Hi @SamJB . It's sorta hard to explain. I have been without bread for 7 months now. So i really enjoyed, it but it's not to everyone's taste. Here goes. 3 eggs ,half a cup of cream cheese , tablespoon of psyllium husk powder, teaspoon of baking powder and pinch of salt.What does Oppsie bread taste like and what's the texture? Sounds promising!

Lunch at a restaurant: All day breakfast of egg, bacon, sausage, mushroom, tomato, then coleslaw and salad in place of chips, baked beans and toast. Followed by strawberries and cream, I asked for a few strawberries and lots of cream and they took note! See pic!
Mid afternoon: chocolate and mint Carb Killa bar and black coffee.
Dinner: left overs from last night’s takeaway, so crispy duck, cucumber, spring onions, a smidge of plum sauce and 3 (yes 3 again!) pancakes followed by CCB bar.
Average bs today 5.4 so happy with that
Hi @pollensa I make quiche but it's all LC .10 eggs, chopped up spinach and silverbeet,grated zucchini ,1 small onion one hand full of grated cheddar cheese seasoning of your choice salt ,pepper and i add ,parsley chopped, can use flakes and mixed herbs.. Mix it all together and add extra cheese on top before putting it in oven. Oh and the other day i decided to add a tablespoon of almond flour and same with psyllium husk for the fibre. It's about 2 carbs a slice as it makes about 8 or 9 slices depending on how big a slice you have. Oh and i also grated one very small carrot in it, didn't even raise my blood levels and great with a side salad.Oh goodness, I am so blown away especially I agree as you say, not really been able to have them, as Pizza is No No, I agree, but I am reading so many saying eating quiche, pizza and other, is this because everyone is on medications, which allow them to eat the forbidden foods? This is the only thing I can think of, i.e. when one is given medication for blood pressure, docs say, by taking a pill every day you can continue eating salt, surely, isnt it more sensible and healthy to simply cut out the salt, have to say so surprised at so many eating goods that are on the No No list, mind you I dont take medications, but I do make pizza but I use grated cauliflour for the base and its really nice. Of course not the same, a super substitute.

- Separate the eggs, with the egg whites in one bowl and the egg yolks in another.
- Whip egg whites together with salt until very stiff. You should be able to turn the bowl over without the egg whites moving.
- Mix the egg yolks and the cream cheese well. If you want, add the psyllium seed husk and baking powder (this makes the Oopsie more bread-like).
- Gently fold the egg whites into the egg yolk mix – try to keep the air in the egg whites.
- Put 6 large or 8 smaller oopsies on a paper-lined baking tray.
- Bake in the middle of the oven at 300° F (150° C) for about 25 minutes – until they turn golden. Voila and you can actually wrap a sausage in it like a bun. I made the 6 big ones. The texture well, put it this way you really can make a sandwich put of it. It's very light The taste can be eggy but you can put sesame seeds or other seeds on the top before baking and besides after you put your filling in it, i never really noticed the egg taste. Oh and it's 1 carb a slice. Good luck with it and let me know how you get on. I made a mistake it's called Oopsie bread.
Took just under 6 hrs, it’s like a never ending journey, before the introduction of smart sections and no roadworks we could do the journey in half the time. We need to repeat the journey on Sunday back to Devon then do it all again in 4 weeks!Roadworks and smart motorways are enough to send anyone’s bg through the roof. I had a similarly frustrating journey up to Birmingham last week, felt like it was never going to end. Glad you got back safely.

Yesterday was
B: two big mugs of coffeesubstitute and cream in a travel mug while sitting at hairdressers. Had to cancel last appt at short notice due to going away, and have been wandering around with straggly hair for weeks.
L: a small Costa hot choc with cream which bumped bg up to 7.4 for about 20 mins (thanks Libre!)
D: 3 chicken legs in lime and garlic Nando's rub.
Astonishingly, the sugar in the Nando's rub sent me as high as the Costa hot choc
Wouldn't mind, except that we only had the rub because it 'fell into' Mr B's shopping basket, and I wanted rid of it. Far too sweet.
Next time I will happily make my own rub, with garlic and lime and virtually nil carbs. Cheaper too.
