What have you eaten today? (Low carb forum)

B: bacon and 2 eggs, 2x coffee substitutes with cream
L: not needed
D: will be slow cooked lamb, tom, aubergine, etc (can no longer remember what I put in it. :D) Will have a coyo later.

Edited: impulse change of plan! Avocado, salsa and baked eggs with cheese on top - instead of lamb, which will be tomorrow instead. Delish!

B. Allbran with Strawberries, Blueberries, Greek Yoghurt + mixed seeds
L. Sardines of toasted Burgen Bread
D. Fabada Asturiana (Asturian Mountain Stew) (Chorizo, Belly pork Lardons, Blood Sausage, cannellini beans in a vegetable stock, slow cooked.
 
The plan for today is:
B: Half a red grapefruit
L: Nothing
D: Roast lamb, romanesco, green beans and a small portion of carrots and some of my home grown brussels sprouts which are just coming ready

Tonight I tried LCHF Toad in the hole - this recipe:

I had to buy Tapioca starch via Amazon - and Almond Flour from Holland & Barrett, neither cheap!

For the two of us I did 2/3 recipes, calculated it to be around 13g per serving.

The finished dish:

Taste results: actually pretty good. I'm probably super critical, my partner said he loved it! A little coconut'y so I would fry sausages in olive oil - still try it with the coconut milk next time, but maybe then with almond milk if still coconut'y.

Also, needed a little longer than 20 minutes, I had oven at 180 fan, maybe 200 fab for 22 minutes or so would be good. A little soggy - but a good crust on it.

So, maybe not a Michelin Star dinner but would definitely make it again - with a slight refinement.

Thanks for comment on pic, I think the batter recipe I made could be a winner if I tweak it :)
 
Good morning to days menu is

9am B.poached egg on 1 slice of 50/50 bread

11am, cucumber and tomato sandwich

3pm.D,1 small piece of sirloin steak/cauliflower/broccoli/muchrooms/minute portion of mashxmixed with the cauliflower,
 
OMG - all this talk of Yorkshire Puds is making me hungry!!!! They are about the only thing I really miss...

Today:

L: Black coffee
D: Slow cooker pulled pork and cheesey creamy cabbage
S: Not sure yet but either fresh raspberries or a small bag of air popped popcorn
 
Sunday was:
B: Ummed and rrrr'ed and didnt bother in the end
L: Ham salad
D: Roast Lamb, Pots, Snips and cabbage followed by Steam Jam Pud and custard, not had it since diagnosis, and wont be having it again! 9.6 after an hour of starting pud, although 5 before bed and a 5.8 FBG today

B: Bulletproof coffee
L: Turkey meatballs in tomato sauce with a mountain of broccoli and a little grated cheese over the top
D: When I get in I'm frying mackerel fillets in olive oil with bay leaves and garlic, along with stir/steam fried veg and a dollop of sauerkraut. I may even have a cheeky glass of wine.
 
B: Coffee with cream
L: Small portion of shepherds pie leftovers ( cauliflower, cheese and mustard mash )
D: Stir fried king prawns with cashew nuts and veg I had in fridge, Pak choi, leek, mushroom, mange tout, green pepper, small red onion , garlic and ginger.
Oops , nearly forgot dessert.. Homemade sugar free baked egg custard

Went on a midday 3hr course in Indian cookery today to see how I could adapt basic recipes. I found I'm already doing it thanks to tips I picked up on this forum :) I sampled the sauces a lot as they were being made and the only off-limits thing I ate was a small pakora (deep fried veg and gram flower). So today ...
B Usual fry-up thingy
L Pakora & several tsps curry sauce
D1 Chicken curry (meat only)
D2 2-egg frittata with bacon, tomato, mushroom & cheese
S Slice warmed stracciatella cake with double cream
 
Just had bacon spare ribs they were so salty I will be drinking gallons of water
