Hi all, holiday over so back to normal from tomorrow. Hoping that when I step on the scales I won’t be too shocked or disappointed as for the majority of my hols I was able to eat fairly low carb, I did indulge in dessert most evenings but they were bite size portions and I did take my monitor with me and readings seemed to match those I generally see, there was a low 4.3 one day and a high 7.2 but otherwise they were around my average of mid to high 5’s and low 6’s. Breakfasts were easiest to stay in track with which I hope helped me to stay on track.
I must say I’ve missed keeping up with everyone’s food diaries and have been trying to catch up to make sure I haven’t missed any great tips like the salami microwave crisps
It's a Tom Kerridge thing with the turkey escalopes. He used sesame seeds, coconut flour , onion flakes and parmesan. I used well ground pork scratchings, parmesan and parsley. Turkey escalope had been soaking in buttermilk all afternoon. I dusted it with coconut flour , dipped it in beaten egg then into the crumb mix. Popped it back in the fridge covered with cling film for about an hour then repeated the egg then crumb bit and just kept it in the fridge until it was time to fry it.
I found with the salty pork scratching you really don't need the onion salt or seasoning.
Amazingly , after lurking about the low 8's my BGs have dropped into the 5's after eating this. It's really tasty.
So today I've had a wetherspoons breakfast but swapped hash browns for bacon & I gave my friend my toast, having salmon salad for lunch & I have a chilli for tea, going to take out the kidney beans out of my portion I think. I am working tomorrow so inspired by the snack ideas im going to take some chorizo crisps & cream cheese to keep me going overnight! Is the 90% Lindt chocolate ok for a treat? I work with people with epilepsy & I have cared for people in the past on the keto diet so I think there should be a few recipes at work!
I had a lovely time thank you and yes I was pleased with my numbers, it was fairly easy to maintain low carb especially at breakfast time. I used to think it was so strange to see cold meats and cheese on breakfast buffets, now knowing what I do with regards to diet and low carb I love it, had lovely omelettes, bacon, sausage and mushrooms to choose from too. Lunch and evening meals were made up of fresh salads, meat and mayonnaise, I had a very thin slice of pizza twice over the week and had a selection of the desserts as they were all bite size or you could cut your own slice and I added fresh Greek yoghurt to make them more filling.Those are great readings for a holiday!! Digging is good for lowering bg. Don't know if you ever have the need but pick axing roots out, sawing and splitting logs are brilliant as well. Heavy gardening does, however, create a big appetite!Hi all.

Hi, we do have a fridge so it should be fine, but thanks.rather than take meat with you that might go bad, you could think about chicharones, i.e. fried pork skins, i.e. pork scratchings.

L: bag of Awfully posh pork crackling and diet coke
D: DD chicken pesto casserole with green beans. 1glass red wine.
Just now a decaff coffee with almond milk and a couple of squares Montezuma’s absolute black chocolate
