Breakfast, my ususual coffe with cream and Onnit MCT
Lunch was courgetti fried in bacon fat with garlic salt
Dinner - Beef brisket, slow cooked and served with buttered asparagus.....hoping to break my two week stall soon so may shake things up menu wise tomorrow.

Stay warm everyone...even here on the south coast of england it is cold! ❄️⛄

9am chunk of mature cheddar, and yes, for the first time ever i spread a little butter on it. Shocking!
11am 2 gf sausages (cold)
7pm a pub mixed grill with 5 chips

Am stuffed. Hope i sleep. Lol

Agreed. I use Montezuma’s and also Willie’s Pure Gold 100% or Hotel Chocolat 100% buttons as my regular stocks at home. The Lindt is more readily available when out and about, but becoming too easy to over eat it, so will have to resist.
I've made myself a little rule. I can only have chocolate at home, at night and once or possibly twice a week

Life is too short for this rule for me! Hotel choc buttons are so low carb I find I can have 2 of them with no impact and they help me deal with need for something sweet they would be my minimum choc on a strict day! Agree though that less than 100% choc is too tempting and can eat too much.

Sear first on a high heat for less than two minutes.

Take them out.

Add HALF table spoon of sugar substitute , thyme. Chopped up celery and carrots then a healthy dose of red wine to deglaze the pan.

Put all of that in the bag with the ox cheeks. Seal bag and then cooked in sous vide at 83c for about 7 hours. You could slow cook in water with it in a sealed bag too or slow cook in IP.

Need to take them out at the end put the juice and wine through a sieve then boil on a high heat to make the red wine reduction.

Plate pour then serve.

When I use the cauldron for cheeks, I use the pressure cooker function. I go for meat setting, then add a bit of time on - maybe an extra 5 minutes, but I also always leave them on Keep Warm for an age when done. I find it so convenient to cook when I feel like it, rather than necessarily at meal time. I'm fairly certain I'll have a second pot soon. I rather fancy a mini.

In order to stick with the thread:

Breakfast: A couple of coffees with cream (I've gone off my Greek yoghurt for a while)
Lunch: Massive salad with plenty Hellmans
Dinner: A large gammon steak from the butcher (I very almost achieved crackling on it), veggies, then SF Jelly with cream.

Looking at it like that, I've probably not eaten enough today.

There's a link on that diet doctor page to the 2 week low carb challenge. I found it really got you into the way of low carb eating and the food is so good. If anything it was too much food.
What was good about it was it gives you the shopping lists and it was a once a day cook since what you had for dinner was also lunch the next day. Since I did the challenge they have made it possible to delete and swap recipes so it is very flexible now.

It was a delicious accident, was going to use butter.....which would have been good but then realised I had some bacon fat begging to be used! Very filling too

I did an online shop last night and have included some lardons and garlic salt so I can try it next week.

Bed 6.8 FBG 6.2. Full scale blizzard today so glad I stocked up to Saturday yesterday.
B. 1/2 lidl high protein roll with cheese savoury. Tassimo Americano grande with a dash of cream.
L. Slice roast beef and slice ham.
D. Chicken breast stuffed with haggis and celeriac chips. Steamed brussel sprouts.

May have been a wee beasties yesterday but it isn't today. Schools and nurseries closed , roads a shambles. Never left the house today and it's a blizzard again. I have memories of walking to school/work in conditions like this.

Sounds pretty tasty, Lou. I wass wondering, what is the difference between sauerkraut and cabbage on the gastro intestinal system? Is sauerkraut easier on the tummy or are you more likely to run to the "facilities"?
If not processed (canned), sauerkraut is better for you because of the probiotics. Nutritionally, slightly lower carbs. I eat a lot of cruciferous vegetables so do not suffer from "intestinal issues".

I guess I should add
B- coffee with cream, 2 egg omelette with cheese, piece is sausage, 6 grape tomatoes
L- stole 3 perogies with sour cream off husbands plate (bad, has carbs).

D- will be chicken breast with salad.

Argh, and it's only noon so will likely be more food. Good thing I don't snack after dinner.
