I've made myself a little rule. I can only have chocolate at home, at night and once or possibly twice a weekAgreed. I use Montezuma’s and also Willie’s Pure Gold 100% or Hotel Chocolat 100% buttons as my regular stocks at home. The Lindt is more readily available when out and about, but becoming too easy to over eat it, so will have to resist.
Life is too short for this rule for me! Hotel choc buttons are so low carb I find I can have 2 of them with no impact and they help me deal with need for something sweet they would be my minimum choc on a strict day! Been reading up on using IP to slow cook. The reckoning seems to be that the middle "normal" is the equivalent of low on a slow cooker. The low or less is the equivalent of keep warm. Might require some experimentation. Oh and the vent should be set to the left or right.OX CHEEKS
Sear first on a high heat for less than two minutes.
Take them out.
Add HALF table spoon of sugar substitute , thyme. Chopped up celery and carrots then a healthy dose of red wine to deglaze the pan.
Put all of that in the bag with the ox cheeks. Seal bag and then cooked in sous vide at 83c for about 7 hours. You could slow cook in water with it in a sealed bag too or slow cook in IP.
Need to take them out at the end put the juice and wine through a sieve then boil on a high heat to make the red wine reduction.
Plate pour then serve.

It was a delicious accident, was going to use butter.....which would have been good but then realised I had some bacon fat begging to be used! Very filling tooThat sounds good! Will give it a try.

If not processed (canned), sauerkraut is better for you because of the probiotics. Nutritionally, slightly lower carbs. I eat a lot of cruciferous vegetables so do not suffer from "intestinal issues".Sounds pretty tasty, Lou. I wass wondering, what is the difference between sauerkraut and cabbage on the gastro intestinal system? Is sauerkraut easier on the tummy or are you more likely to run to the "facilities"?
