What have you eaten today? (Low carb forum)

Silly me!

I made the most fabolous ribs in my cauldron last night, then finished them on the BBQ. Actually I got distracted while they were out there, meaning the underside of the rack had some fab crispy bits.

Of course, as law demands, I then put the bones back into the seasoned cooking water, with a couple of flat rib bones from the freezer and made stock/broth. I had some of that at lunchtime.

Nom, nom, nom.

Do you have a favourite recipe for this, by any chance? I know broth is extremely healthy, but the thought just makes my stomach churn a bit...I'm in Saudi, so this will have to be beef broth. Or chicken. What else goes in or do you just drink the liquid? (Still new to this.)
 
Today, I just could not get down all of the whey protein shakes I need to. I don't know what to do about this. I'm being such a purist, and it's challenging me. I am NOT on the shakes program from the Newcastle University regime, and am thus drinking pure AWFUL whey protein shakes. I'm starting to think I should ease up and throw in some berries and stevia, because 7 more weeks of this through a month of travelling N. America and Europe is going to seriously test me. Thoughts? Experience here? I'm on the Diabetes Reversal plan. And this time I'm determined to win.

Bones, water, seasonings of your choice, then add a glug od apple cider vinegar then pressure cook for a while. How long q while is depends of what sort of bones, and what I have planned.

I then eiher drink the liquid, r use it in the same way as any other quality stock.
 
Lots of veg today.
Stir-fry with Chinese 5 seasonings. It was a delight to eat but on reading label I found has sugar in the schwarts ones. :( :( :(
So not looking forward to my fbg number in the morning.
I've eaten alot of chicken this week.
Restarting metformin tomorrow as I cannot wait any longer. IBS alot more settled.
Low carb and metformin tomorrow. I cannot wait.
Dietary finances now sorted out so looking forward to low carbing, in earnest again. :)

They're a little pricey due to being imported from America and it's best to freeze them on receipt, but they're a really good bread substitute for only 2g carbs. I love them! Not sure I would be able to do this whole low carb thing without them as I adore bread.

Thanks! Are they comparable to ‘normal’ bagels? I remember picking a gluten free bagel in a café once by mistake and it was very dry, it may just been a bit stale but I don’t want to risk that price if these are dry too.

I don't find them to be too dry but I usually always have a small smear of butter with them. If you freeze them on the day you get them and then defrost one for an hour or so in the fridge they're usually soft. They don't have the characteristic chew of a bagel but I think that's to be expected with a low carb product :)

I was also worried about the anount of tea I was knocking back, partly because I like it with milk and the carbs soon add up, and partly because it was staining my teeth too much ( so vain!)

I love coffee but it seems to upset my tum a lot of the time.

I’m not keen on the herbal or fruit tea bags but have found chai tea pretty good and I can drink it quite happily without milk. Tesco Finest vanilla chai is my favourite but I also like the Hotel Chocolate teaolate. It’s too expensive for drinking in quantlty though.

When it comes down to it, nothing really hits the spot like a cup of tea does it?
Years ago when I was a serious Rosemary Conley low fat devotee !!!! I moved to weak black tea so could ditch milk - for fat content reasons that time! My main remaining habit from those days (apart from slight guilt on eating high fat which is getting less but still there!) is drinking pints of very weak black tea - I love it and can’t tolerate milk in tea now. I’ve also infused different things in boiling water. When it was very cold I often did ginger, lemon and cinnamon and now looking at lemon and also mint. They are lovely if you do them yourself and at least then you can keep eye on ingredients!

I didn’t save it and now I cant find it. I’m off to stay with my vegetarian daughter on Thurs so thought this would work well for both of us for dinner.
Not me but I do have a recipe on Copy me That as I am very fond of Aubergine as they are very adaptable.

About 600g aubergine sliced into rounds (use the baby ones if you can get them)
2 finely sliced onions (I use the white ones)
2 crushed garlic cloves
Olive oil
1 teaspoon each of garam Masala, turmeric and ground coriander.
400ml can coconut milk
400ml chopped tomatoes (I just chop my own and soften them with a little olive oil but you can use ready chopped no sugar variety)
1/2 pack chopped coriander (Sainsburys do fresh chopped coriander and parsley in sealed packs which keep for ages in the fridge)

Heat to oven to about 200C (180 fan).
Toss the aubergine slices in about 2 tablespoons of olive oil, season and spread out on an oven proof dish and pop in the oven to roast for about 20 mins until they have a golden look about them.
Heat another tablespoon of olive oil (I use a lidded non stick wok) and gently soften the sliced onions (you don't want them to brown). When soft add in the garlic and the spices and stir them through. Keep stirring for a couple of mins to release the spicy aroma.
Tip in the tomatoes, coconut milk and the aubergines , mix through , put a lid on and simmer for 20 to 25 mins. If it looks too wet take the lid off for the last 5 mins and take the heat up and keep an eye on it.
Check your seasoning and add a little xylitol or whatever if it needs it (sometimes the tomato can be a bit bitter - depends on the tomato).
Stir in most of the chopped coriander and serve with cauliflower rice and you can also make DD naan!

It's pretty easy and quick and this serves about 4 people.

Sprinkle the rest of the coriander on top to serve.
Another nice dish is a mushroom stroganoff. I just vary Rick Stein's beef stroganoff recipe.
Selection of whatever mushrooms you can get - shitaki, oyster , chantarel etc - clean and slice.
Finely chopped onion
Hot paprika
Olive oil and butter
Sour cream
Chopped parsley (Sainsburys sealed bags again)
Couple of teaspoons lemon juice)
Seasoning

Soften the onion in a mix of olive oil and butter with hot paprika. Use as much paprika to suit your taste - at least 1.5 to 2 tablespoons. Cook slowly again as you don't want them brown.
Add in the sliced mushroom mixture and cook for a few mins. You still want a little bite in them.
Tip in the sour cream (300ml carton) , take the heat up and keep stirring - you want it to thicken a bit.
Just before you serve stir in the chopped parsley and the lemon juice and serve with cauliflower rice or celeriac chips. Even easier than the aubergine curry.
 
@DJC3 - Your gutting has inspired me to give the kitchen a good going over (that and the fact it is my annual boiler service tomorrow). Pretty essential since my downstairs is all open plan. Took the opportunity to reorganise as well which no doubt means hubby won't be able to find things for a while.
Anyway, last time I did this it took 5 days following the theory in that 30 days to a organised and tidy house book. I mentioned before I've pretty much stuck to her fairly 30 min schedule and , to my surprise, the gut has only taken 1 day this time. Even got the windows done! My legs are pretty much knackered now though. Tonight will be the remains of my cold cut meats I reckon.

We had fresh mint tea in a Lebanese restaurant last week - it was lovely! Just a sprig of fresh mint in a pot of hot water, so refreshing.
I thought at the time I’d make it for myself, then promptly forgot about it so thanks for the nudge.

Copy me That is an app. @Brunneria told me about it and I use it to store favorite recipes that I kept losing previously.
The good thing with the kitchen blitz is that before I did the last clear out following the book I had 3 'junk' drawers in there. They have never returned to being junk drawers thanks to her 30 min daily schedules. That made the cupboards/drawers cleaning so much quicker (plus I did the big fridge/freezer at the weekend).
 
Hi all. A hungry day today - seem to swing between not being hungry at all and being very hungry at the moment.

Mid-morning snack - bag of pork crunch

Lunch - smoked salmon and cream cheese. Discovered the most DELICIOUS cream cheese in M&S. They only had low-fat versions of their standard variety, so bought this full-fat one. It is sooo creamy and light. So much so that I’m sure that it could form the basis of another lazy dessert - add a few raspberries and a broken up square of high cocoa content chocolate, perhaps some crushed nuts and instant cheesecake.

Mid-afternoon snack - finished off the cream cheese.

Dinner - chicken wings coated in Parmesan and pork crunch ‘crumb’. Used @maglil55 method of dusting in ground almonds, dipping in egg and then rolling in the crumb. Excellent result. Will add in some additional flavours next time. Dessert was Oppo chocolate and hazelnut ice cream with cream and 2 squares Lindt 90%.

Another warm day here but I know some folks weren't so lucky. More exercise today which left me very hungry by evening. Foo list below:

B: 2X pint mugs Tea with almond milk:
MMS: Salt and vinegar Kale crisps; 4 green olives and 5 chunks feta; 2 pint mugs tea with homemade almond milk
L: Strawberries and double cream - ours not ready yet so Waitrose English; decaf coffee with double cream
MAS: Homemade HF Chocolate toffee bar; water
D: Coronation Chicken and avocado salad ( Mixed leaves; spring onions; cherry tomatoes; radish; cucumber) Water

@DJC3 my new avatar is the new family puppy who I met today and cuddled he’s been acquired just by our youngest son and partner and we will be helping with him in a few weeks - he’s a really cute mini poodle puppy.
Breakfast one slice of bacon, egg and a mushroom
No lunch - out at youngest sons meeting puppy and just stuck to drinks
Dinner - roast cold chicken, green salad and an advocado, walnut and spring onion salad with mayonnaise planning a couple of strawberries with some oppo ice cream and cream later.

I’ve just made a pizza using this cream cheese :)
