As I sit doing this they are in the IP with their foil hats on. Regrettably they will have to cool on extraction for a few hours before the comparison can be drawn between inulin and monk fruit. Hubby is already eyeing them and may have to set aside his usual objections to substitutes.

Breakfast Lots of tea; soy latte with cinnamon at soft play; more tea
Mid morning snack: Tea
Lunch: Tea
Afternoon snack: H/M High fibre chocky bar; h/m flaxseed flapjack; filter coffee with cream
Evening meal: 2 Lo dough wraps with a slice of beef in each; salad leaves; h/m mayo; handful cherry tomatoes; cucumber; maybe a few strawberries and fage 5% later

Didn’t eat breakfast as I wasn’t particularly hungry and had a busy morning.
Did a spot of cooking, I promised to make a diabetic friendly cake for the fair tomorrow so while that was cooking I made a lo dough quiche, OMG nicest thing I’ve eaten for a while.
L half of my quiche with a drizzle of mayo, cherry smoothie
After a long dog walk I had a frothy coffee and a ham and cheese bake, made with a little bit of the leftover egg custard from the quiche
D pork loin, Stilton, leaves, cherry tomatoes, gherkins, mayo and a loaf size clafoutis with fage yogurt
These are delicious!! So easy to make too.
2 cups whipping cream
1 tablespoon vanilla extract
6 egg yolks
3 tablespoons monk fruit sweetener
Basically put everything in a bowl and I gave it a good mix with a balloon whisk. Pour into a jug and split between 6 ramekins.
With the instant pot put a cup of water in the inner pot. Put a silicon trivet in. Put foil hats on the ramekins and make sure they're secure. Put 3 ramekins on the trivet then offset the other 3 on top so they are balanced.
Lid on the IP , set valve to pressure, put on manual high pressure for 9 mins. Leave for natural release. It says 15 mins but I left it 21 mins and it was fine.
Leave them to cool. I sprinkled one with monk fruit and one with inulin. The inulin was the most brulee like. Caramelized very quickly, hard crack and a pleasant burnt toffee taste.
Monk Fruit works too. Takes a little longer to caramelize, still has a crack but not as firm ( a bit more torching may help) but a pleasant taste.
I will of course have to repeat this again tomorrow to ensure the results are consistent
It was amazing, I hope the remaining half is just as nice cold as I’m taking it with me tomorrow. I’m manning a stall at a summer fair, as staff we will be supplied with a sand which! No idea what they will be filled with so don’t know if I will be able to extract the filling so taking my quiche to be sure I get something to eat, going to be a long day especially as the forecast is not good.Agree about quiche I can’t wait to make another! Boring but egg white omelette uses some more. Thinking about it could probably make egg white breakfast muffins too.

Looks like some real love for Lo dough quiche on here but I just know I would turn the air blue for miles around with that base if you are all following their recipe. The LoDough quiche is good isn’t it @jayney27? I must admit I wasnt impressed with LoDough til I tried that.
Well done on the weight loss @purplepenguin and the good bg average. I had a bit of Lindt 90% a couple of weeks ago and, like you thought it tasted surprisingly sweet ( still nice though, such a lovely smooth texture)

Today I had....
B: a scrambled egg and smoked salmon. Coffee and cream.
L:Lamb stew done in IP this morning, and used the ‘keep warm’ function till we were ready. I just had a bit of meat and the broth - left the veg for the others. Followed by Greek yoghurt and a spoonful of chocolate granola ( thanks for the recipe @Rachox - you’re right it needs VERY close watching). I made this mostly for my daughter who wants to follow lchf but thinks she’ll miss her overnight oats in the morning. I think this is nicer.
D: Mackerel salad with olives, walnuts, avocado,feta and leaves. Sf jelly and cream afterwards.
There’s a bit of wine left in the bottle so Ive bagsied that as Mr C is going down the pub in a few mins.
