What have you eaten today? (Low carb forum)

We had T Bone steaks last nigh for dinner, I had two medium size low carb spud lites, broccoli with a tomato and mushroom gravy.

Breakfast just now, was a corned beef and salad sandwich.

Yesterday was the usual small porridge for breakfast, homemade soup for lunch ( veg and tomato) and then chicken korma with cauliflower and broccoli for dinner, I'll admit I prefer curry hotter and spicier than that, but it was in the freezer ready made.

We won't be having dinner until late this evening so I actually had breakfast this morning!!!

Brunch - porridge with the usual additions, brunch because it was well below freezing here and I didn't get up until later than usual ;)
Dinner - a quick sausage casserole made with Asda's extra special chipolatas, a tin of ratatouille, an onion and some extra green pepper, served with a mix of broccoli and cauli and a couple of baby carrots. Followed by some greek yoghurt and a few berries.

It makes a fairly quick and tasty meal, put the oven on and put the sausages in to brown (and get rid of some of the fat), meanwhile peel and chop the onion and garlic (if you like it) and chop the pepper. Then brown the onions and garlic in the casserole dish with a bit of butter, add the peppers, cut the sausages in half and add to the casserole dish, pour over the tin of ratatouille and a small amount of water, black pepper it and bung it back in the oven for at least 40 mins. Serves a reasonable portion for 4.

Mr G and his mum had a couple of small potatoes each as a weekend treat and I had extra broccoli. If you prefer things spicier with a bit of a nip, I sometimes add a bit of piripiri sauce.
