What have you eaten today? (Low carb forum)

It is kind of shakshuka-esque, but obviously different proportions to avoid too much beef.

That pie you made sounds great!
It looks much as I pictured although I think in my mind it was square with a hole for the egg. That looks better.
Only just got both boys off to sleep so relaxing now. Wee one has gone through full repertoire- wee, water, monsters, too hot, poo, more water......
I've made that pot pie before. It's a strange topping but in a nice way. If you cook it with the top on it comes out kind of crumbly as it soaks up the sauce. Cooking it separate it was a more spongy texture. Liked the filling done in the IP. As I said I added chopped up sausages (browned first), halved button mushrooms and fresh peas. Another variation I've done before is to use Campbell's condensed mushroom soup rather than cream to sauce it.
Suspect we might have it tomorrow too as I still have a lot of filling.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream, washed down with a white coffee.
Lunch: ‘Skinny Café’ low carb pancake with bacon and sf maple syrup, followed by Greek yoghurt and raspberries.
Mid afternoon: Hartleys 10cal jelly and black coffee.
Dinner (at the local Hungry Horse): two plain chicken skewers on a bed of stir fried veg with lemon and garlic sauce on the side (I just ate a tiny bit in case of hidden sugars), coleslaw, and a side salad. Followed by low carb carrot cake and double cream when we got home.
(I have been posting in another thread entitled ‘Type 2s What have you eaten today?’, but I think I’m defecting here as I feel more at home in a low carb thread. :))

And just reporting back on the Hotel Chocolat tea. It’s delicious! Had it with a slug of double cream. Not quite hot chocolate but a definite hint of it and zero carbs. Too expensive to drink every day but a keeper.

@Brunneria your corned beef dish is on my menu for lunch.
 
Bed 6.1 FBG 5.8 and staying stable. Still no DP which is good.
B. Tassimo Americano grande with a dash of cream. (2 grandsons to feed and get ready)
L. I kind of "Mexicanised" @Brunneria's cheesy corned beef thingy. See below.
D. Leftover chicken pot pie. I have another helping of the low carb topping plus loads of filling. Will have spinach with it today. I think a wee prosecco is required too.
Anyway , the cheesy corned beef thingy. I have mini frying pans I bought in Lidl so this is single person helpings. Softened 1 clove chopped garlic , tablespoon chopped onion, 2 tablespoons chopped yellow pepper, paprika and chilli powder in the mini pan with flora cuisine. Once softened, added 4 chopped Santini tomatoes and 2 slices chopped up corned beef. Check seasoning.
Once it combines (only a couple of minutes) make a well in the middle and tip in a whole raw egg. Return to the heat until you see the white begins to cook. Add a small swirl of cream and put under a hot grill until the egg is done to your liking. Remove, sprinkle over grated mozzarella and return to the grill to melt. Sprinkle with parsley and serve.
By my calculations it is 245 calories and 8.5g carbs.
It won't let me send a photo of it - says file is too large. Will try another way.
 
Just back to low carbing...was stupid and went off plan after a twisted bowel op left me feeling scared. Lost 1st 10lbs since Jan....yesterday:
B - Coffee with 1tbs d. cream and 5mls Onnit emulsified coconut oil
L - Out with family at Pizza Express.....went for the Antipasto and family ate all the carby bits
D - Cheese omelette with two frankfurters

Trying to keep carbs around 15 or less daily.

Seen some great dishes here to inspire me for the coming weeks, thanks everyone

Ate a lot today.

Lunch was @Brunneria ’s corned beef dish. I used 100g corned beef, a small amount of onion and 2 eggs, topped with a little cheese. Very tasty.

Dinner was at the Carabao cup final and didn’t help to soften the blow of Arsenal’s abject performance. Lidl protein roll with butter and almond butter and 1 square of Willie’s Cacao Pure Gold 100% chocolate.

Was frozen solid at the match so made a low carb hot chocolate when I got home - mixed cream with almond milk, cocoa and erythritol. Still haven’t perfected the recipe but hit the spot. Used it to wash down a bag of pork crunch.

L - 2 frankfurters fried in butter and another coffee with cream
D - A new find......Sainsbury's King Prawn and Queen Scallops in a lobster cream sauce....it was sooo tasty, small portion but worth the 5.9 carbs any day, added a couple of parmesan crisps on the side to help scoop up the sauce.
Hartleys Key Lime Pie sugar free jelly with...yup, more cream!

Full and satisfied heading off to bed!
 
Today I was on the road, then a guest.
I am playing The Veg Dodger’s Gippy Tummy Card.
Seems to be working v well!

9am coffeesubstitute and cream, then another in the car
1pm a bunless burger with bacon and cheese. The waitress was so horrified that I didn’t want chips she volunteered a salad, but it was scarily green ;) and covered with unripe tomato and raw onion, so it stayed on the plate.
7pm oxcheeks. Need to ask my butcher if he will do them. They were delicious!

I love hot choc with watered down cream and melted 100% buttons. This weather makes us hungry shame it’s going to be so cold this week we need spring!

Lunch after a cold walk to see snowdrops was a cheese and mushroom omlette
Dinner pork belly roast with cauliflower cheese and braised celery, pudding raspberry mousse made with cream, raspberries and sugar free jelly whisked together.
Glass of red wine this evening and now about to have decaf coffee with a few hotel choc 100% buttons before bed it’s that or hot choc ......

Never heard of that sugar free jelly must find it it sounds delicious

Lunch: roast chicken, cauliflower, brocolli and carrots, gravy and celeriac ‘roasties’. 3 x squares of Green & Blacks burnt toffee dark chocolate.
Mid afternoon: Hartleys 10cal jelly and black coffee.
Dinner buffet tea at ILs, cheese, cold meats salad and one Jaffa cake.

Hi Shelley.....if you are in the UK it is ready made in pots....approx 10 cals and no carbs....they also do a lemon cheesecake flavour....both nice on their own but much better with cream!
I am lucky that the sweetener doesn't stall me and these are really the only thing I have them in so a couple a week are a real treat.

That’s the Jellies I eat, the lemon cheesecake flavour is my favourite one :hungry:

Thank you yes I live in Worcestershire will look them out I’m ok with sweetner too and normally use sachets to make own sugar free jelly whisked with cream these would be good to have in fridge as a ready made

You don’t have to keep them in the fridge if you don’t want to! ;)
