Breakfast: An avocado with a sprinkle of sea salt
Lunch: Can't make up my mind - could be another avocado.... maybe in a lettuce wrap.
Dinner: Low carb sloppy joes and salad - and maybe a drizzle of soured cream and/or a sprinkle of grated cheese

That's just what I was thinking about - the Olympic breakfast. Was too big for me but I loved little chef breakfasts. In my travelling days they were a frequent haunt - much better than the motorway service stations. The DD tuna melt is delicious and what a plateful! I got 6 Oopsie out of the mix. Odd texture because it is similar to a whisked sponge which I have made many times. Light and sponge like but with a savoury taste. I used a large serving spoon to portion the Oopsie batter and 6 gave you a decent size. I put 2 per baking sheet and cooked in 2 batches. 25 mins is about right.OK things are holding up well so far - still haven't got over going to bed on 6.4 and getting up to 7.3. Bigger shock was it dropping to 6.7 pre breakfast. It's not done much today - dotting about between 6.8 and 7.3 but at least it is lower than the past few days. Anyway
B. My favourite 2 scrambled eggs with parsley and 2 rashers crispy streaky bacon with black coffee with a dash of cream.
