What have you eaten today? (Low carb forum)

@ianpspurs the bacon halloumi is cooked and is looking very tasty, can’t wait for it to be breakfast time
They looked amazing @jayney27. In my experimental/research phase breakfast is definitely part of the plan and those are now very much on the agenda. Maybe we can try these out at Sunday's barbeque first. Thanks for the idea

Brilliant idea for a BBQ I will report in the morning as to how they taste.

@jayney, the wedding yesterday was lovely thank you, got home an hour or so ago.
Food today:
Breakfast at Airbnb: sausage, bacon, eggs and mushrooms with black coffee.
Mid morning: white coffee, just a dash of milk.
Lunch at Eden Spice Café at the Eden Project: slow cooked garam masala (ditched the naan bread!) followed by a PhD bar.
Dinner at motorway services on the way home: one piece of kfc (from my daughter’s kfc meal), pork scratchings and a phd bar.

Sad and quiet here today, I know it will pass and we just need to give it time. Haven’t resorted to booze or donuts( yet) but it’s been a close thing at times.

B:leftover DD naan bread warmed up and spread with butter and marmite and a fried egg. Coffee and cream.

L: halloumi, scrambled egg, avocado, wilted spinach followed by the last of the coconut macadamia slices, will definitely make these again. Coffee and cream.

D: DD pork chop with blue cheese sauce and green beans. Sf jelly and a spoonful of extra thick cream.

@Rachox Glad the wedding was good. I wondered where you’d eat at Eden, there’s a reasonable choice of places to eat I thought, but as usual most were carb heavy. When I was there earlier this year I had a Cornish burger but didn’t eat the bun.

@shelley262 glad the conference went well in spite of curtain altercation and high carb hotel nosh.

I have recently seen some adverts on tv for soya ice cream (part of the plant based diet popularity, I imagine). No idea how carbs they are, but it got me thinking.

There are actually lots of low carb ice-cream recipes out there. Maybe you could adapt one with Soya cream.

The simplest I know is 2 parts frozen berries, 1 part doublecream, erythritol to taste, and all blitzed in a good strong blender. Takes about 2 mins to make. Delicious.

Had lovely meals yesterday. Fish man comes to the village once a week.
B. ff yogurt, few blueberries, walnuts & brazil nut.
L. Fresh cooked prawns, samphire, olives & toms.
D. Sea Bass, samphire, mushrooms. Picked from the garden strawberries with d.cream.
I love Wednesdays.
 
what do we class as low carb? I eat about 30 carbs per meal and maybe 40/50 for dinner, is that low? My sugars seem quite stable with it but im trying to lose weight so wouldnt mind dropping more but not sure what is a safe level
 
@christine18 - welcome to the forum and to this thread! I think low carb is classed as 100-130g carbs or less a day.

Would be way too many for me - I’m on 20g or less a day - but all depends on the individual. Managing Type 1 using insulin vs Type 2 through diet makes a big difference. Has someone tagged @daisy1 for you?

Today’s menu was:

Breakfast - none

Lunch - M&S Serrano ham and manchego cheese rollitos

Dinner - brined pork chop using this method/recipe - https://www.thekitchn.com/how-to-co...e-oven-cooking-lessons-from-the-kitchn-194257 - with added garlic, black pepper and herbs. Very tasty. Side of buttered cabbage and dessert of extra thick double cream mixed with almond butter and Hotel Chocolat 100% buttons.
 
Hi all and welcome @christine18 to this thread. I’m with @Goonergal im a much lower carber have been below 20g of carb for at least 8 months so - doing Keto. Although last few weeks have upped my carbs a bit adding a few more veggies, low carb bread @nd crackers but still managing to remain below 30g of carbs and remain in nutritional ketosis with ketones this afternoon still recording at steady 2.8. But I’m type 2 on no meds and did have a lot of weight to lose in the early days. ( I’ve lost about 3 and a half stone in that period of time) You’ve obviously got to factor your insulin in too - not easy I’m sure. Www.dietdoctor.com May help as their recipes give a breakdown of carb count which is useful re your insulin etc.

Breakfast one slice of low carb bread with scrambled egg

Lunch small tin mackerel fillets in olive oil mixed with a few teaspoons of olive oil hummus served with three of my low carb seeded crispbreads followed by 2 strawberries from garden served with Fage strained Greek 5% yoghurt - this is a new discovery for me - its 3.0g of carb per 100g with live active cultures ( not much above double cream which is 2.6 g of carb per 100g) it’s delish and thick!

Dinner trout oven baked with lemon with oven baked roast veggies - celeriac, spring onion, broccoli, cabbage and spinach tossed in cold pressed rapeseed oil infused by me with garlic and rosemary followed by three strawberries with sugar free jelly and a few more spoons of the fage yoghurt.

Hi, welcome to the thread, I think @Goonergal summed up pretty well, as she mentions we are all different and type 2 people on this thread are a mixture of diet controlled only or diet and meds. I average 30-40g per day, sometimes I am lower very rarely higher.

Funnily enough when I eat out rather than guesstimate carbs in food I end up avoiding them almost all together. I’m estimating that I ate between 25-35g during my three days away, at home when I know exactly what goes into my food I keep to 40-60g! My average blood sugar of all the readings over the three days was 5.2
 
Hello everyone from a very sunny and warm Devon
Today has been a good one food wise, I started with 2 of the halloumi wrapped in bacon “things” I made, delicious
Lunch was homemade DietDoctor recipe cauliflower soup with a little bit of celeriac added this time with 4 salami crisps
When I got home I had another halloumi bacon
Dinner was chicken in bscon and cheese with some buttered asparagus
I have an olive oil chocolate cake in the oven so may have a little slice of that with cream

Dental check up on my home today, all good so I’m happy
 
Yes that makes sense, I’d rather try to avoid them as opposed to guess and be way off, as we now know plenty of things we can indulge in that are zero or minimal carbs if they are available
 
Good evening all. The weather was much better than all forecasts suggested today so that was good. HbA1c came back as 37. I was anticipating something worse than my own figures suggested so not a surprise but I can't disguise the fact it isn't that good either. Best since June 2016 so puts me back where I was but hardly very good in this company. Definitely casts doubt on the value to me of all the hassle of IF, OMAD and fasting - looks like a bloke who knows all the words but has no idea in practice. Menu for today below:

B: 3 pints tea with h/m almond milk - over the period 5.45 to 9.00
MMS Mug French Vanilla coffee with double cream; H/M chocolate high fibre bar (flaxseed+psyllium husk powder; walnuts; dehydrated raspberries; inulin; 100% Callebaut chocolate) Version 2 mishap but turned out well
L: Livlife pork belly sandwich; Chunk Bishop Cropwell, Slice Corned Beef2 pints tea with h/m milk
MAS: Tassimo Americano Grande with cream
D:Egg and avocado salad, cider vinegar vinaigrette, chia seeds and psyllium husk powder; strawberries and cream (we have had a bumper strawberry day today)
