Evening all

Today:

B: Two poached eggs and scallops, asparagus spears with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Tuna steaks rolled in finely chopped celery and thyme, baked with red peppers and mushrooms, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans with a knob of butter.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, baby plum tomatoes, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to swallow tablets.

Think I'll draw a line under yesterday, food wise of course. I did have a non-too-small slice of 80th birthday cake (how could I not?), sister-in-law had made an amazing footie themed one (John's football crackers). Eating wise I was all over the place. I did take a BG finger prick reading when every one had left and surprisingly I was still 'in range'. Thank you for your good wishes x.

Now firmly back on the low-carb horse.

So back to Friday.
Brekkie was usual slice LC toast, thick cold butter, copious tea.
Late lunch at Nandos, 4 Plainish chicken thighs (added a pool of Lemon & Herb sauce with tenderstem broccoli and rainbow slaw. Just wonderful. I don’t know why some of my friends turn their nose up at Nandos! I love hot chicken not so much cold chicken.
Supper was merely salami, Serrano ham, olives, hummous (toasted pitta strips for Mr P. A couple of Sevilla gin & sodas.
Yesterday same brekkie.
Lunch was ‘tapas selection’ at Giggling Squid Thai restaurant to celebrate friend’s 60th birthday. Mine was salt & pepper squid, small duck spring roll, Lamb Massaman curry and stir fried veg swap for rice. It was the best I could find and very tasty, and all small amounts so not overwhelming.
Supper was Indian t/a which. Mr P had his heart set on. For me cauli bhajee with Tandoori King Prawns (sadly they only sent 3 instead of the usual 5).
Today brekkie has been the same.
Lunch will be scrambled eggs with grated Parmesan.
Supper will be Peking duck with shredded cucumber & spring onion and drizzle of the sauce in a Sainsbury high protein wrap (4g carbs).
Might preface that with a gin & soda if I feel like it.

For lunch I made a Khao Soi Thai curry, with prawns, mushrooms, red peppers and broccoli, accompanied by cauliflower rice.

Slept in this morning because I'd stayed up late struggling with an issue on a family history website. Still very sleepy and groggy for some reason. Also for some reason BG was back in the 9's this morning. Easy breakfast was RyVita and cheese but despite a pretty hefty dose of insulin, it still stayed up. Dozed off again and Libre just woke me to tell me it was 10.9. Maybe there's some reason, other than a late night, for feeling so sleepy and groggy.

2nd meal is already made - salmon in a lemon and cream sauce. Meantime, must get some more fluids on board - that might be part of the problem.

Breakfast before going out for day small kefir then one slice of bacon, one egg, a couple of mushrooms and LC toast then put beef casserole in slow cooker
Just black coffee while out

Dinner beef casserole from slow cooker and generous portion of cauliflower cheese and two glasses of red wine then a few berries and yoghurt

Travelled back home from London to Cornwall today, weather getting gradually more grey and drizzly the further we went. 1 cup of coffee before we left but I wasn’t allowed to drink any in the car as daughter had a migraine and the smell of it affected her.
Stopped for a comfort break and I grabbed a pack of pastrami and some nuts from M&S ( still no coffee )
Finally home and v hungry so after shopping and collecting Dennis I nibbled on cheese, Montezuma’s chocolate and a DGF ginger cookie while making dinner.
Dinner was chicken stroganoff with broccoli and a glass of Malbec
Got the woodburner blazing and looking forward to my own bed tonight.

Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of thyme and garlic, drizzled with olive oil.
A medley of baked broccoli, leeks, onions, garlic and sweet red peppers topped with a knob of butter.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, hard boiled quail's eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.

2 scrambled eggs with ham
Walk
Then it gets bitty as at a family wake
Some cold chicken
A few chips
Half a scone with clotted cream
1 tiny cup cake
The ham and beef from inside sandwiches (threw bread away)
More cold chicken.
Cheese crisps
(I did avoid a lot of the beige carbs on offer)

It all merged together over 6 hours along with 2 glasses white wine and soda then a brandy when back home
Oh, and some coffee ice cream.

Emotionally and physically scattered

Late breakfast was 2 slices of back bacon, a fried egg, and slice of sourdough bread well buttered.

Dinner was a steak and onion pie using the 'low carb all-purpose flour' recipe that has chicken flour, to make the pastry. As the pastry wasn't a success last time I made it, I thought I'd try adding an egg this time. It still wasn't a success, in fact I couldn't eat it. I'm so annoyed with myself for trying these low fat recipes, and wasting good food and money. There's not a recipe that comes to mind where I think it's been successful as a low carb version of the 'real thing'. Had sauteed mushrooms and broccoli with the pie filling.

Still, the failed shortcrust does make rather good dog biscuits, our Rusty loved the pastry!

It was a limited edition curry kit from Aldi. It tasted really nice, but was a bit too watery.
Well, at least you can be sure no carby thickeners were added. Thai cooks have a habit of using cornflour to thicken stock.

Could you thicken it yourself with coconut milk, perhaps? Would that work with the other ingredients?

The kit came with a pouch of coconut milk. I think that Thai curries are quite watery. It even said to add water, but I didn't.
