What have you eaten today? (Low carb forum)

Must be that kind of day, Im feeling whipped cream and raspberry mousse.

B Coffee with cream L Butternut squash soup d Home made burger with Beef and lettuce wrap Might make it a chilli burger by throwing in some chilli powder.

B Today Saturday. Just had 2 scrambled eggs made with double cream a bit of paprika and cinnamon sprinkled on top delicious with 1 slice of burgen linseed soya bread.
L will be 2 or 3 muiltigrain crackers with philadelphia cheese and ham spread / 1 plum
D Homemade butternut squash and barley soup / half a lidl roll. / pear

Too bloomin' cold here for ice cream! Not helped by the fact that my windows are being replaced as I type. Wondering whether I can go back to bed until they have finished!
 
Last night: salmon with almost-ratatouille (red and yellow peppers simmered with tomato, oregano and shallots + courgettes fried with garlic and then all simmered together)
Panna cotta with lemon zests infused in the hot cream and truvia to sweeten.

Oh, do you have a recipe for that panna cotta? I love it, but haven't been wanting to experiment, and have to chomp my way through the failures. :)

Sure!

I used Gordon Ramsey's espresso panna cotta recipe as a basis as I'm happy with the quantities of gelatine, milk and cream.

3 sheets of leaf gelatine (maybe you can get sachets of powdered gelatine? Here one sachet = 3 sheets)
400ml double cream (the cream I get and use here in France is 35% fat)
75ml whole milk
zest of one lemon
vanilla essence
truvia to taste (no exact quantity alas, I just poured some in and tasted)

Prepare the gelatine.
Heat the cream, milk, vanilla essence and lemon zests in a heavy-based pan. Medium-low heat to simmer. Remove from heat. Add the sweetener to taste, followed by the gelatine, mix well. Let cool, pour into moulds. Refridgerate for a few hours.

Edit: it makes four servings, five at a squeeze

I'm keen to try it with a few strawberries...

I want to try that, or something very similar tomorrow so I can see what difference it makes with the test meter, as opposed to today's food. (which was 1 crumpet - I haven't had one of those for... well since at least January this year.)
I do like the lots of veg option, but I can't eat it all the time, I just get bored with it and can't face it sometimes.

Bought some low sodium salt yesterday, - that's good, right?

Hi @FranOnTheEdge - it looks like we joined this site at around the same time! How are you getting on?
Are you following an LCHF diet? From what I've been reading, it appears that low-carb diets lower insulin levels, which in turn makes the kidneys excrete excess sodium, and that can lead to a mild sodium deficiency.
That can apparently cause lightheadedness, fatigue, cramps, headaches and even constipation. So I'm guessing low-sodium salt may not be a good idea, although there may be others with more experience on here who can tell me whether I've got that wrong?
Anyway, rather than adding more salt to my food, I've been having half a chicken or veggie Oxo cube in a mug of hot water each day, and it certainly seems to help...

I bought some flaxseed to go in a recipe, what does it taste like? It's expensive isn't it!
 
It can be quite strong. I used a milled one that has Gojji berries, sunflower and pumpkin seeds. You might find the flax seed useful for bread making too.
