What have you eaten today? (Low carb forum)

Evening.

Breakfast - none

Lunch - Lidl protein roll with butter and almond butter

Dinner - 2 Waitrose free range pork sausages, 2 rashers bacon, 1 fried egg. One square Willies Cacao 100% Absolute Gold. Bought the sausages when they were on offer (12 for £2.50). Not as nice as my usual Cumberland sausages in the same range.

Started day ok not hungry but much hungrier this evening,
Breakfast flat white coffee and inulin
Lunch small amount celery and last of weekends mackerel pate
Dinner venison slow cooked casserole with cauliflower cheese
Pudding one portion of lemon and lime mousse made with sugar free lemon and lime sugar free jelly dissolved in half a pint of boiling water. A couple of spoons of fresh lemon and lime juice and half pint cream whisked in made 8 portions delicious
Cup of coffee and then tempted by one square of Lindt 95% choc

If sausages not as tasty and you’ve got a lot of them you could take skins off a couple of them at a time mix in bowl with some extra herbs/spices and do homemade pork burgers, or fry as a flat sausage patty Like McDonald’s!, or make meatballs or use as a pizza topping.i often use plain sausages for some recipes wh3n good quality pork like the Waitrose ones.

Ooh. I could make a sausage and egg muffin using a Lidl roll.
 
I've made a decision to give up all artificial sweeteners for a week. Anybody else done this? Was your brain going mad?

When I was first diagnosed I quit Diet Coke for 4 weeks as I was totally addicted (several cans a day) and didn’t allow myself anything resembling a dessert for a few months. Am sure this helped with cravings and getting my sugars under control.

Testing has shown me that Diet Coke and other things with sweeteners don’t spike me so they’re now back on the menu - this way of eating has to be enjoyable to be sustainable. When I’m cooking for myself I use erythritol, which is a natural sweetener.

I didn’t do artificial sweetners for first four months to try and change my taste buds only started using them for recipes in last month ish. I just stuck to my 100% chocolate and even cut out diet tonic switching to soda water instead. Enjoying having them back but think it’s a personal choice/ decision and they don’t seem to affect my bgs but they were low when reintroduced sweetners good luck with whatever you try out - it’s a bit of a personal experiment. Like @Goonergal i use erythritol

I was thinking that too, but I'd only have it as a side dish anyway I think.

I usually have cauli. cheese as a side dish. I make a simpler version - just use par boiled cauli, add some double cream (just a little for moisture), top with plenty of grated cheese, with a bit of added Parmesan for a crisp top. That and buttered cabbage are my two favourite veggies of the moment.

I’m still doing it this way too using your recipe it’s so easy and can also be done with cauliflower I’ve frozen and defrosted.
 
Good morning all.

Monday ...

Breakfast: Two double espressos with cream and xylitol. Half a DD keto roll with chicken liver pate.

Lunch: Roasted vegetables (bellpepper, eggplant, zucchini, mushrooms and garlic with olive oil), a tablespoon of hummus, about 75g of Greek yoghurt and two scrambled eggs).

Dinner: A wiener sausage with low-carb ketchup, low-carb barbeque sauce, and mustard. A piece of low-carb cheesecake. Some more of the roasted vegetables.

@suehatton -- I gave up sugar and sweeteners for the first few months (as I don't like the taste of artificial sweeteners and didn't want to have sugar). Then I discovered xylitol, which is, like erythritol, a sugar alcohol. Since then I have been using a small teaspoon in my coffee and also use it in baking. Lately, I have been trying erythritol -- still trying to decide whether I like it better than xylitol. Good luck on your experiment.
