What have you eaten today? (Low carb forum)

Hi all, holiday over so back to normal from tomorrow. Hoping that when I step on the scales I won’t be too shocked or disappointed as for the majority of my hols I was able to eat fairly low carb, I did indulge in dessert most evenings but they were bite size portions and I did take my monitor with me and readings seemed to match those I generally see, there was a low 4.3 one day and a high 7.2 but otherwise they were around my average of mid to high 5’s and low 6’s. Breakfasts were easiest to stay in track with which I hope helped me to stay on track.
I must say I’ve missed keeping up with everyone’s food diaries and have been trying to catch up to make sure I haven’t missed any great tips like the salami microwave crisps :)

It's a Tom Kerridge thing with the turkey escalopes. He used sesame seeds, coconut flour , onion flakes and parmesan. I used well ground pork scratchings, parmesan and parsley. Turkey escalope had been soaking in buttermilk all afternoon. I dusted it with coconut flour , dipped it in beaten egg then into the crumb mix. Popped it back in the fridge covered with cling film for about an hour then repeated the egg then crumb bit and just kept it in the fridge until it was time to fry it.
I found with the salty pork scratching you really don't need the onion salt or seasoning.
Amazingly , after lurking about the low 8's my BGs have dropped into the 5's after eating this. It's really tasty.

Thanks I will give that coating a go, although with almond flour rather than coconut.
 
So today I've had a wetherspoons breakfast but swapped hash browns for bacon & I gave my friend my toast, having salmon salad for lunch & I have a chilli for tea, going to take out the kidney beans out of my portion I think. I am working tomorrow so inspired by the snack ideas im going to take some chorizo crisps & cream cheese to keep me going overnight! Is the 90% Lindt chocolate ok for a treat? I work with people with epilepsy & I have cared for people in the past on the keto diet so I think there should be a few recipes at work!

I had a lovely time thank you and yes I was pleased with my numbers, it was fairly easy to maintain low carb especially at breakfast time. I used to think it was so strange to see cold meats and cheese on breakfast buffets, now knowing what I do with regards to diet and low carb I love it, had lovely omelettes, bacon, sausage and mushrooms to choose from too. Lunch and evening meals were made up of fresh salads, meat and mayonnaise, I had a very thin slice of pizza twice over the week and had a selection of the desserts as they were all bite size or you could cut your own slice and I added fresh Greek yoghurt to make them more filling.
 
Hi all. In the 4s all day so far today. Hoping indulgent dinner will not change that.
Breakfast - none

Lunch - bag of pork crunch

Dinner - fathead pizza with pepperoni and Polish sausage topping followed by lazy dessert of extra thick double cream mixed with almond butter and 2 broken up hotel chocolat 100% buttons. Experimented with the pizza in attempt to get the base crispy. Reduced ground almonds by a third and omitted the egg while keeping the cheese quantities the same. Worked to a degree but could be crisper. Best one I’ve made yet.

Editing to add my new discovery - popped out to Waitrose and saw it. Totally delicious - nicer than the Lindt 90% for only 1g carb more per 100g.

Good evening folks. Today was a walking day and a day for celebration as my dearly missed lawn mower returned fit and well.
B: 1 mug decaf Green Tea: Then 50 mins walk shower and 2 x Pint mugs tea with double cream
MMS: 1 x travel mug coffee and double cream
L: 2 pint mugs tea with almond milk
MAS: By 5.40 was v hungry so had olives and feta and 1 slice gammon ham
D: Lamb shoulder; Kale chips; Roast mushrooms; roast cherry tomatoes; Cornish Blue Cheese
May be a G and T later but in no hurry for alcohol
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: fried halloumi and 1 slice of HiLo toast followed by Greek yoghurt and raspberries.
Mid-afternoon: peanut phd bar and black coffee.
Dinner: cold roast chicken, salad made of raw cauliflower, broccoli and radish with coleslaw and pork scratchings followed by low carb lemon drizzle cake and extra thick double cream.
 
I'm really hoping the new halloumi chips from Aldi are going to be low carb, I did read they have a crunchy coating though so I'll have to see when they come out as it doesn't say what the coating is made from!

L: bag of Awfully posh pork crackling and diet coke

D: DD chicken pesto casserole with green beans. 1glass red wine.

Just now a decaff coffee with almond milk and a couple of squares Montezuma’s absolute black chocolate

Digging is good for lowering bg. Don't know if you ever have the need but pick axing roots out, sawing and splitting logs are brilliant as well. Heavy gardening does, however, create a big appetite!
 
Feeling better bed 6.9 FBG was also 6.9 but still got a burst of DP into the low 8's. At least swimming today took care of it.
B. Just coffee
L. Another M&S mini selection - prawn cocktail, lettuce, Santini tomatoes, fresh anchovies and mozzarella pearls. Just a little of each.
D. M&S best ever burger and 2 slices edam. Portobello mushroom, lettuce, Santini tomatoes, 2 baby beets, 1/2 avocado, 2 Walnuts and coronation coleslaw.
Swimming with grandson straight after school again. I swear he takes more and more stuff with him.
 
rather than take meat with you that might go bad, you could think about chicharones, i.e. fried pork skins, i.e. pork scratchings.
Hi, we do have a fridge so it should be fine, but thanks.
I had a skyr light & low yogurt yesterday which I enjoyed. Carbs were just over 5g so not too bad & I found it filling.

Happy Saturday everyone :)

Well with it being Saturday and Eurovision tonight I had another go at Fathead pizza. I used a little more almond flour than the recipe called for and it turned out wonderfully this time - plenty to keep me going tonight and probably tomorrow too. The other half even has some garlic and herb dip left over from his Domino's order which is surprisingly low carb so having a real treat tonight! I used sundried tomato pesto, cheddar and mozzarella cheese, Mattesson's sausage, ham, turkey, and pepperoni as toppings. Can't wait to tuck in.
 
Evening all. Little by little I am moving towards some decisive decisions about diet and lifestyle - today has helped clarify some things a little more. Mid summers's day should be a crunch point - 6 month bloods will have been analysed. Today's menu was mainly another exercise in bg management over taste and dietary beliefs. BG came out MEH but I can't help feeling this is not quite right. Anyhow, menu was:

B: 2 mug: FBG 4.7 Tea with almond milk: Then 60 mins lawn mowing and 2 x Pint mugs tea with almond milk; FBG topped out @ 5.6 so failure there
MMS: NIET; 30 mins Strimming hill and 20 mins neighbours lawn; 45 mns dog walk
L: 2 pint mugs tea with almond milk; Lamb; Olives and feta; 2 keto rolls; 1 slice cooked bacon ( was very hungry by 2.30 but that neither refuelled me properly nor gave any pleasure) definitely not worth 5.1 @ 2 hrs;
MAS: Lemon drizzle Cake and double cream (Think this will end up as a sponge pudding with LC Vanilla custard) Wet and no sport to watch so ate through boredom and feeling no love for lunch
D: Pastryless broccoli and asparagus quiche (will add BG later) 5.1 consistent but off the pace

Hi all. Have been a bit out of sorts - dizzy with low blood pressure (two consecutive readings of 93/65) - and also very hungry. On the plus side all the weekend’s chores were complete by 1pm. Today’s menu was:

Breakfast - cleaned flat from top to bottom by 8.45am. Felt very dizzy and hungry so had a small portion of corned beef eggy thing.

Lunch - found some of the protein bread sold in Asda that was discussed on another thread yesterday. 7.9g carb per 100g (2 slices). Made it into a bacon sandwich. 0.8mmol rise after an hour, down 0.4mmol after a further hour so all good.

Afternoon snack - made a very small chocolate olive oil cake. Came out smaller than expected - less than 1cm thick! Quantities fine in terms of texture, taste etc. Ate that with some extra thick double cream.

Dinner - brined chicken leg followed by 3 hotel chocolat 100% buttons.
