What have you eaten today? (Low carb forum)

Lunch - smoked salmon and cream cheese. Discovered the most DELICIOUS cream cheese in M&S. They only had low-fat versions of their standard variety, so bought this full-fat one. It is sooo creamy and light. So much so that I’m sure that it could form the basis of another lazy dessert - add a few raspberries and a broken up square of high cocoa content chocolate, perhaps some crushed nuts and instant cheesecake.

OK will be heading to M&S in search of this. Is it with all the other cheeses?

Dinner - chicken wings coated in Parmesan and pork crunch ‘crumb’. Used @maglil55 method of dusting in ground almonds, dipping in egg and then rolling in the crumb. Excellent result. Will add in some additional flavours next time.

I add all sorts to it paprika, chilli, cayenne, turmeric....depends what I'm doing. Even added curry powder sometimes.
 
Copy me That is an app. @Brunneria told me about it and I use it to store favorite recipes that I kept losing previously.
The good thing with the kitchen blitz is that before I did the last clear out following the book I had 3 'junk' drawers in there. They have never returned to being junk drawers thanks to her 30 min daily schedules. That made the cupboards/drawers cleaning so much quicker (plus I did the big fridge/freezer at the weekend).

I find it useful to collating my recipes in one place, and also having a quick look at ingredients in a recipe whilst out and about. The website and apps are all quite well designed.

My OH has his own CMT account and I have mine, but we use the sharing funtionality on the site, so that we can see each other's recipes too. It works well for us.

It's also good for copying recipes from places like the forum boards here. At home, my "recipe book" is CMT on an aging iPad that lives in the kitchen and never moves out of there.
 
We had fresh mint tea in a Lebanese restaurant last week - it was lovely! Just a sprig of fresh mint in a pot of hot water, so refreshing.
I thought at the time I’d make it for myself, then promptly forgot about it so thanks for the nudge.
Reading that reminded me of my dear departed MIL. A bit like Hilda Baker and Hilda Ogden for getting words wrong. She was waiting to cross the road with FIL when a Lebanese Bakery van stopped at the lights. As they crossed the road she announced to FIL "I do like that lesbian bread" and went on walking while FIL choked
 
Hi, pleased to report I’m feeling much better today, think I’m almost back to normal :p
Breakfast was Greek yoghurt and strawberries
Lunch was ham, chorizo crisps, cheese and mayo
This afternoon I had a coffee with cream and I’ve drunk lots of water
For dinner fat head pizza topped with hot dog sausage, shredded ham hock, some salad and mayo

I have half of the pizza left, will take it for lunch tomorrow as I hope to go back to work now I’m feeling better.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: left over roast lamb, veggies and gravy followed by Greek yoghurt and raspberries.
Mid-afternoon: Hartleys 10 cal jelly and black coffee.
Dinner: bolognese with butternut squashetti sprinkled with grated extra mature cheddar followed by strawberries and vanilla Oppo.

Day 3 of virus

4 litres of water, sambucol effervescent tablets, echinacea tea and coffeesubstitute with cream and chicken broth
And 200 g of Lindt Lindor milk choc orange balls, spread from midday to 8pm.
Blood glucose stayed under 7 the whole time except for approx 10 mins.

For those unfamiliar with Lindor orange blobs, that is 86g of carb and 1250 calories = Low Carb.

Ironic, eh?

Mr B took his Mum out shopping today (his day off) and came back with the orange blobs and 3!!! Tubs of Halo icecream ‘cos you are plague ridden and needed cheering up’.
I thought i had broken him of this Choc = Love thing.
But he seems to have reset.
Unfortunately. Although I must admit to doing a CauliCheese = Love thing to him.

I’m feeling better this evening (strange, after all that sugar!) so hoping to get back to normal food tomorrow.
Halo permitting.
 
200 g of Lindt Lindor milk choc orange balls, spread from midday to 8pm. Blood glucose stayed under 7 the whole time except for approx 10 mins..

That’s good going! Used to love the red Lindor balls.

@Goonergal I’ve also found that cream cheese and agree it is delicious ( and slightly lower carb than the standard) I could happily eat it out of the pot with a spoon.

@shelley262 The puppy is gorgeous! Nothing in the world is as joyful as a puppy I don’t think. By the way I found mint in my garden and made a pot of fresh mint tea - fabulous. @ianpspurs I bet you grow mint, this might float your boat?

Today I decided I’d only eat if my bs was in the 5s Fasting bs was 5.8 but by the time I’d taken the dog out and showered it was in high 6s and carried on rising until around 2pm by which time I was ravenous. So had lunch of baked salmon filet and Greek salad with a creamy coffee. Followed by the last of the lemon drizzle cake.

Stayed in high 6s all afternoon dispite gardening energetically.

Yoga this evening - had one of the PhD bars @Rachox recommended as a snack on the tube coming home. They are very substantial and feel very indulgent. I didn’t manage to save half either.

Dinner was ham and salad (more house viewers tomorrow so nothing smelly or too messy allowed) with a couple of strawberries and cream afterwards.

@DJC3 I do grow mint and as it happens I have some Morrocan mint tea bags which I sometimes have in the morning but my own version might well be a good idea - thanks.

I made my fat head pizza base using the M&S cream cheese, I like that the once opened use by timescale is a little bit longer than other brands.

I really like that you can edit or add notes to recipes. I find that incredibly useful if I choose to use a recipe, but cook it in my magic cauldron, or when I swap out sugar for sweetener or whatever. My OH makes tasting comments on the stuff he saves and cooks. I don't go that far, but then he is by a country mile the better cook in this hacienda.
 
Bed 6.3 FBG 5.8. Odd day of ups and downs. Got a bit of DP again to 8.1 but mostly downwards after that.
B. 1/2 Mattesons chicken smoked sausage and 2 scrambled eggs. Tassimo Americano grande with a dash of cream.
L. Nothing
D. Leftovers - slice of roast pork, turkey, mortadella and a bit chicken breast. 4 Santini tomatoes, waldorf salad and coleslaw. 2 Walnuts and a bit German smoked cheese.

Loads of water during kitchen blitz. A very hot day - would have rather been outside but needs must. Kitchen had to be done.

That’s brilliant! I will refer to it as lesbian tea from now on and confuse visitors.
 
L: Low carb bagel with ham, Red Leicester and spinach
D: Tikka-marinated chicken breast, pepperoni crisps, slice of Red Leicester, lettuce, cucumber, salmon pate
Snacks: Adonis brownie, 2 squares 90% Lindt, some low carb breadsticks
Cadbury's Highlights mocha.

I've been so hungry today. Feel like I've had a lot of chocolatey things but not exceeded carb allowance so pretty happy with that. Also pinched a single chip from other half's plate. Hopefully my hunger will be more manageable tomorrow!!

I could write a book on them. It does the same to us as we think in terms of the wrong words too. I remember my son was always looking for yellow check trousers in pies as rhubarb was always Rupert pie! And an old aunties leg problems was because she had "crickets as a child" . But a more recent classic was when a visit to the dentist was required because she had "an absail on her gum". Miss these as you tended to get a few daily.
 
Tesco has an "off the shelf" wrap we can actually eat! An egg and ham egg omelette wrap. Beautifully thin omelette with egg, ham , spinach, tomato and grated carrot. Could use a bit more seasoning but great to be able to get something. 6g of carbs in the pack.
