What have you eaten today? (Low carb forum)

Just finished the leftover Chilli Con Carne from last nights dinner, a nice and "hot" breakfast.

Omelettes for lunch.

Chook breasts and vegies for dinner tonight.


The forum is playing up something terrible today, 503 errors, slow loading / refreshing, triple posts etc. :meh:

Quite a scary few days away in Carb land, glad I didnt have a meter with me.
A bit more sensible today

B: Yogurt, cheese and ham
D: Chicken breast stuffed with mascapone cheese and leeks, wrapped in bacon with brocolli and a small amount of dauphinoise pots

4.8 after 2 hrs

yesterday's nosh was -

breakfast - a bowl of porridge made with water and finished with almond milk and ground flax seed.
late lunch - 3 rashers of bacon, 2 medium farm eggs and some mushrooms.
supper - homemade chicken and curried veg soup.
 
B: none
L: pizza puree (yum!)
D: diectdoc baked sausages and masses of Mediterranean veg.

Oh, and a sneaky low carb chocolate chia muffin. They don't blip my bg, esp when taken with cream :wacky: but I don't feel quite right after eating them. Haven't had indigestion for ages (since I gave up gluten) but there is something about these... can't quite bring myself to throw them away, but will be glad when I get back to my other home baking recipes.
 
Goodness, I have had huge problems getting on to this forum - all day yesterday and part this morning!!

Yesterday ....

Breakfast: Bacon stuffed Lidl Protein Roll and creamy coffee

Lunch: (after shopping in M&S) - chargrilled squid with cracked black pepper, a crab mousse (very nice) and an olive, sundried tomato and artichoke heart mixture (it was a three containers for £7 deal which me and Mr C shared).

Dinner: My own concoction based on a lamb tagine - lamb, aubergine, red pepper, green olives, sliced lemon, lots of garlic, couple of tablespoons of tomato puree and some white wine plus some Moroccan seasoning. Cooked low for three hours. Served with cauli rice fried in olive oil with garlic and coriander

@Lesleywoo - low carb cranberry sauce is nothing special - just cranberries (fresh or frozen) microwaved with sweetener (I use Splenda because I like the taste) and a quarter teaspoon of cinnamon and (if possible) a pinch of ground cloves. Just microwave until the berries have popped, allow it to cool and enjoy. It freezes well.

Today....

Breakfast and lunch: fasting (I WILL bring this blummin BG down... if it kills me....)

Dinner: Chicken thighs done in the slow cooked with fajita spices then shredded and served with diet doctor low carb tortillas, grated cheese, sour cream, (avocado with tomato) guacamole and a bit of diced onion

I'm not going to comment about what you had for dinner..... ;)
 
Breakfast - mini frittata (eggs, cream, bacon, onion, cheese)

Lunch - sea bass fillet, broccoli (ate out, but obviously agreed with me as BS went down from 5.9 pre-meal to 5.0 two hours later)

Dinner - tuna mayo, rocket, 6 baby plum tomatoes; dessert sugar free jelly mixed with cream
 
B - Cheese omelette
L - 1/2 Lidl roll heavily buttered 1/2 avocado smoked salmon
D - Pork chop, green beans, mushrooms and cauli rice
 
Well I still have a lurking bug but the BG is showing signs of falling. Bed on 7.3 up to 7.5. At dentist this morning so just the fasting reading as I had breakfast very quickly - just scrambled eggs.
B. 2 scrambled eggs with a little double cream.
L. DD trout and chilli with salad and Helmanns- the extra portion from yesterday.1 square Lindt 90% Excellence Chocolate. Weirdly my BG dropped to 5.8.
D. Something I just made up.
Chicken breast strips. Cut up aubergine, asperagus, onion, red and yellow pepper, mini portobello mushrooms, cauliflower slices and green beans. Stir fried in butter and olive oil. Put in a Pyrex dish and made a sauce with hot sauce, broccoli rice, cream and red pesto. Added sauce on top , covered in cheese and popped it in the oven. Came out rather tasty and still enough for tomorrow. Need to work out nutritional information for it.
Still just on water.

Never thought about that @Chook we are so used to calling chicken chook and forgot about your name. I will not mention your mammary tissue at all.

What a decadent menu! I always feel my food is so unimaginative compared to everyone else's. I will def make the cran sauce. I love it with a roast chicken dinner, along with some horseradish.

No movement on the FBG front but start point still a bit high. Still not 100% though. Bed on 7.9 and FBG also 7.9. Between the school run and breakfast I reached 8.3 so a DP of 0.4 is not bad but less than happy with 8.3. As usual it started to drop after breakfast.
B. 2 scrambled eggs with parsley and a dash of cream and 2 rashers crispy streaky bacon. 2 mini portobello mushroom.
L. Nothing apart from water
D salad of 1 small avocado , 3 cherry tomatoes, sweet and crunchy salad, Helmanns, 9 skinny steamed asparagus spears and Diet Doctor Chilli salmon (but I make it with trout fillets).

I love this recipe. Tomorrow I will have the second one for lunch as it is as tasty cold as it is hot.
I will have to try that DD chilli salmon you guys are talking about :-)
