What have you eaten today? (Low carb forum)

Yesterday:

D: Atlantic Cod Fillet w/Cheesey Prawn Sauce
Cauliflower Mash, Broccolini & Green Beans
S: Diet Jelly w/Peaches & Raspberries

Made a sauce for the fish with some sourcream and parmesan cheese melted in frypan .. very tasty indeed.

Today:

B: Raw Apple & Walnut Muesli w/Ground Flax & Raspberries
Diluted Cream
Creamy Coffee
S: Cheese Chunks & Green Olives
L: Low Carb Sandwich (2 x bread 5g carbs) w/Olive Butter, Tomato & Avocado
Creamy Coffee
D: Diet Doctor Crackslaw w/Lettuce, Tomatoes, Onion, Avocado & Olive Oil
S: Diet Jelly w/Mixed Berries

My first taste of Crackslaw .. in the oven as I type. Hope it's all it's cracked up to be, no pun intended :-)

The sloppy joes were very nice and very filling. My criticisms are that the rolls needed much longer in the oven than the recipe says (or maybe turn the oven up a bit) and the meaty sauce could have done with a) more chilli heat and b) much less fat. Next time (and there will be a next time) I won't put in extra fat to fry off the onion and garlic, I'll just put them in when browning the mince.

The rolls would be great for having as a proper burger bun - I put sesame seeds on top

This is just me being picky though because it was a lovely and 'normal' enough for Mr C.

I've come to that conclusion that DD recipes require slight adjustment. I haven't been cooking the veggies in butter. I prefer to steam them and if I really want a touch of butter then I'll add a tiny bit when it's on the plate but I much prefer to use seasoning of different types. I get the need for fat to be there but I am going into fat overload. Much as I like creamy sauces too sometimes I just like some plain food. As you have probable noticed from yesterday the tuna melts were great but again way too much mayo - less than half their amount was more than enough. Love their recipes though.

Yes, much too much fat for me (and Mr C, as you know, has been struggling with the cream). I think the idea is for us to fill up on fat but if we are okay with less then best to go with what our tummies are telling us.

There's mayo in this pie tonight which I shall probably reduce by half and sub the missing half with some spare soured cream I have. (I think we are keeping Hellman's in business.)

Yes, I love their recipes - things I thought that had gone forever (like bread rolls, garlic bread and pies) are now back on the menu. :)
 
Breakfast - 2 boiled eggs

Lunch - salad (baby spinach, rocket, cherry tomatoes, radish), feta cheese, Parmesan

Dinner - about to have chicken leg with roasted red pepper, courgette and onion.

Life wouldn't be the same without the option of a pomegranate pot later. :)
 
Still battling the reading but to my extreme despair it seem coffee is the culprit. Will try tomorrow morning with no coffee but I may have to check this more than once to be sure. Bed on 6.3 up to 7.6 had a coffee and got to 8.7 before breakfast.
B. 2 scrambled eggs with parsley and 2 rashers crispy streaky bacon plus a chestnut mushroom. Coffee with a dash of cream pre breakfast.
L. Heaven!! A sandwich 2 bits of Oopsie bread I made yesterday spread with a tsp of Helmanns on each bit. Filled with lettuce (mixed leaves) one sliced cherry tomatoes and a slice of thin ham. It was truly awesome!! Had water with this as I'd had a coffee and hour before and yes it put my BG up again.
D. Air fried chicken thigh and drumstick with steamed greens
 
Breakfast was porridge

Morning snack was 5 small roast chicken drumsticks

Lunch was tongue and tomatoes

Dinner was Steamed salmon fillets (2) and veggies

Late snack will be some ham and yogurt.
 
L: Frikadalen got carried away and ate all 5 :p BG @ 2hr was 5.5
D: Salad, Feta, Stilton, olives

Hadn't considered that coffee might be an issue, hope not, 4 wines before lunch appears problematic

Tried the walnut keto fudge finally - yum!! But my husband hasn't quite got the idea of portion control yet... I know with lchf you eat till you're full but I'm a lot more likely to keep going with a ton of fudge in front of me! :(

I tried the DD crackslaw last night and it said to cook the mince in butter. I'd already cooked the cabbage in butter and olive oil so didn't add more butter. What with the cheese added too ... it enjoyed it but it was rather oily so I hear what you're saying. You can have too much of a good thing!

Irish Stew was my favourite school dinner in England, followed the gypsy tart if poss :-)
