with Bolognese sauce and sauteed cauliflower rice for dinner.

No doubt I'll settle down in front of the TV this evening with 2 squares of 90% Lindt chocolate.
 
Fast went on slightly longer than usual. Mind you B/S still 7.8
Mare of a morning, eventually got home after lunch.
2 Americano with cream
Pork and crackling.
Smoked salmon and cream cheese.
More coffee.....

5ish hm chilli con carne and glass of red wine followed by LC brownie with decaffeinated coffee
@DJC3 I'm in too with the zoe fermented foods increase I'm doing some sauerkraut to add to my kimchi and yoghurt.

I started off some sauerkraut yesterday in readiness too. I’m still making yoghurt but I’ve started drinking Chuckling Goat Kefir too. It is really strange tasting, like fizzy parmesan!! I’m getting addicted to it weirdly.
 
Black coffee and water all morning apart from pinching a slice of packet ham from daughter’s fridge. We were round there decorating granddaughters bedroom.
Lunch was kippers and poached eggs. Haven’t had either for years.
D- Massive carnivore feast. Flash fried Minute steak topped with fried egg, ‘clean’ burger from local farm ( just mince and salt) topped with cheese and a slab of grilled Halloumi. Feeling very full now but not bloated or uncomfortable.
@PenguinMum good to see you back, I love an egg in an egg cup too. I’m looking forward to having some veg at the end of the month but it’s not been as hard as I thought. I’ve learned some things about triggers for me, which has been v useful. I would do it again as a reset every now and then if needed.
@JenniferM55 good luck navigating your way between yours and your husbands different food requirements. A few years ago when one of my daughters was still at home, she was trying a FODMAP system to try to control IBS, it was quite tricky to cook family meals which suited her as well as lc.
 
Evening all

Today:

B: Two poached eggs smothered with butter, slices of avocado and tiger prawns, all seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Mushroom and spinach frittata made with eggs, extra mature Cheddar, leeks, double cream and oregano.
Salad using chicory, sweet cicely, celery, mint, Kalamata olives and salad onions, dressed with an olive oil, garlic and balsamic vinaigrette, topped with roasted macadamia nuts.
Skipped pudding
Water to drink.

D: Seafood salad made with brown shrimps, king prawns, lettuce, baby plum tomatoes, celery, Halkidiki olives and Welsh onions dressed with home-made mayonnaise, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.

Hi guys hope you don't mind me poking my nose in here!

Can I be nosy and ask roughly how many carbs a day you all eat? I'm eating around 50g a day but looking at the food you all eat it makes me think that maybe I should be aiming lower?

I did try keto for my first 3 months after diagnosis but absolutely hated it and felt terrible so have settled for what I thought was low carb but now I'm now so sure.

Also, what do the initials 'hm' mean that you put before food? I'm guessing lc means low carb!
 
The quick answer is that most of us "eat to our meter". In other words we've found out over time what our individual bodies can tolerate and worked that in to our lives. Me, for example I'd like my bg and my weight to be a little lower but I also have a family to feed and a life that is both stressful and socialable! I stopped counting carbs about 6 months in and just keep clear of them (mostly).
Different individuals will have different amounts of carbs, but most of us would say we are low carb, I think.
What does your bg meter tell you? Is your bg happy at 50g a day?

Like @MrsA2 said, your meter will tell you how many carbs you can handle.
Anything below 150 grams a day is considered low carb according to many sources, but it's highly individual how we react to carbs.

And it also depends on what kind of medication we're on, if any.
For myself, I'm a T1 (insulin dependent), and I found eating high carb meals makes managing my diabetes way more difficult than low carb so I eat low carb most of the time.
But I did work out how to dose and time my insulin perfectly for two craft beers a night, which would be impossible for diet controlled T2's.

It all depends on your own individual metabolism and treatment.
 
Since doing low carb I'm feeling full and not wanting to snack at all.

Lunch was cooked chicken thighs from last nights meal and 4 hard boiled eggs.

Dinner was chicken stir-fry and then yoghurt with berries and drunk over 3 litres of water, 2 black coffees and 1 can of diet coke.
