What have you eaten today? (Low carb forum)


Oddly, gluten does nothing to me for around 24 hrs.
Then I get itchy ears. Inside, down near the eardrum. Drives me insane! Lol
Days 2-3 my guts set like cement.
And days 4-14 i get psoriasis in hairline and around ears.
Knee pain on climbing/decending stairs for about 10 days.

You couldn’t make it up, could you?
I spent ages trying to work out what was causing it, but the symptoms are so bizarrely unconnected, I didn’t twig until we went on hol for a week to Northumbria, and I declared a Low Carb Amnesty for 1 week, and ate Bannock, toast and scones. Delicious!

Ended up unable to climb even 3 steps at a time. It just got worse and worse. I was hauling myself up by the bannisters. And wondering if we needed to move to a bungalow.

Stopped the gluten on the drive home.
2 weeks later, the symptoms were fading fast, and completely gone at 6 weeks.

That brownie today was a major lapse in judgement!

A puppy! How adorable! My next door neighbour has just shown me a photo of the puppy she is picking up tomorrow - I can’t wait for a cuddle.
 
Very strange day in some ways. OK start with average fbg then I seem to have broken myself and came across a bg reading of 5.9 - the 4 or 5 of those I have come across since early March have been when I have been ill. Today's menu below so I hope tomorrow will make sense to me when my meter reports back:

B: 2X pint mugs Tea with almond milk: 1 x small mug coffee with vanilla and double cream
MMS: 2 X pint mug tea with almond milk
L: Salami and chorizo crisps; guacamole; kale chips; chicken breast; beef strips
MAS: Homemade HF Chocolate toffee bar
D: Chicken (instant pot trial); asparagus; Leaf salad; Cherry toms; cucumber; radish; spring onions

I was also worried about the anount of tea I was knocking back, partly because I like it with milk and the carbs soon add up, and partly because it was staining my teeth too much ( so vain!)

I love coffee but it seems to upset my tum a lot of the time.

I’m not keen on the herbal or fruit tea bags but have found chai tea pretty good and I can drink it quite happily without milk. Tesco Finest vanilla chai is my favourite but I also like the Hotel Chocolate teaolate. It’s too expensive for drinking in quantlty though.

When it comes down to it, nothing really hits the spot like a cup of tea does it?
 

Well done jumping in with your IP. How did you do your chicken? One thing I adore about the pot is being able to lob is chicken joints, frozen and cooking from there. These days forgetting to take something out of the freezer for dinner is no excuse!

As well as tea (Assam), I drink de-caff coffee and the odd fruit or mint tea and no sugar added squash.
 
The squash suggestion is one I had considered but was unsure about so that's good. @DJC3 fruit teas and camomile tea can be tolerated in small doses.
@DCUKMod The IP chicken was very tender but we need to work on it. We seared it first but it needed browning after cooking. Ours chook was a bit tidly so we will need to adjust times. No disaster and looking forward to lamb shanks and ox cheek from IP and sous vide.
OH, I may not have broken myself it may be one high tech soap and dispenser! Just tested after dinner 6.2 on that but 4.9 using good old bar of soap which is much more in line with normal and what a chicken salad should produce
 

A few minutes in the oven works for browning, or if you don't want to do that, there's a technique you can use with a blow torch. The trick with the blow torch is to ensure you held it far enough away from whatever you're browning, otherwise it takes on a bit of a taste. The blow torch is also very good for finishing crackling nicely.

I prefer pork to ox cheek, but either is fab in the IP. I haven't tried them sous vide yet. I'm much newer to that.

Thanks for all that. We tried the grill to brown but ours is so shallow it wouldn't work so we will use oven or griddle next time.

The total carb count does look high but that includes polyols the type of sweetener used. Polyols aren’t absorbed, hence the warning on the packet that ‘excessive consumption may have a laxative effect’! You need to subtract the polyols from the total to give the ‘impact carbs’ which are between 0.4g and 2.1g per bar depending on the flavour. I’ve tested and they don’t seem to affect my blood sugar levels.
 
Bed 5.2 FBG was also 5.2. All over the place today. Spent a while at 3.5 but felt OK.
B. 2 scrambled eggs and a bit of Mattesons smoked sausage. Tassimo Americano grande with a dash of cream.
L. Having been down at 3.5 for a couple of hours 12 salami crisps were called for. Didn't make much difference.
D. Campari and soda. Rib eye, wilted spinach, some of these Tesco cauliflower buffalo bites, mushrooms and Diane sauce.
Scoop of Breyers cookie dough ice cream.

Lots of water. Got a new water infuser in Tesco. They are half price currently £3.50 and hold 750 mls. Like the measure on the side to keep up your morning/afternoon intake. Boys were also good at swimming lessons so my sanity is intact AND I have a day off tomorrow from the school run (Victoria Day). Busy month coming though with school sports, graduation from pre school, birthdays, transition days, school fete......roll on summer break.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: roast rolled lamb breast with rosemary and garlic, roast celeriac, mixed veg and gravy thicken with milled flax seed followed by sugar free jelly and cream.
Mid-afternoon: dark chocolate and raspberry phd bar with a black coffee.
Dinner: cheese with a small savoury biscuit, cold meats and salad and one Jaffa cake.
 
@maglil55 was it you who posted an aubergine and halloumi curry a few weeks ago?
I didn’t save it and now I cant find it. I’m off to stay with my vegetarian daughter on Thurs so thought this would work well for both of us for dinner.

@ianpspurs - water is my main drink. Buy miniature San Pellegrino bottles so I can kid myself I’m having a treat! Aside from that tea and Diet Coke, although need to rein that in a bit. Completely gave it up for a few months but creeping back in.

Today was a 23/1 fasting day. Dinner was bone in sirloin steak with garlic and herbs followed by my lazy dessert of extra thick double cream mixed with almond butter and Hotel Chocolat 100% buttons plus a couple of squares of Lindt 90%.
 
L: Low carb bagel with turkey, spinach and Red Leicester cheese.
D: Garlic and herb chicken breast, bacon medallions, halloumi, broccoli rice
Snacks: Quest bar, peanut butter cheesecake fat bomb

Sugars between 6.0-6.2 all day today even after food. Hoping to edge into the 5s this week.
